01:06discover the tricks of the supermarket trade the supermarkets have one more
01:11secret up their sleeve to help you decide where to spend and where to save for the
01:17sake of saving a few Bob I would definitely make the switch this time the
01:23restaurant serving up la dolce vita absolutely delicious from arancini to
01:30spaghetti carbonara I genuinely love the supermarket carbonara and from garlic
01:36bread the garlic is garlicking to tiramisu our restaurant diners will be giving
01:42their verdict on Italian food from British supermarkets this one smells like cat food you
01:48know I'm Tom Reed Wilson and Ben Venuto to the taste test restaurant I'm pitting dishes from
02:05Britain's biggest supermarkets against each other to help you decide where to spend your money
02:11now today my wondrous team are transforming the restaurant into a trattoria so that we can say
02:19ciao Bella to Italian foods but will our diners be saying me or amore or please not a teaspoon more
02:28a to our supermarket offerings meanwhile downstairs in the kitchen or la cuchina super chef and culinary
02:36wizard Mike Reed is prepping for service everyone's got high expectations when it comes to Italian so we
02:43need to be on it we need to be focused and we need to make sure our diners are happy with Mike busy
02:49preparing the food the first diners have arrived at the taste test restaurant oh be a chair and that's
02:57where my Italian well run it's dry they include a trio of Italian grandmothers or numbers a chorus of
03:07opera singers is the golden larynx isn't it please come and make yourselves comfortable Italian brothers
03:15who are also pizza chefs oh Italy obsessed best friends oh lovely to meet you an engaged couple now the
03:28romance has arrived this is going to be a divinely romantic table we need a little bit of Italian
03:34romance don't we and three food loving footballers now I gather you boys are carb loading I'm going to
03:42absolutely stuff you today our diners will taste five dishes with three choices from major supermarkets
03:51each time but they don't know which brand is which and we'll vote anonymously for their favorite
03:58ciao diners I'm going to ask you to take a little voyage of the imagination with me we're no longer in
04:06London we're in sun-drenched Sicily about to take a passeggiata or an evening promenade and on our way to the
04:16taste test trattoria we have a lovely appetizer it is of course arancini this is a battle between two premium
04:31and one mid-range supermarket our diners will blind test three arancini dishes by tasting the individual
04:40arancino balls in no particular order the options are waitrose go veggie tomato and mozzarella arancini
04:49m&s food rich tomato and mozzarella arancini and asda arabiata arancini
04:57they're labeled a b and c but neither the diners nor Tom will know which is which
05:06yep let's go please oh thank you they look like scotch eggs the italian scotch eggs diners it's time to
05:20taste arancini a we too many spices like maroccan style arancini it should be way more delicate
05:33delicious neapolitan brothers my big question for you is this authentica authentic authentico
05:42authentico is it if I had to taste it blind I would never say it's an arancino so what would you look
05:49for in a proper authentico season in general was way too strong so the spices were covering everything
05:58I haven't transported you to Sicily yet definitely not via the palate
06:03diners it's time to taste arancini b oh I think there's cheese in the middle I'm always a fan of
06:15cheese in the middle of anything it's a bit too strong the cheese it's almost like overpowering
