00:02On today's adventure, we travel to Stewart, Florida, home to one of the
00:08most productive inshore and offshore fisheries in the state. I meet up with
00:13my friend Matt. We're ready, let's go do this. And with his help, we chase the bike.
00:19Running from the storms, we land Mahi Mahi. Fast, colorful, and absolutely
00:25delicious on the grill. Look at that. We're capping the Giants today. Let's go. We
00:30try our luck with Permit. For the first time ever, we are going for Permit on the
00:3543 Invincible. Smart, wary, and some of the toughest fish you'll ever fight. Along
00:42the way, we laugh, try new techniques. Let that suck a fly. And make memories that only
00:47come with time on the water. Tight lines, wild runs, and unforgettable moments. This
00:54is what Uncharted Waters is all about.
01:20Uncharted Waters with Peter Miller is presented by Invincible.
01:26Every new season of Uncharted Waters with Peter Miller, we raise the bar. We go bigger.
01:33So let's get fueled up with a protein fix. Gotta get my proteins on. Load the bait well
01:38with live bait. Get some gogs, get some pilchards, got some crabs for the Permit if we see some.
01:45I got a dozen gogs so far. One has a funky eye. They look nice though. And pack the cooler
01:49with ice.
01:51Because once we leave the dock, the adventure begins.
01:56Going by Pier 66 in Fort Lauderdale. We're about to take a hundred mile run up to Stewart to go
02:01visit my good
02:02buddy Matt George. He's at OneMoreBite72 on Instagram. And we are going to go after Snook. We're going to try
02:08for some Permit. We just picked up
02:10some live bait. We've got goggle eyes. We've got pilchards. We're going to get thread fin in the morning. I'm
02:15glad you're here for the adventure.
02:18As you can see, my new 43 foot Invincible is a thing of beauty. Powered by quad V10 400s and
02:26stabilized with a sea keeper gyro.
02:28She's smooth, she's fast, and she's absolutely beautiful.
02:34All right, well we made it. A hundred miles over to St. Lucie Inlet. It's about 730. It's beautiful out.
02:40It's calm.
02:41So now our goal is to get to the Airbnb. Tie up for the night. Get a shower. Get some
02:48food.
02:48Matt and his wife Rebecca welcomed me with open arms. Matt and I are both from Florida.
02:54But the only time we fished together was down in Guatemala where we crushed the Pacific sailfish and became great
03:00friends.
03:00Good job.
03:0228 sails today. Good job, boys.
03:05Nice job, everybody. Yeah, but we're ready. We're ready with your knowledge and those little Krabby Patties.
03:11It's always hard to sleep the night before a big fishing trip. The excitement builds, the anticipation kicks in,
03:17and all you can think about is getting out on the water.
03:24So, looks like we're going to have a great day today.
03:29We're ready. We're ready. Let's go do this. Let's untie this girl and get going.
03:36We're going to not use chum because it gets the boat dirty, right?
03:39It gets the boat dirty. That's a beautiful rig.
03:4143 foot of pure freaking dynamite.
03:44I'm not sure we have enough space for today, but we'll try to make it work.
03:49I'm going to do my joystick out.
03:53With Mercury's joystick piloting, I can control all four engines with just one hand.
03:58I can slide the boat sideways, spin it in place, or ease right up to the dock with total precision.
04:04It makes running this 43 foot invincible effortless.
04:10What do you think of this little place?
04:12I like it.
04:12Great place to fish. It's pretty unique. Offshore, we have all your black fins, mahis, sailfish.
04:18Inshore, you can get your tarpon, big snook, permit.
04:21I mean, you could go out and catch a mahi and a tuna.
04:25Be back in by 11 and catch your snook and tarpon and go home.
04:28That's amazing.
04:29Okay, we're going to meet the bait guy.
04:32See this little flatboat?
04:34Yeah, yeah, yeah.
04:34That's our guy.
04:35What's happening, guys?
04:36There's a reason professional fishermen buy bait instead of just catching it themselves.
04:40Time on the water is valuable.
04:43Buying bait means you can head straight to the fishing grounds and stay focused on the target species.
