00:48I was kind of a bit nervous until my night.
00:49I couldn't really sleep last night.
00:51I was like, ooh, I'm going to be doing some food
00:52and I'm going to be cooking some food.

01:32My dessert wasn't the best in terms of thickness,
01:34but I think everybody really enjoyed it and I hope everybody saw the effort I made.

02:32I love the idea of kind of locally sourcing the products from farms.
02:36And also, I wanted dishes that teenagers like.
02:39You know, I could have done, like, a lobster Firmidon or something,
02:41but I'm not sure everyone will like that.
02:43So, I've kind of gone a bit more basic,
02:45but I'm hoping to get those flavours in the basic.
02:48And the first of those teen-friendly dishes he's going to tackle
02:51is the starter, homemade pita bread and dips.
02:56I think I'm a little surprised
02:57that it's not something more complicated from Alex.
02:59I think pita bread and dips seems to be a pretty easy dish to do.
03:04We've had a lot of a bread kind of theme this week,
03:07so I'm interested to see how his pita bread goes.

03:13Alex kicks off his starter by making a dough for the pita bread.

03:17No, we don't add the salt to the yeast,
03:19because if you do, it will kill the yeast.

03:33So I'm not just making the pita bread from scratch,
03:35I'm also making four homemade dips.
03:37Which consist of courgette,
03:39roast garlic hummus, sun-dried tomato hummus,
03:42and a baba ganoush.
03:43Or aubergine dip to you and me.
03:47That's nice, huh? I like it. That's nice.

03:50So I've just done all the dips there.

03:57Anyway, on to the main.
03:59Homemade beef burgers with secret sauce and triple-cooked chips.
04:02Yeah, that sounds more like it.
04:04Now, genuinely, burgers are my favourite food,
04:07so I am going to devour that.
04:09Beef burgers I've often been known to be quite picky about.
04:13Triple-cooked chips? I've never heard of that before.
04:16Just put it in the oven and take it out.
04:17Put it in the oven again and then whatever.
04:18Or the air fryer.
04:19And then take it out and then out again.
04:21Is that literally what it is?
04:22Well, let's find out.
04:23Having sharpened some blooming great knives,
04:25Alex sets about chopping up spuds
04:27and putting them on to boil.
04:29And because it's so big, we're going to go on the big gas.
04:32So the key to a triple-cooked chip
04:34is to part-boil them first,
04:37soften them, not too much so they'll become mash,
04:39but softer enough so they're cooked inside.
04:42Then we fry them 180 degrees.
04:44Then we just finish them off in the oven.
04:46Not a million miles off, Ben.

04:48Alex turns his attention to the special burger sauce,
04:51which he makes with his own mayonnaise
04:53and a whole host of household condiments.
04:56Go in with that mayonnaise.

05:18So this meat is from a farm just around the corner.
05:20We're going to weigh 100 grand patties.
05:22A lot of burgers have grizzlies, so I'm hoping Alex doesn't make any burgers that have grizzlies in.
05:28Yeah, I think we're all hoping for that.

05:36I'm going to serve it in my own homemade brioche buns.

05:54Blackberry and apple crumble with homemade ice cream.

06:21Alex peels and chops cooking apples, adds hand-picked blackberries, loads with sugar, then stews.
06:28For his crumble, he blitzes flour with butter.
06:30That's crumbed as quick as that.
06:32Then add sugar.
06:33This will top his stewed fruit.
06:35So, this is looking very nice.
06:37You can see right here how the blackberries have kind of dissolved into the mix.
06:43Next, the homemade ice cream.

06:51So, it's going to be like a homemade custard ice cream.
06:54So, it actually tastes like custard, but in an ice cream.
06:57Alex combines milk from a bottle, no cow, then cream and sugar, and heats.
07:02We've definitely had ice cream before with, I think it was Lettuce House.
07:05But she didn't make it homemade.
07:07No, she brought it in the shop.
07:08So, hopefully it's nicer, because it's homemade.
07:11You can push a theme too far, you know.
07:13Eggs are separated.
07:14Going with the hand.
07:15And the yolks beaten with sugar before gently being introduced to the warm milk and cream mix.
07:21Then whisked again until nice and thick.
07:24That's perfect.
07:25The warmed ice cream mix is strained and chilled before going in to freeze.
07:30It's going to let that sit there for a minute, and it's going to help cool it down a lot
07:34faster.
07:34So, when I throw it in the freezer, it's going to freeze a lot quicker.
07:37It'll be served with the crowd-pleasing crumble.
07:40Overall, I'm really happy with how everything's turned out.
07:42Don't think I can do anything differently, I think.