06:22so what are the origins of these tasty rice balls
06:28traditionally arancini are balls of cooked rice often shaped around a flavored filling and then deep
06:40fried it's said that the Arabs brought them over to Sicily in the 10th century the word arancini
06:49means little oranges in Sicilian because once cooked they resemble a sour orange a citrus fruit
06:56imported by the Arabs when they ruled the island arancini are traditionally eaten on the feast day
07:04of Santa Lucia when no bread or pasta is consumed they were also a very practical dish making use of
07:14leftover risotto by shaping it into portable snacks they could be eaten by farm workers in the fields
07:20a far cry from the diners who enjoy arancini today diners it's time to tuck in to arancini C
07:35it was crunchy on the outside but that was it now see arancini C they look like very uniform balls Joshua yeah they're a quite nicely shaped the crunch was good yes but there ain't no flavor no flavor no please tell me that in this melange there was something that sung yeah
07:42yes absolutely
08:06Well, which one, which one is selling to you?
08:11I have to say, for me, it was A.
08:14So with all three arancini tasted,
08:17it's time for the diners to decide the winner.
08:21Diners, it's time to vote for your favourite arancini.
08:26Will it be A, B or C?
08:30While the diners cast their votes,
08:32in the kitchen, Chef Mike wants to find out more
08:38about what's inside the supermarket arancini.
08:41I'm going to start with the Asda one.
08:44The risotto looks soft.
08:46There's a nice little squidge and bounce back.
08:49Not the oozing sensor that I would expect from arancini.
08:53So next one is M&S.
08:56These are quite small for arancini.
08:58Arancini, traditionally, is actually quite big.
09:01You've got that cheese in the middle, though,
09:03which is melted, which is nice.
09:05Moving on to the larger Waitrose arancini.
09:08When it's bigger, it's juicier.
09:10You can get more filling in there.
09:12You can get more cheese in there.
09:13It's got quite a gooey centre.
09:15That cheese is melted really nicely.
09:18All three supermarket arancini contain cheddar cheese,
09:22as well as the more traditional mozzarella.
09:25So it's very interesting that they've added cheddar cheese in there.
09:28So they've definitely tailored this to the British market.
09:31I understand why brands would do that,
09:33but it's not Italian and it's not authentic.
09:39Back in the restaurant, with the votes now counted,
09:42it's time to see if our diners like the British take on arancini.
09:47Well, diners, your votes are in,
09:51and we have a very clear winner with a stonking nine votes.
09:56It is Arancini A from Asda.
10:04Which beat second place, Arancini B from Waitrose,
10:12and in third place, Arancini C from M and S.
10:20So in the battle of the starters,
10:23it's a clear victory for the spicier option.
10:26First is Asda's Arrabbiata Arancini at £2.98 for 180 grams.
10:35In second place, it's Waitrose Go Veggie,
10:38tomato and mozzarella arancini at £4 for the biggest pack at 300 grams.
10:44And coming last is the most expensive.
10:47At £3.90 for 200 grams,
10:50M and S food, rich tomato and mozzarella arancini.
10:54Actually, it really delights me to reveal to you
10:57that Arancini A from Asda
11:00is nearly a pound cheaper than the M and S option.
11:05So it seems that not only are you very discerning palettes,
11:09but very savvy shoppers.
11:13The diners have decided.
11:15When it comes to Arancini,
11:16it appears you don't have to fork out
11:19for an Italian-style starter.
11:24Coming up,