04:48Alright, thank you.
04:49I will.
04:49But I do both because you can never have enough.
05:00There's a lot of times when the bread bins will be right in on the beach when it's flat.
05:05But on days like today where we have this bigger swell, they're usually out deeper.
05:09What do you normally do?
05:11You get right in the middle of it?
05:12That's a squadron.
05:13Try that.
05:13See what we got.
05:14There you go, sir.
05:16Thank you, sir.
05:17Got him.
05:18I'll probably tangle by now.
05:20Yeah, I'm loaded up.
05:21There they are.
05:22What are they?
05:23I feel like they're right, Flav.
05:25Oh, there he is.
05:27Hello, buddy.
05:28Little backstop for you.
05:29We like to call him Thready Mercury.
05:33Oh, look at that.
05:34I got the fatties.
05:35One in one.
05:36No, you don't want the horn bells.
05:37I know, we don't.
05:38The thread fins will be right on the top.
05:40Let's see what I can muster up.
05:42I got a hornito and a good one.
05:46It's living the dream catching this many baits.
05:49It's like we're tournament fishing right now.
05:50But you can't just pass it up.
05:52You always have to get a couple freshies.
05:54Do a twist.
05:56Slide it right up.
05:57Twist.
05:57These are a little bigger than the rest.
05:59All right, Matt, what do you think?
06:00We got enough bait?
06:01We got plenty of bait.
06:02Both wells filled.
06:03We have goggle eyes.
06:04Look at our little TV screen.
06:05Our screensaver.
06:06We have thread fins.
06:07And we have crabs.
06:09We've got everything.
06:10We're ready.
06:10We're loaded down and ready to go.
06:17Uncharted Waters with Peter Miller is presented by Invincible Boats.
06:21When you're serious.
06:23Mercury.
06:28Starbright.
06:29Clean and protect.
06:33Yeti.
06:34Built for the wild.
06:40Today, we're fishing with Matt in his home waters off Stewart, Florida.
06:44Are the fish typically going from north to south here as well?
06:48Yes.
06:48OK.
06:48What kind of current you'd normally have up here?
06:50The last few days we've had about two knots of current.
06:53Uh-huh.
06:54Not a lot.
06:56And there's no better vantage point than from the tower of the 43 Invincible.
07:05From up top, you can spot bait showers, birds working, and fish pushing through the spread.
07:11It's the ultimate advantage.
07:15All right.
07:16So, any good fisherman, they get a rod, and they put out a bait while they're screwing
07:20around, and they wind up catching one, don't they?
07:22You have to.
07:27That's good.
07:28You can see right here, we're in 99 feet, and these fish are up in about 80 feet, 75
07:33feet.
07:34Looks like a couple of decent fish.
07:36There we go.
07:36I'll prospect it.
07:37Come on, baby.
07:41Let us know if he's taking line.
07:42That clicker's off.
07:43OK.
07:43You dropping?
07:44Yep.
07:45Come on, baby.
07:45I think it's a mahi.
07:49There he is.
07:50Hey!
07:51That's not a bad mahi.
07:53Good job, Matt.
07:54Well, you know, I've been wanting to bring some mahi home.
07:57Well, now you can.
07:58Finally.
07:59Do you have your gaff?
07:59Oh, yeah, I do.
08:02There you go.
08:03Look at that.
08:03That's a pretty one.
08:04Look at the giants today.
08:05Let's go.
08:06Nice colors, huh?
08:07That's a beautiful fish.
08:08Good way to start the day.
08:09Where you want them?
08:10Let's put them in there.
08:11That's my bait well.
08:12Just for now, for the bleeding, you know?
08:13There you go.
08:14That's a good one.
08:15It is.
08:16Perfect.
08:17Got the stick off the boat, bro.
08:19Yeah, let's do it.
08:19Nice.
08:20Oh, we're getting a bite here.
08:22Another mahi?
08:23I think so.
08:24Let me get you in gear.
08:25Oh, we got this one, too.
08:27Another mahi.
08:28All right.
08:30Takes a second to get tight on these fish, huh?
08:32Yeah.
08:33Look at them, twins.
08:34Yeah.
