00:04mom and my grandma a lot and i would like to share some of my favorite recipes with you guys
00:09so i
00:10hope you guys enjoy and let's get started hello everyone welcome to maddie's kitchen and today
00:27we are going to be making key lime pie now the reason why we're making this there's a little bit
00:33of a backstory and that is because we some of my family recently moved down to the florida keys
00:42and oh in here this is they have this a lot here so my grandma has made a very special
00:50recipe that
00:50we are going to be making today and i hope you guys are excited because i know i am so
00:56let's get started
00:57all right everyone so now we are going to be making the crust so i already have everything
01:03made on hand but i'm going to show you guys what to do so we are going to be using
01:08some graham
01:08cracker crumbs this is one and fourth cups so i'm going to pour that in my bowl and now we
01:17are going
01:18to be adding the sugar so we are going to grab that and we are going to pour that in
01:25this is one and
01:26fourth cups that you need so now we are going to mix this um slightly not too much but we
01:33are going
01:33to mix it so the sugar and the graham cracker comes are completely combined like that so we are just
01:41going to mix this up it won't take very long all right so we have melted the butter on hand
01:50already
01:50it is this you need two thirds cup and you you want it completely melted no chunks and you are
01:58going
01:58to pour that in like so you want to get it all in the bowl
02:07all right so once you have that all in you are going to mix that up until it is all
02:13combined you
02:14don't want any chunks of the butter or the flour so i'm going to mix this up and you want
02:23to look
02:23i will show you guys the finished product when it is done so yeah we are going to mix
02:37we can like do so this is what the finished product is um oops a little bit there but this
02:45is what the
02:46finished product is and yours should look about like this you want it um you don't want chunks of
02:52butter or like that in here but we are going to pour this into a pie pan now you don't
03:00want it too big
03:00big you don't want the pie pan too big but we are going to pour this in like that you're
03:06just gonna
03:07do it like that we want it in his pour all of it in
03:22all right so now we are going to spread it on the bottom of the pan like so
03:27and you want it a nice good even layer and you're going to spread it like i'm doing here with
03:37my fork
03:42this then once you are done you are going to go in with your hands and you're going to pat
03:48it down
03:49then so like this then once you're done you're going to kind of get it up the sides just slightly
03:57not all
03:57the way you want to press nice and firm so it will stay in the process
04:09like that now i want to get this really firmly in so it doesn't have to be perfect but it
04:18just has to
04:19be all in the pan
04:27and that is done so now we are going to put this in the refrigerator
04:35now we are going to put this in the refrigerator for about one hour
04:42and we will see you guys when i'm done putting this in all right everyone so while the crust is
04:50in
04:51the refrigerator chilling we are going to make the filling now what you're going to need here is two
04:58of 14 ounces of sweetened condensed milk now we i have two cans right here now you want to make
05:05sure
05:05that you have can sweetened condensed milk not like any other milk because this one is different and
05:12is going to help it be really creamy so you might have to take a little spatula here and help
05:19scoop it
05:21out because it is thick so we are going to just scrape that out of the cam now
05:38i'm trying to get all of it out because you don't want to have all of it
05:52so that's not good so now we are going to do the same thing the other one remember guys you
06:00don't
06:00need one you need two so you're going to empty that out and you're going to help it get all
06:07out here
06:09like that
06:14you might tear your arms out a little bit but it'll be worth it in the end
06:24all right so that is about good i'm gonna put that off to the side all right so now once
06:31we have
06:32that in our bowl right here we are going to need two thirds of key lime juice now the reason
06:38why you
06:39need key lime juice not regular lime juice because key lime juice is special it helps key lime flavor
06:46bring out a lot this is the brand that we are using don't have to use this but these are
06:51what key
06:51limes look like if you guys were wondering they kind of look like a small lemon but yeah this is
06:57we did
06:58not squeeze the juice we bought it and because we just really like this brand and um you're going to
07:06need two thirds of that so i'm going to pour that in like so like that now once that is
07:16poured in we are
07:17going to need one third cup of sour cream like this so once i have the sour cream so this
07:26is the brand