12:28It's that iconic.
12:31It is, of course,
12:33spaghetti carbonara.
12:35This is a battle between a brand leader
12:43versus supermarket premium ranges.
12:47Remember, the diners have no idea which is which.
12:52The main courses they're testing are
12:54Charlie Bigham's spaghetti carbonara,
12:58as does Bistro's spaghetti pancetta carbonara,
13:02and Sainsbury's taste-the-difference pancetta carbonara.
13:06These are done.
13:10Smells really nice.

13:17It's not easy to get a good carbonara pepper.
13:19It's not easy.
13:20I genuinely love a supermarket carbonara.

13:26it's time to taste spaghetti carbonara A.
13:34It's what I would expect from a carbonara.
13:36A little bit of cheese on that bad boy
13:38would really bring it to life, I think.
13:40Now, I know that you're big fans of Italian flavours.
13:46Yes.
13:47Absolutely.
13:47How does this rate carbonara A?
13:50A little bit bland.
13:52Yeah, it was like there was no excitement.
13:53So our feeling is if carbonara A
13:55was served to you at a restaurant or a trattoria,
13:59it would be slightly disappointing.
14:01I wouldn't complain, but I wouldn't leave it here.
14:04But will spaghetti carbonara B bring home the bacon?
14:10It's got more taste, more flavour.
14:14Now, Katerina, crucially,
14:17does B meet your definition of carbonara?
14:21Oh, it does?
14:22Yes, it's got more flavour, the cheese.
14:25It tasted like, you know, the right ingredients in there.
14:29Well, that has me kicking about the clouds already.
14:33Spaghetti carbonara B may be a hit with our nonnas,
14:37but the origins of this classic Italian dish
14:39aren't so clear-cut.
14:43There are numerous theories about its origin.
14:47The name carbonara means coal burner,
14:50so some believe it was created as a hearty, easy dish
14:54that men making charcoal enjoyed in the 19th century.
14:57Another popular theory is that it was created by American soldiers
15:03stationed in Italy during World War II
15:05who used their rations of eggs, bacon and pasta
15:08to make this nourishing meal.
15:12Today, of course, there are numerous tapes
15:15on what has become one of Italy's most popular dishes.
15:23But what do our Italian food lovers think of the next supermarket offering?
15:28Diners, it's time to taste spaghetti carbonara C.
15:36Not close to carbonara, but nice pasta dish.
15:39Now, a little birdie tells me
15:42this is your favourite Italian dish, carbonara.
15:44It is.
15:45It's got a lot of pepper in it.
15:47It's a very strong cheese as well.
15:49They've maybe put too much cheese in it.
15:51Right.
15:52So which of our pasta dishes will take the crown?
15:55Diners, it's time to vote for your favourite spaghetti carbonara.

16:12In the kitchen, chef Mike reveals the secrets of shop-bought carbonaras.
16:19I'm not surprised at our diners think
16:21some of these are not authentic carbonaras.
16:24And that's because the supermarkets are sitting on a massive secret.
16:28They've reinvented carbonara.
16:30In a real carbonara, there's no cream in sight.
16:32It's made from raw egg yolks.
16:34That's the big difference between the authentic carbonara
16:38and what the supermarkets produce.
16:41Raw egg yolk is a no-go in a ready meal.
16:45You couldn't actually reheat a carbonara
16:48made from raw egg yolks in the microwave.
16:50It would scramble.
16:52So to create the creamy texture
16:54made by the egg yolk and pasta water in a genuine carbonara,
16:59the supermarkets have to add cream.
17:01If you look at this first one,
17:03you can clearly see the amount of cream.
17:08And if I look at the ingredients,
17:10there's not an egg in sight.
17:14But if you fancy a genuine carbonara,
17:17Mike's going to show you how it's done.
17:20After adding his pasta to boiling salted water,
17:24he separates egg yolks from the whites
17:26and grates some Italian cheese.
17:29I'm adding my freshly grated pecorino.
17:34A classic carbonara is made with guanciale,
17:37or cured pork cheek.
17:39But pancetta, or cured pork belly, is often used.
17:42A little trick is we're taking that fat
17:47that's come from cooking our guanciale,
17:49and we're going to whisk that through our egg mix.
17:53Just a little bit at a time.
17:56We don't want to scramble the egg yolks.
17:58And that's the key to getting a silky, smooth,
18:01and creamy carbonara.
18:02But without the cream.
18:03He then adds a splash of pasta water
18:07and his al dente spaghetti to the egg and cheese mix.
18:12Let's not forget now
18:13that beautiful, crispy guanciale,
18:19which is just finishing off
18:21this beautiful, simple, classic dish.
18:25This is an authentic carbonara.
18:29Delicious.
18:30Pass me a fork.
18:31Back in the restaurant,
18:34it's the moment of truth for the supermarket versions.
18:38Well, diners, your votes are in,
18:41and it's a crystal clear winner,
18:45with a whopping 12 votes.

19:37is almost double the price
19:39of Asda's offering.
19:40With that in mind,

23:06is what it would taste like exactly that but how will garlic bread c perform
23:15i would say if i certainly wouldn't buy this no definitely not i don't think i want any more
23:22now i haven't tasted this but garlic bread c looks considerably less buttery to me i don't know if
23:29that's borne out by flavor claire it's not gonna wow me but i do think it's just slightly more
23:36flavorsome than the other two very interesting with the garlic bread savored the diners must now decide
23:44which they prefer diners it's time to cast your votes for your favorite garlic bread
23:51a b or c coming up the results of our garlic bread taste test there's a comfortable winner

