00:08:08Lots of get togethers growing up.
00:08:09Christmas tends to be a bigger family celebration.
00:08:12My husband and I met in high school in, uh, South Jersey.
00:08:15But I've always wanted to live in New Orleans.
00:08:18And now I am the pastry chef for big restaurants there.
00:08:21The food culture in New Orleans is like nowhere else I've ever been.
00:08:25The food is so good and so flavorful.
00:08:28So, warm and toasty, New Orleans, you gotta go with big, warm flavors.
00:08:33The custard is infused with a lot of spices, some rum, some bourbon, bananas in there.
00:08:38A little bit of orange dust to kind of brighten that up a little bit.
00:08:40And then a Foster sauce anglaise.
00:08:43To decorate, I'm going to caramelize some bananas.
00:08:46You know, kind of shingle them on top really nice.
00:08:49Little white chocolate snowflakes.
00:08:52Just really kind of bring it together.
00:08:54And also when it's cold outside, what do you want?
00:08:56Bread pudding.
00:08:57I hope I can be the overall winner for my team.

00:13:13Today, I'm going to use my famous cheesecake recipe so the people back home will know exactly
00:13:18what this is.
00:13:19I'm going to put a little bit of peppermint for the cool and refreshing.
00:13:22And for the naughty, I'm going to put a little bit of tequila inside of mixed berry compote.
00:13:27And some mint.
00:13:28Something chill and frosty.
00:13:30And then afterwards, I might just take a bite out of it before I serve it to the judges.

00:16:20So I'm going to do a caramelized honey sweet potato pie with blackberry gelée, toasted meringue,
00:16:27a little freshness, a little sweetness.
00:16:30To decorate, I'm going to take my meringue, pipe it into strips, and make these chocolate snowflakes with a little bit of fliotine on the top for a little crunch.

00:17:19My decoration idea is to make kind of little chocolate logs for the bottom, and kind of have it look like a little campfire with toasted meringue.
00:17:27I also wanted to make a smoked cinnamon Bavarian cream.
00:17:30This is hickory wood, and you light it on fire, and then it puts the smoke into this, where the semantics are.
00:17:35It'll kind of infuse the Bavarian that I'm making, warm and toasty.