08:35Little cookie cutter.
08:36Little twins.
08:37That's cool.
08:37Look at that.
08:38Oh, look at that.
08:39Brought the whole school up.
08:40Oh, yeah, we got a lot of fish.
08:41Look at that little rod with the shrimp on it.
08:42One of the cool things about mahi-mahi is that when you hook one, the whole school comes
08:47up with it, and the hooked mahi triggers a feeding frenzy.
08:50Yeah, we got a big school of mahi around us now.
08:52Whole school here.
08:56Oh, look at him.
08:57He just came in and ate the bait.
08:59Actually, we'll probably keep this one.
09:00I'll swing him to you right here.
09:01Come on in.
09:04Two points.
09:07Come again.
09:07Thank you for playing.
09:09When mahi are too small, they go back.
09:11Fishermen let the undersized ones go so they can grow, spawn, and keep the fishery healthy.
09:16Mahi grow incredibly fast, sometimes up to five pounds a month.
09:22In one year, they can reach 40 to 60 pounds.
09:28Big turtle.
09:29Got a turtle out the back here.
09:30Oh, you got a turtle?
09:31Yeah, see him?
09:32Oh, yeah.
09:32Wow, that's a nice big head on that turtle.
09:34Yeah.
09:36This one's either tangled or something.
09:38Could be a fish out there.
09:39Yeah, it feels like something could be chewing on it.
09:41We got a lot of remoras up here, too.
09:43Do you?
09:43Yeah.
09:43Yeah.
09:45It was a pretty hardy bait that you put on there.
09:49Yeah, something.
09:50Probably just a little mahi or something.
09:53Well, there's no drag pulling, and there's no dancing going on.
09:56No, it's remora.
09:57No, remora.
09:58I like remoras, and I like to cook them, but the only problem is they stick to the pan.
10:02Ah!
10:04He's taking a leak.
10:04He really is.
10:05Here.
10:06Let's see what it tastes like.
10:07Yeah, that's definitely urine.
10:09That's a remora.
10:11It has a familiar wang to it.
10:13I think I'll stick on the side of the boat here.
10:15He's on there.
10:16Poor guy.
10:18He's like, I can't hang on anymore.
10:21Citizen.
10:22Better starts now.
10:25Sea keeper.
10:27Fight the fish and not the roll.
10:31Power pole.
10:32Total boat control.
10:36Gator step.
10:37Premium flooring and decking.
10:40Kite fishing has been around for centuries.
10:43First used in the Pacific Islands to carry baits offshore.
10:46But here in South Florida, it has become legendary for catching sailfish and many other pelagics.
10:52The beauty of the kite is simple.
10:54It keeps your bait splashing and digging right on the surface.
10:57Yeah, on these really light wind days, you've got to have a helium tank.
11:00And I just came out with this new Uncharted Waters party tank.
11:03It fills the helium balloons up, and you attach them to the kite, and you can fly them all day
11:06long.
11:07That looks good, right?
11:08Yeah, that looks great.
11:09Okay, and then we tie it to one of the spars here.
11:12Snug that down.
11:13With that Uncharted Waters helium, you're off to the races.
11:19Nice thing about these Dominion rods is you can hold it in your hand.
11:23You can move around.
11:24No cords needed.
11:26No trip on any cords.
11:27And there's my first clip.
11:28Now, attach live bait to the three clips, and you've got three rods ready.
11:33One short, one mid, and one long.
11:35All spread perfectly on the main kite line.
11:38Getting bit.
11:39Come on, baby.
11:41I'm tight.
11:47It feels very steady.
11:49What you got, Pete?
11:50He's coming at us.
11:51I'll tell you that.
11:52Yeah, I'm here.
11:53I don't know which way he's going to go.
11:54I hope he goes round about.
11:58Feels like a Bonita.
11:59We just hooked into a Bonita.
12:01Some call it a trash fish.
12:02And Bonita fish are big.
12:04Oh, well, they are trophy fish, aren't they?
12:06They are trophy fish.
12:08But pound for pound, they fight hard and can save the day.
12:11They make incredible bait for deep dropping, sword fishing, and while trolling for marlin and tuna.
