00:00All right, my massive game day flying Dutchman, but first I need to caramelize those onions.
00:06I don't like those onion buns, not a fan of those, but I am a fan of caramelized onions in
00:11between the layers of beef and cheese.
00:14So, diced up a bunch of onions, got the flat rock hot and ready.
00:19But to take these caramelized onions to the next level, I like to pull out that bullet bourbon, add that
00:25to the onions,
00:26and then just add some more flavor and the caramelization just fits a bit different.
00:30So, once those are all done, put them in the pan, put them aside, and I'm going to start working
00:35on the beef.
00:36So, like I said, I'm going for a massive flying Dutchman.
00:38So, I've got me a very thin cookie sheet that's going to be the thickness of my ground beef.
00:44Pretty much perfect. I don't even have to smash it down.
00:46So, I've got me a five-pound chub of ground beef.
00:50Got about two pounds of that off.
00:51About two pounds or so fit perfectly in the thickness of this cookie sheet.
00:56So, I've got the wax paper, just easier to transfer to the flat rock.
01:01Got the Traeger burger rub.
01:03We're going to hit both sides of this ground beef.
01:07Flat rock's about medium-high.
01:09I'm just going to pull that wax paper off.
01:12I'm going to repeat that process on the other side.
01:14You can see it's just an easy transfer.
01:18Once that's going, I'm going to hit more of that Traeger burger rub on the other side.
01:23And then, check this out.
01:24Didn't quite work out the way I planned.
01:26And I fell apart.
01:27But that's okay.
01:28We're using American cheese.
01:30And that cheese is going to be my glue.
01:32So, as you can see here, pretty much went back together.
01:34No problem.
01:35Did that flip.
01:36Obviously, we're using those two big Traeger spatulas to do the job.
01:40Here comes those bourbon caramelized onions.
01:43And then, American cheese.
01:45I actually used nine pieces of cheese per layer.
01:49Got the onions underneath.
01:51And now, it's just time to layer this up.
01:54So, one on top of the other.
01:56And this is your Flying Dutchman.
01:59So, pull it off the flat rock.
02:02I want to let it cool down for, you know, a couple minutes or so.
02:05And this is the awesome part.
02:07If this is game day, you can make these as big or as small as you want.
02:10That's kind of why I went with this bigger version of the Flying Dutchman.
02:13and a set of singles.
02:14I just had fun with it.
02:16Obviously, the animal sauce is the cherry on top.
02:21So, got me a big bowl of animal sauce.
02:24Going to layer that on top.
02:25And you guys know what's left.
02:27It's just to take that bite right down the hatch and the bottom of the belly.
02:32And this is perfect for game day.
