33:55What is carbone beach? So carbone beach is the fifth year we're doing it aligns with formula one in miami
34:00It's basically the biggest best supper club kind of a throwback to when there was a performance while you were
34:05having dinner
34:06The old days, you know, maybe frank was working the room, you know, you open a nice bottle of wine
34:10And we you know, we feed about 600 people a night for the weekends
34:13We make thousands of meatballs and we're gonna show you how to make some more. Let's make some meatballs tonight.

34:18What do we got? How do we do it? What's this? Everyone's got a secret. What is your secret to
34:23your meatballs?
34:23The first step of the recipe is open a good bottle of wine. That's my man. Come on
34:30All right now that we got that out of the way, I've got a couple tricks for you. I'm not
34:34putting mine down. Yeah
34:35A couple
34:36We're gonna need your hands. Mm-hmm. Um, so you're gonna mix. I'm gonna yeah, yeah, yeah put it down

34:47Let's skip the meatballs. Yeah, okay good. All right, so in the bowl you got the three musketeers. You got
34:51ground pork, ground beef, and ground veal
34:54Oh, sorry. What we do is substitute ground pork for sausage
34:58Oh, so you go to the butcher and you ask for sausage pull it out of kind of the casing
35:02Oh, it's raw and that it's equal parts and that adds that kind of sunday supper for me like that
35:07flavor
35:07Yeah, and fennel the fennel sauce you're talking about 80 20 on here 80 20
35:21All right, here we go. So we're gonna mix it up. This is your job. Okay. All right two eggs
35:25Two eggs got you cup of parmesan cheese cup of parm. Yep
35:29Pinch of salt pinch of salt. This is sofrito. So it's slow cooked onion parsley and garlic. Oh, that's a

35:35Then you then you chill it throw that guy in there. Oh, it's a free though
35:38Yeah, it's at some point. You're gonna start mixing this

35:43I thought you were gonna hand me something to mix it with mix it. I'm gonna go hands in nona

35:56Where's nicole? So in in 99% of meatball recipes you see breadcrumbs
36:01But the problem 99% 99.1. That's what I heard. I thought we're talking 80 20 over here
36:06So the problem with breadcrumbs is they're dry. So they're gonna they're gonna soak up the moisture
36:10They're gonna they're gonna dry out your meatball. So don't do breadcrumbs and dry meatballs make jimmy sad
36:15Yes, so so we're gonna add yesterday's bread soaked in milk instead. This is gonna add moisture to it, right?
36:21Oh
36:22So you soak it in milk. Mix that in easy easy
36:26These meatballs are you owe you money? No, no, but baby needs his baba
36:35All right, that's what now we're talking about now we're talking to me at some point
36:42We would start making a couple of these yeah, yeah, yeah look at this. Yeah
36:45So what do you do any any how about this? You're looking for a little bit bigger than a baseball
36:50Okay, bigger than the baseball a little bigger than a baseball. Oh my gosh, this is a big meatball
36:53About four or eight meatballs
36:55They need to be a nice size because once you're done searing them. They need to still be here. You
36:58go. Yep. They need to still be
37:01That's less than a softball, but bigger than a bit. Yeah, well, how did carbon which one did jimmy?
37:07How did carbon beach start by the way? What how did you end up we wanted to do a big
37:11event?
37:11Because it's it was we knew that the the you know
37:13The race was going to bring so many people to town
37:15We wanted to do something that was as big as the event
37:18So we came up with the idea of this old school elaborate
37:21Just because you're like the coolest restaurant. I had nothing else to do, you know
37:25Exactly, right. So serum golden brown. They're still raw inside. Then you add your favorite tomato sauce. I have mine.
37:31Yeah, me, too
37:31I got you. Okay. Is it anyone you know? Yeah
37:34Okay, so add your favorite tomato sauce in here then let it simmer low low and slow, right?
37:40We're kind of braising these meatballs and you're also flavoring the sauce because we're missing the spaghetti part of the
37:46spaghetti and meatballs still
37:47But now you've got this beautiful brown robust sauce and our spaghetti is going to go in here. This is
37:54where you're going to go back to work
37:56Okay, our spaghetti is done. Okay. Okay. I know you know how to do this. Do I?
38:03Okay, oh wow geez throw it right in the sauce like that
38:07Well, you know, you're gonna you're gonna toss the pasta while I add some cheese. Look at this. Yeah, come
