00:02It's a hive of activity here at the Queen Victoria Market in Melbourne this
00:06morning as thousands across the country pack into halls to pick up their fresh
00:10produce and lasting supplies ahead of the long Easter weekend and of course hot
00:15cross buns are going to be a feature of many tables. I'm joined by Tan from
00:18Ferguson Clare. Good morning to you. Very well thank you. Walk me through the
00:23history. This is a family business, a Melbourne institution. Yeah family
00:26business operating since 1901. This store in particular since 1931 so we've been
00:31making hot cross buns at the market since 1931. Hot cross buns, you make them in
00:35Melbourne every day. Walk me through that recipe. Well we're really well
00:40known for having more fruit than flour so it's really really really you know just
00:44great buns and that's why we sell so many. And how many are you selling? Over this
00:48weekend all handmade we'll definitely do about 20,000 yeah and we're just in
00:53Melbourne so yeah. Obviously some tough economic times at the moment have you
00:57seen the figures fluctuate this year particularly? Generally especially at the
01:02market generally the the big events go well so Christmas and Easter yeah
01:05everyone sort of comes down it's a bit of a tradition so I think we'll be fine. Now
01:09personally the orange rough is my favourite what's gonna be on your table
01:12this Easter? Definitely buns especially if there's any left we'll see
01:16hopefully we can sell out and have none I'll be happy with that but other than that a
01:20nice nice feast tomorrow. Fantastic thank you so much Tarn. There we have it
01:24hot cross buns flying off the shelves this morning 85,000 people will be at the
01:29Queen Vic across Saturday and Sunday this long weekend as people pick up their
01:33last-minute supplies ahead of Easter.