07:26that i am using right here and it's the brand that we just use guys but you can use any
07:34ground but i'm
07:36going to pour that in you might have to use a spatula or anything like that to help you get
07:41it out but my
07:42spatula is currently occupied so i'm just gonna use my finger right here make sure you wash your hands
07:48before you do this but that's what i have on hand right now so i'm going to get that all
07:52out
07:54like that and i think i'm gonna go wash my hands really quick so i'll see you guys when i'm
07:58done with
07:59that all right everyone so i got all cleaned up now we are going to take our whisk here and
08:04we are
08:05going to just mix that up and you want it to be completely mixed together again you don't really
08:12want many chunks but we are going to mix this all up and when we are done we will move
08:19on to the
08:20directions all right so once this is all mixed up this is what it's about to look like i don't
08:31know if
08:32you guys can see that or not but that is what it's going to look like now remember you want
08:37no chunks in
08:38it you want as smooth as you can get it all right so now once we have our whisk sweetened
08:45condensed
08:45milk lime juice and sour cream in a large bowl until well blended pour filling into crust and bake for
08:55seven to ten minutes at 350 degrees so let me grab the pie crust out of the fridge
09:05all right so that is out of the fridge and we have the filling right here now i already have
09:20my oven
09:21good and good and at the same temperature so this would be a good time before you do this to
09:25turn
09:25it on and we are going to just pour this into it now you want it to be nice and
09:32thick you don't want
09:34it to be very thin so we're going to pour it all in there like that
09:44now i think i'm going to grab my spatula really quick maybe i don't know probably not so here grab
09:53this
09:56so i'm going to hand my whisk off and you're going to scrape the inside out
10:04and remember you want all of it in as much as you can get don't want to waste it
10:14make sure you get all of it like that so set that off to the side now we are going
10:20to spread
10:22the um filling along the crust now you want it to be a nice thick layer
10:29again so we're just going to spread it make sure you do it nice and gentle you don't want your
10:33spatula
10:34to sink in so i want to do it on the top of it and nice spreading now it's okay
10:40if you get on the
10:40outside a little bit of the pan but you can just um take a little napkin and you can
10:52wash that up like that so now we are going to put it in the oven let it bake to
11:00seven to ten minutes
11:02and you guys will know when it's done all right everyone so once we have our oven to the degrees
11:09it needs to be we are going to take our high and make sure you guys are very careful with
11:14this
11:16do not want to get burned and you're just going to slide it in like so and you are going
11:23to wait
11:23seven to ten minutes and once you want to check it when it hits seven minutes so we are going
11:30to set
11:31a timer and we will see you guys when we are it is done cooking and we will continue all
11:38right so we
11:39um just took it out of the oven and now you guys can probably see here that there are balls
11:45on the
11:45top now that is what you want that is when you know it is completely done so now that that
11:52is taken
11:52out of the oven we are going to grab my recipe right here and um you want those bubbles the
12:00tiny
12:01they are not going to be huge they're going to be tiny you just need to look a little bit
12:05but what's
12:06the bubbles we can do form to the surface of the pie you're going to take it out now cool
12:11completely
12:12before refrigerating okay so you want this to cool completely off before we are going to refrigerate
12:22it here so i'm going to put my gloves on right now it's going to be hot so you want
12:28to make sure that
12:28you are careful now i'm going to move this off to the side i'll see you guys when we're done
12:33with that
12:34all right guys so now we are going to be making whooping cream now if you guys already have some
12:38on hand like in a can or anything in your fridge that you can use that but i like to
12:43make my own
12:44now it's very simple it's a very easy process so i'm going to show you guys how to bake it
12:49all right so the first thing that we're going to need is one cup of heavy whooping cream now you
12:53gotta guys gotta make sure that's heavy whooping cream cannot just be regular because you want to
12:59be that good heavy whooping cream so i already have it on hand we are going to pour that into
13:05our mixing bowl like so and we are going to set that aside so and now we are going to
13:14take some
13:14vanilla extract so you guys can use any kind of vanilla this is just the one we have on hand
13:18so i'm going to pour that into um one teaspoon so we're going to pour it in make sure you
13:29fill it up
13:29all the way so do that like so and now we are going to pour that in you want to
