00:00All right smoked and deep fried chicken lollipops these are ridiculous so delicious one thing about chicken lollipops they're a labor of love there's some prep to it but the end product is so worth it so you can see where I'm cutting right above the meat you want to cut all the way around because you're cutting through tendons and skin and all that and you're going to start pushing the meat up but you're going to pull that skin and those tendons off of the end knuckle part as you see here remove that look at the tendons they're everywhere cut whatever extra is hanging off
00:29then you're going to want to cut the bottom of that drumstick because it will stand straight up during the cook watch this it's just going to stand up and boom so now that we got the meat pushed down and it looks like a straight up lollipop but the meat version and pull out that anything rub from Traeger get it seasoned up nicely and then I'm going to pull the meter probe the pro probe we're going to go 225 degrees once those hit about 150 internal we're going to get the oil hot and ready
00:59and I'm using peanut oil so once that's ready to go we're going to start submerging these chicken lollipops into that hot oil so it's in it about 150 internal we're going to throw this in the oil
01:10listen to that sizzle the awesome thing about these meter probes is you can you can see it's climbing there we're going to want to take this to 170 but you can submerge that into the hot oil up to a thousand degrees you're not going to hurt it and you can still read that internal temp while it's inside the oil
01:27yeah so let them cool down let them air out throw some sauce on get a little bit of fresh parsley and you know what's next you're going to descend these right down the hatch so good