24:21welcome back to the taste test restaurant where we're sampling some of the nation's favorite
24:29italian foods my delicious diners are voting on an iconic italian side dish but before i reveal
24:37their verdict mike's going to reveal the secret to a deliziosa garlic bread in the kitchen mike's about
24:46to inspect the garlic baguettes the budget brands he's comparing are little simply garlic baguettes
24:54morrison savers garlic baguette and waitrose essential garlic baguette in order to assess the
25:01fillings mike's going to inspect them in their uncooked state starting with the waitrose budget range baguette
25:08so i want to really get inside now and see what's in there once we break it apart the smell of garlic
25:15is very strong quite pungent i think that's a generous amount of filling right there on that slice
25:23and if you look at the ingredients they've got chopped garlic in here but then they've got nine
25:26percent butter as well which for budget product is great to see next is the morrison savers baguette
25:33which is 88 pence cheaper than the waitrose one but it's a slightly smaller product so let's have a
25:40closer look at morrison's definitely not as generous on the filling i don't think as the waitrose but
25:46there's herbs in there which is nice to see so let's have a look at the ingredients there's no butter
25:54what i can see is rapeseed oil and palm oil and skim milk powder it's essentially like a margarine
26:02based spread and to be fair that's reflected in the price this is a budget product so with just
26:09nine percent butter in the waitrose baguette and a margarine type mix in the morrisons how will the
26:14little one compare another budget option is little definitely more filling than the last one i can smell
26:22more garlic as well on the nose i can't see any milk powder definitely no butter they write here
26:30margarine palm oil rapeseed or so yeah this is like a vegetable based spread so it's accidentally
26:36vegan because without the milk or the dairy based products that's what's helping keep the cost down
26:41for me a garlic bread butter is so key so important i mean it's bread and butter it's the whole thing
26:48right but will the difference in the fillings impact the diner's votes
26:53back in the restaurant it's crunch time in the game of the garlic breads
27:02i would say there's a comfortable winner because it has 11 votes it is
27:11garlic bread a
27:14now this was a waitrose garlic bread so in the battle of the budget garlic breads
27:26the clear winner and the most expensive is waitrose essential garlic baguette at one pound 25 for 210
27:34grams in second place it's b morrison savers garlic baguette at 37 pence for 170 grams and coming third
27:47is c little simply garlic baguettes at 74 pence for 340 grams but as there are two garlic baguettes in the
27:57pack it actually works out the same price as the morrisons
28:00well given that the winning garlic bread was almost three times the price of the second
28:09place morrisons would anybody switch oh sarah your hand shot her i certainly would for nearly three
28:18times the price tom for the sake of saving a few bob i would definitely make the switch
28:24so despite the winning garlic baguette being the only one containing butter
28:29it seems some diners would think again about paying more for it
28:35dear diners i promise it's jolly nearly time for dessert but first there's one more savory dish
28:41which is extraordinarily handy when you're tight for time we've
28:44all had it in our cupboards and fridges at some stage it is cheese ravioli
28:52we've got to do service now in 10 minutes so let's get these raviolis cooking please
29:02in this round it's between supermarket mid and budget ranges as ever our diners don't know which
29:09brands a b and c are from the supermarket choices are sainsbury's four cheese ravioli in a tomato and
29:18basil sauce tesco cheese ravioli in tomato sauce the only brand in our test that comes in a tin
29:27and mns food for cheese ravioli they are all 400 gram portion sizes
29:33service service make sure the plate rims are nice and clean guys
29:44so a is cheap it's cheap diners it's time to taste cheese ravioli a
29:53bungee
30:05that's disgusting i've been eating ravioli a four years they ain't got no better hey to be honest
30:11it's not got a bad taste of it oh my maybe cheese ravioli b might be more appealing
30:23it's a really sweet sauce actually it's quite fake tomato to me
30:27really oh we disagree and finally does cheese ravioli c live up to its name
30:34it doesn't scream cheesy no it doesn't scream cheesy c's got the best sauce but the ravioli
