00:51So my name is Jason Ignacio White. I'm a former employee at Restaurant Noma, and I'm standing
00:56here today in front of Paramore Estate, against restaurant violence and exploitation in solidarity
01:01with my peers around the world.
01:03When I worked at Noma, I worked six days a week, sometimes seven. I would work from like 7am
01:09until like 1 in the morning, no vacation, no time off, a lot of responsibility and some
01:14big dreams being broken along the way.
01:19So I worked there for about five years, like four years and a half roughly. I was the director
01:23of fermentation at restaurant Noma, but I was also the head of production and development
01:27in the fermentation lab. Yeah, and so basically I had experienced some conditions at Noma that
01:32were unacceptable, but it was difficult for me to speak up about it. Through some soul searching
01:37and some traveling, I encountered some more victims of Noma on my travels, and that gave
01:42me the courage to speak up because I was tired of having to hear these testimonies without resolution.
01:47About four weeks ago, I stood up and I explained what my story was on my social media account,
01:52and hundreds of people around the world who experienced violence at Noma stepped up, and
01:56then thousands of people who experienced violence at the restaurants around the world stood by
01:59us as well, giving their testimonies. We started a website, New York Times wrote about it, and
02:04now all Noma sponsors have dropped out. He stepped down from being the chef, but we want
02:08more transparency, more solutions for the victims. Restaurant Noma has been open for almost
02:1323 years now, if not maybe a little longer, and the amount of abuse that has been passed
02:18along to that restaurant for two decades, a PR stunt of a video he posts on Instagram
02:23isn't enough for a resolution or justice. I mean, I knew it was never just me, but the
02:28problem is when you're stuck in the cycle of abuse, working an extreme amount of hours,
02:32and also your family depends on you, some things can get very confusing. The restaurant industry
02:36also hasn't really been known for encouraging people speaking up. A lot of times when people
02:41will speak up in restaurants about the conditions that they're in, they treat that bravery as
02:45weakness.