13:42make sure get all of it
14:00okay so once that drip get off now we are going to set this aside so now we are going
14:07to blend this
14:08up we're going to mix it it is going to take a couple minutes on a high speed so i'm
14:13going to turn
14:21all right so we are going to put it in and we are going to stir it on
14:44all right guys so i just finished mixing it now i'm going to show you guys what the finished product
14:51should look like when you are done mixing so this is what it should look like it is now turned
14:56into
14:57whooping cream as you guys can see now it smells really good but this is what it should look like
15:04so now we are going to add the powdered sugar so we are going to take some powdered sugar right
15:10here
15:10any kind this way and we are going to take two just good spoonfuls about this much so we're going
15:18to add
15:18that and remember you want two so about that much we're going to add that in set that outside now
15:28you
15:28are not going to use our mixer anymore we're going to stir this up very gently because you don't want
15:34powdered sugar to just go flying so now i'm going to so now you guys are going to fold now
15:41i'm going
15:41to show you guys how to fold if you do not know how to at home so basically what you
15:45do is you're going to
15:46take your spatula like this you're going to scrape along the side and you're going to fold it in now
15:53you want to keep on doing that or a little bit until the powdered sugar is completely mixed in
16:01so i'm going to mix this up and hold it so i'll see you guys when i am done and
16:08yeah we will do the
16:09finished thing which is put it on top of the pie so i'm going to keep on folding here like
16:18this
16:19and you want it to be nice and you don't want there to be too many chunks at all you
16:26want to be nice
16:27and smooth whipping cream because when you buy cream from the store it isn't it isn't very chunky and you
16:35want to be just like the store bought so i'm going to continue mixing this and i'll see you guys
16:39when
16:40i'm done all right guys so now we've left the keyland pie it actually took a couple hours to fully
16:47cool
16:47off so it's a little bit later in the day but we have our whoop cream right here we have
16:53keyland pie
16:53and our tools i'm going to show you guys how to put the whoop cream or like our homemade
17:01whipped cream or the whipped cream that you guys already have and to the killing pie now of course
17:08you could do it however you want this is the special way that we just like to do it so
17:11we're
17:12just going to show you so what you're going to need is you're going to need your whipped cream you're
17:16going to need your pie of course you're going to need a ziploc baggie you're going to need some scissors
17:21and a spatula the first thing that you're going to do is you're going to take your plastic bag
17:27and then we're going to scoop this really quick you're going to take your um whipped cream and
17:35you're going to use your spatula to scoop it in the bag like this
17:44i'm just gonna get a good gallop gallop dollop on your spatula
17:54right there and i just gotta empty it all out into the bag like this
18:04you don't have to do all of it at once but if you have like a really small plastic bag
18:09you can just
18:11do a little bit at a time but you should you should try to get it as much as you
18:16can in there
18:20all right now scoop this we're going to put that in the bag there's a lot on my spatula but
18:29i'll get
18:29that a little bit so once you have it in your ziploc baggie you're going to zip it up you're
18:35going to
18:36get all the air out of it like that and you're going to zip it up
18:43make sure i get all my air out of it like that now we're going to take it
18:49and with your scissors you're going to bring it over here we cheated a little bit and we made a
18:56little line for me to cut just so it would be good but you don't want to cut too little
19:01or too big
19:01i just want to do about the right amount so i'm going to cut that oh landed in the pie
19:11so now
19:13you're going to take it like this and so what you're going to do is you're going to squeeze it
19:20and then you're going to make a little daub like that they don't have to be perfect like that
19:27and you're going to go all along the sides like this
19:42all right and we need one more and a bang so the dolls around the sides um
19:50are complete so now we are going to do the center so basically you're going to take it in the
19:56center we're just going to make a bigger kind of dollop like this
20:02mine is definitely not perfect
20:07yeah so let me put this off to the side right here and that is our key lime pie complete
20:14so this is what
20:16the end result looks like i am in love i'm gonna definitely enjoy this for my breakfast or whatever
20:24but i definitely encourage you guys to make this this is a very awesome
20:32pie that my family just loves so i hope to see you guys and next time go check out
