00:00I seriously didn't think this would work as well as it did, and now it's 100% my favorite bite
00:03of barbecue I've had this year.
00:04And party ribs have been around for a while at this point, but I'm always trying to find new things
00:07to toss in with them to get that perfectly balanced bite.
00:09So for this batch, I'm using some Barron Britton's Fire Shire as a binder before getting all the ribs completely
00:13covered in a candied jalapeno rub.
00:15Just don't be afraid to use a generous amount here, you want to make sure the ribs are properly seasoned.
00:18Then we're going to fire up the Rectech X-Fire Pro so we can let these smoke at 300 degrees
00:22for about 90 minutes.
00:23And after that, it's time to pull them all off the grill so we can add the rest of our
00:26ingredients.
00:26And I've been on a serious sweet and spicy kick lately, so I wanted to use my buddy Brad's barbecue
00:30sauce as well as some Melinda's Hot Honey because both of these are going to pair up perfectly here.
00:33Then after adding a few tablespoons of butter and a little more barbecue rub, I'm going to toss in some
00:37fresh and candied jalapenos before topping everything off with a handful of brown sugar.
00:40And then all we have to do is let these smoke for another hour at 300 degrees, but we're going
00:44to keep them covered with foil for the first 30 minutes.
00:46Then after we take off the foil, the sauce is going to start to tack up while the ribs finish
00:49cooking.
00:49And then all we have to do is bring them inside so we can dive right in.
00:51I mean, this honestly has the perfect balance of sweet and spicy. Definitely give it a try.