12:18See how docile they get when you hold them upside down?
12:20I'm going to let this guy go.
12:23Oh, yeah.
12:25I'm getting bit on the long, guys.
12:27Bonita swim in schools, and I mean the whole class shows up at once.
12:31I'm tight.
12:34Hook one, and you'll feel it.
12:37Oh, man, working.
12:39Built like little torpedoes with red muscle fibers that give them incredible endurance.
12:45Call that a bow slider.
12:47All right, we got to let this guy go.
12:48Okay, we're going to slide him off.
12:54All right, on to the next one.
12:56It's a Bonita, unfortunately.
12:58Catching Bonita can be a blast, but it can also drive you a little crazy.
13:02Man, we are being challenged.
13:04Some days it'd be like that.
13:05Every hookup means another screaming run.
13:08There we go.
13:10Wonderful Bonita.
13:11Another tangle and another line to cut and retie.
13:14Ah, painful.
13:17Yeah, baby.
13:18The Bonita boys are back.
13:20Mal, we're really trying to dig them out today.
13:22Good job.
13:23I'm proud of you.
13:24Thank you, man.
13:28See you later.
13:30Gem Lux.
13:32Demand the best.
13:34For your official Uncharted Waters merch, go to UnchartedWatersTV.com.
13:40Dominion E-Rod.
13:42Life Unplugged.
13:45Uncharted Waters Helium by Airship.
13:54That right there is extremo.
13:56That's something you don't mess with.
13:58Yet we're messing with it.
14:00Well, we're watching it from a safe distance.
14:05Out here, storms are no joke.
14:08The wind can turn in an instant.
14:10Seas can build up.
14:11And lightning on the horizon is a fisherman's worst nightmare.
14:15We might have to use celestial navigation to get away from that thing in a moment.
14:21We're determined to catch a fish until it becomes unsafe, which could be about three minutes.
14:36For the first time ever, because of Matt George here in Stewart, we are going for a permit on the
14:4143 Invincible.
14:42We've got some live crabs.
14:44We've got 30-pound fluoro.
14:45You can use a circle hook or a J-hook.
14:47The idea is to get in there stealthily, maybe put one motor on instead of four.
14:52We are tied up.
14:54Give the old drag a test.
14:57That's too light.
14:58They'll get you to the bottom.
15:01That's good.
15:02Permit a strong fish.
15:03I'm going to get us in there.
15:06All right, now got to get those crabbies that I bought down in Miami.
15:09They are Cuban.
15:10The key is to go through the carapace on the corner here.
15:13So you want to work the hook in there and you wiggle it until the point comes through.
15:17And then you cut these points off.
15:18And now they are ready.
15:19These are candy for permit.
15:21So if they're here, we should be able to get a bite.
15:23You like it here, Matt?
15:24Yeah.
15:24You always want a lively crab.
15:26And when they do that, you know you're in good shape.
15:28The nice thing is I've had them in the live well for a few days.
15:31And I had a couple of baits in there that died and they've been eating them for the past
15:37two days.
15:37So they're really frisky.
15:39Straight out.
15:40They're going to have two snacks right in their face.
15:42What does it look like on the finder?
15:43They're like...
15:44There's a lot going on on it right now.
15:46Yeah.
15:46Yeah.
15:48And you want to let it look as natural as possible by letting the crab just like float, you know?
15:53When they bite, you better lock it up and get after it because they will bite it.
15:58They'll crush the shell and the hook will just come right out of their mouth.
16:02You got to get them on the first bump.
16:04Otherwise, they're just spitting the shells out.
16:06You're not getting them.
16:06They pull a lot of drag.
16:08They have a tendency to attract sharks.
16:10And you know, you got to really kind of work them hard to get them to the boat.
16:16I got to call you right back.
16:21That's got to be a perm, huh?
16:22Yeah.
16:23Oh, yeah, baby.
16:25Get them, Matt.
16:27What can I do for you?
16:29Nothing.
16:29Just get the door ready.
16:31All right.
16:32All right, Matt.
16:33We've been working for this one for a few minutes, huh?
