00:00I'm French, and today I'm trying authentic Texas barbecue at Terry Black's.
00:04And we pretty much ordered the entire menu.
00:06And I'm so ready to eat, but I'm really curious about this thing.
00:09This is a cheese and jalapeno sausage, and I don't really think I've ever had that before, though.
00:14Really? Oh, you're gonna love it.
00:16It's a beef and pork sausage with big chunks of cheese and jalapeno.
00:20And the beef is apparently brisket trimmer.
00:23Which is really cool. We will try the actual brisket later, but this sounds really exciting, so I think we

01:03I think, one of the best sausages I've ever had before.
01:06So I come from a region of France where sausages are a really big thing. And this is one of
01:11the best sausages I've ever had. So it's a nine out of ten for me.
01:14And the sausage was incredible. And the sausage was incredible. But one thing I'm dying to try are the pork
01:18ribs.
01:18They look so good. Like they're both super bouncy, a bit sticky. They have a really nice bark that looks
01:26a bit sweet as well.

01:48I feel like this is not even meat. It's like candied pork. It's so sweet, but in a good way.
01:54Like there's a perfect mix of sweet and savory.
01:56So what we call barbecue in France is basically what you would call grilling in the U.S.
02:01And it can be really good too. My family is very good at grilling ribs as well.
02:05But I've really never eaten something like this because it's re-seasoned to perfection.
02:08Here they use their dry rub with a bunch of spices, then they add their barbecue sauce for flavor and
02:14moisture, and then they coat it with syrup.
02:16And that's why it tastes like a treat. It's so sticky, super sweet, and also a bit spicy.

03:04The potato salad looks amazing.
03:06Yeah, let's try it. I think it's like a Texas thing, I've heard.
03:10So in front of us, we have an absolutely beautiful potato salad.
03:14We have potatoes mixed with mayo, mustard, pickles, sometimes eggs.
03:18I've heard there's eggs in there.
03:20There's also dill and paprika.
03:22I think it's my first time having an American potato salad.
03:25No way.

03:28I used to eat tubs of this growing up, so I'm excited to dive in.

03:36You can retaste the eggs and the mayo.
03:38It's very eggy, which I love.
03:40So this is definitely like an upscale potato salad.
03:43I'm used to like the really like creamy, mayo-y type potato salad.
03:47But this right here is like complex with having dill, paprika, and all those different types of flavors.

03:55Next, all the potatoes salad.
03:56All right.
03:56I'm very excited for the BBQ beans, but I think first we need to try the coleslaw.
04:01It's made with red cabbage and normal cabbage, carrots, and then all put together with mayo.
04:06Mayo is the defining thread on our side.
04:12Very creamy and also very fresh.
04:14I feel it's like a nice break for all the meats we're going to eat.
04:18Absolutely.
04:18And as a coleslaw aficionado, I would say this ranks in the top tier coleslaws I've had.
04:25Now let's get to my new absolute favorite since last time we tried BBQ and I discovered BBQ beans.
04:32I've been dreaming of BBQ beans ever since.
04:35And it's because these are super creamy.
04:37They've also been smoked and there's some brisket in it.
04:44Wow.
04:45The BBQ beans are just the best.
04:47They're so tasty.
04:48I feel like we don't talk about beans enough because beans are so good.
04:53They're such a perfect food and these are delicious.
04:56Obviously they've been cooked for hours with a brisket, but there's also a lot of different
04:59seasoning including some paprika as well that really adds a wonderful taste.
05:04I don't even know if you can call these BBQ beans anymore
05:06because that brisket in there is just unbelievable.
05:10It really takes this side to another level.
05:12So what's your ranking of the sides Bobby?
05:14I would say 9.5 for this.

05:33And before we eat our brisket I wanted to tell you about something that has been making my life a

06:35This was delicious but now we're getting down to business with the brisket.
06:39Ah my favorite.
06:40And it has to be one of my favorite BBQ meats I've tried so far.
06:44And I say so far because we're also trying the beef rib and everyone tells me it's their favorite BBQ
06:49meat.
06:50But first let's try the Bobby-Ben test here.
06:54And that's an actual test used at competitions and Bobby's.
06:58And for me.
06:58And it's looking pretty good.
07:00There's a few things that I've learned make a good brisket.
07:03Like here for example the black thing you see on the side it's called the bark.
07:06And it shows that the meat has been smoked.
07:08Also you always want to test the juiciness and we asked for a fatty brisket.
07:12And I feel so far things are looking pretty good.
07:14Also keep in mind that it takes around three days to make this brisket.
07:17First they season it and let it rest for a day so that it absorbs the flavor.
07:21Then they smoke it for 10 to 12 hours on Texas white oak in the smokers we've seen outside.
07:26And then they let it rest for 16 hours before serving it.
07:29So this is a very time intensive process.
07:32It's unbelievable.
07:33Like looking at each and every piece of this brisket it's it's an art form.
07:37It's such a craft and it's something I really recognize here.
07:39That like we're not just eating meat we're eating a way of doing things.
07:43So some people have said in the comments that I should eat brisket with my hands.
07:47As a french person I feel it's a bit weird but I'm gonna go to town man.

07:54Wow it's so soft it's like eating butter I feel.
07:58But like you know with a good taste that's really smoky.
08:01All I gotta say is you can only find brisket like this in Texas.

08:14I've had good brisket at many different barbecue places around the US but nothing has ever tasted like this.

08:51In the comments of my last video people said that it's a crime to eat brisket with a sauce.

08:59But the sauces are in front of us so we have to try them.

09:05So let's try the original one.
09:06And as you can see I'm gonna be very gentle.
09:09I'm not gonna put too much sauce.
09:13The sauces are good but I will keep eating my brisket without a sauce.
09:17As you can see I did not have any sauce on my brisket.
09:20You don't even want to try it.

09:22Lucille is new to brisket eating but I've been doing it for many years and I know it's a crime.

09:28You go to federal prison if you put sauce on your brisket.
09:30I mean I don't want to say it but you know they're right there.

09:36Okay so I've heard that if you eat cornbread after your brisket it kind of like works well
09:42and absorbs the juices and the fat.

09:46I've obviously never done that before so I'm gonna try it.

09:52Wow this is a perfect pairing.
09:54So this cornbread kind of looks like a little muffin and it's slightly sweet.
09:58I don't know if it's just the corn or there's a bit of added sugar.
10:01I know there's a big debate on whether cornbread should be sweet or not.
10:05This one I feel like meets the expectation for everybody.
10:08It's a little sweet but not too sweet.
10:10You know what my thought was?
10:12I should buy another one and save it for breakfast tomorrow because this would be a perfect breakfast.

10:18With a little coffee you dip your cornbread in the coffee.
10:21Maybe leave the coffee for after the cornbread because this cornbread is so good you cannot
10:26harness the flavor of it.
10:28And then we of course have our pickles and onions here.
10:31And for me I really like having a side of pickles with my barbecue to just sort of
10:35reset my palate a little bit because each and every meat has a different flavor and experience.
10:40All right so before we get into the beef rib we have one more food to try, the turkey.
10:46And when I see turkey breast on a menu I tend to skip it because it looks bland and dry
10:50to me.
10:51But I've been told I need to try this one.
10:53And let me tell you Lucille, this will not be bland as it's seasoned with salt,
10:57pepper, garlic, onion and then smoked up to six hours.
11:01This is the most intuitive and complex turkey breast you'll find maybe in the world.
11:07And it looks really good too because it's super juicy.
11:10It smells really good as well.
11:12It smells smoked because it is.
11:14I'm curious about it.
11:15Maybe I will change my point of view on turkey first.
11:18Honestly everything here has been on the next level so I'm excited to try it.
11:28I want to ask them if they make turkeys for Thanksgiving meals.
11:32I know it tastes like a Thanksgiving meal.
11:35That was my first thought.
11:36Your mom makes an amazing Thanksgiving meal though.
11:39She makes an amazing turkey, an amazing Thanksgiving meal.
11:42But I don't know what they're doing with this turkey but it does not taste like a normal turkey.
11:47Although I love it, I feel for me this should be a Thanksgiving food and I don't know,
11:52on my barbecue platter I prefer other stuff so I'm gonna rate this one a 7.

12:09All right now let's get to the start of the show, the absolutely huge beef rib.
12:15Everyone has been telling me to try it and when we saw it getting cut before,
12:20I knew that was the right choice because this looks absolutely amazing.
12:24The bone is really big and I think this is why I've seen it nicknamed as well,
12:28dino rib because it's so massive.
12:30We got an end and it's like almost covered in bark.
12:34It's super beautiful.
12:35I feel it's a bit intimidating sometimes because it's so big that, you know,
12:38when I see that I'm like this should feed a family of four not like two people.
12:43No, this is for one person right here.
12:47And what's so impressive about this rib is it's massive but it's also super juicy
12:53with being right on the bone having all of that delicious flavoring and yeah,
12:57I'm just so hyped to try this out.