16:35Yeah.
16:45Watch that anchor.
16:48All right.
16:50Oh, there you go, Pete.
16:51Bring them down.
16:52Little guy, but we'll take them.
16:55Don't get in here too fast.
16:57How's the shark population?
16:59It'll be all right.
17:10Let's go, baby.
17:12Yeah.
17:14Let's go, baby.
17:14Let's go, baby.
17:14Nice.
17:15Whoo.
17:16Good job, man.
17:17Finally.
17:18That was pretty quick, man.
17:20Nice fish, dude.
17:21Beautiful fish, huh?
17:22You want to hold your trophy?
17:23Look at that.
17:24So cool.
17:25I love these lips, dude.
17:26Look at these rubber lips.
17:27Old rubber lips.
17:28That was a good fight.
17:29That was a great fight on that rod.
17:31Wow.
17:32Permit are one of the most prized game fish in Florida waters.
17:36With their silver bodies and black-tipped sickle fins, they're built for speed and power.
17:41But what really sets them apart is how smart and cautious they are.
17:45One wrong move, and they're gone.
17:47That's why landing a permit is considered one of the most exciting moments in sport fishing.
17:52Lots of life in that fish.
17:54Everybody, round of applause for Matt George.
17:57He says, let's catch the permit, and we catch the permit.
17:59That was awesome.
18:01Oh, we do have crabs, though.
18:03That's a good one here.
18:04Feeling good, like I should.
18:08It's amazing how blessed you feel when your time is well spent.
18:12Out here, every moment on the water is a gift.
18:16And every screaming reel is a memory in the making.
18:19You're too good at this, man.
18:20That's going to be bigger than mine.
18:22Okay, everybody.
18:23Hey, he hooked this one, so it's really his fish, but I'm reeling in.
18:26Just made for TV.
18:29There's a childlike joy that comes when a friend hands you the rod for the next permit.
18:33It's more than just fishing.
18:35It's the blessing of having friends who understand and share the moment with you.
18:39Just keep with them.
18:41You ever back down on a permit before?
18:43I don't know, but you might want to slow up.
18:45All right.
18:46Going around.
18:48Coming around.
18:51Hit him up.
18:53He's up.
18:55Keep him up.
18:57There he is.
18:58A little bigger than the first one.
19:00Let's go.
19:01You got your permit flags?
19:05We could make one on a paper towel and draw one.
19:07No, you just need a paper plate.
19:09I get it.
19:13They have a lot of fight in them.
19:15Yeah, man.
19:16A lot of fight.
19:17And you don't want to horse it.
19:18You want them in, but you don't want to go ballistic.
19:22Sometimes you have to.
19:23Yeah, you just don't want to get them the shark.
19:25Yeah.
19:25Don't say that.
19:27I'm in the engines.
19:28Go, go, go, go.
19:29Do that rod.
19:29Go ahead.
19:31Go, go, go, go.
19:32Okay.
19:33I got long arms, huh?
19:34Yeah.
19:35Oh, yeah.
19:36This is coming back.
19:37Perm town.
19:38Here it is.
19:39Perm town.
19:40That's a nice one.
19:41A little bigger.
19:4315 pound or 18 pound.
19:44Whoa.
19:45Surfaces like Shamu.
19:49All right.
19:49Do you need help?
19:50Nope.
19:51Let's go, baby.
19:53Look at my plate.
19:54Congratulations.
19:56Woo.
19:56Look at that, dude.
19:58Look at that sickle fin.
19:59Yeah.
19:59Beautiful fish, huh?
20:00Matt, you really put me on them, man.
20:02You say we're going to catch permit up here?
20:04This was a nice change.
20:05Yeah, man.
20:05This one's heavy.
20:06And to do it in a 43-foot boat.
20:08Oh, man.
20:09It's pretty crazy.
20:11Through sport fishing, I've learned gratitude.
20:14Proof that there's magic in being at the right place,
20:17at the right time, and with the right people.
20:22As we release the permit back into its waters, unharmed and free,
20:27we're reminded that the true reward is not in keeping the catch,
20:31but in the joy, the fight, and the memories it leaves with us.