30:44itself it's not that great but the true test for any italian dish lies with the italian grannies
30:53or nonnas i deliberately left you until last in the hope that one of them would have pleased you
30:59particularly by then has one oh yes yes let us see let us see oh why is it so good i think the sauce
31:10tasted almost handmade it could almost be made by an honor yes yes but there's something missing
31:19that we would add wouldn't we yes it's parmesan oh i am so with you delicious delicious oh so are you
31:29tom ravioli c is a winner with our nonnas but what do the rest of our guests think diners it's time to
31:39vote for your favorite cheese ravioli is it a b or c and while the diners vote on their favorite
31:52in the kitchen chef mike is taking a forensic approach to the pasta parcels
31:57and wants to interrogate the cheesy fillings so i'm going to go straight in with this first one
32:04from sainsbury's and the cheeses you've got is cheddar mozzarella you've got ricotta and a hard
32:12cheese but there is only 15 percent cheese in this one so mns is another four cheese ravioli here
32:20you've got some herbs through this one as well i like the look of this tomato sauce too
32:25so the cheeses you've got in here are ricotta mozzarella rigato and a hard cheddar it's got 23
32:34cheese in it it's a premium product finally it's the tinned cheese ravioli from tesco the budget option
32:42coming in at just 80p for a 400 gram can this takes me back to my uni days tinned ravioli
32:50they're very small ravioli the pasta is quite thick it has 2.5 percent cheese filling so it really is
32:58quite a small amount of cheese but it's emmental so it's at least it's a good cheese that they're using
33:03at a very affordable price it's only 80p i mean that's great value for a tin of ravioli
33:09how will the different cheeses in the fillings affect the vote it's time for the results of the
33:18rival ravioli well diners your votes are in and one ravioli has a whopping 14 votes
33:27spell it's ravioli c and this ravioli is from m and s the results are the runaway winner in first
33:44place is m and s food four cheese ravioli at three pounds 75 for 400 grams in second place it's
33:52sainsbury's four cheese ravioli at three pounds 30 for 400 grams and in bottom position with no votes
34:01and by far the cheapest is tesco cheese ravioli and tomato sauce with emmental at just 80 pence for 400
34:09grams that's almost a fifth of the price of the winning ravioli well it's a room wide swerve for
34:16ravioli a and a very triumphant ravioli c bravo diners coming up time to taste test one of the
34:26nation's favorite italian desserts wow i can smell the alcohol and see that strong and chef mike gives
34:34his opinion on the tiramisu options it definitely looks like the premium option it looks more like a
34:41traditional tiramisu
34:59dear diners i did promise you dessert and my goodness you deserve dessert
35:05and i've only got one in mind laced with coffee and booze it will perk you up and loosen inhibitions
35:15at the same time pass me a spoon it is of course
35:27this final round is a competition between a premium a mid and a budget supermarket dessert
35:33the smells in the air right now oh i want to get my spoon out
35:40the desserts they're tasting are sainsbury's classic tiramisu ms food tiramisu
35:48and little milbona desserts tiramisu

35:55oh wow oh wow i can smell it i can smell the alcohol and see that's strong

36:12a looks very manufactured
36:17if you just had the cream it's really enjoyable it's the sponge that's quite intense for me
36:24will tiramisu b fare better
36:33this is more authentic than a the sponge is not soaked so like it's better because it's like less
36:39soaked you can taste the cream it's more balanced it's closer to what a tiramisu looks like in italy as
36:46well

37:01i think it's a little bit lighter than a so in a you can taste the coffee a lot more the chocolate a
37:06lot more i think if you like coffee you'd go for a yeah right if you'd want a hint of coffee go for b
37:13because of that little kick of coffee i'm i'm going for acres of that oh gosh you're going to be dancing on the gingham runner in a minute aren't you

37:24with all that coffee no wonder tiramisu is stimulating
37:30indeed the word means pick me up in an old italian dialect
37:34traditionally this italian dessert has a base of savoyadi biscuits or lady fingers which have been
37:41dunked in coffee and masala wine it's then layered with a mascarpone cream cheese filling and dusted with
37:49cacao powder or pure cocoa early records suggest it originated in treviso in northeast italy in around
37:581800 it's even rumored that a brothel madam invented it as an aphrodisiac for her clients
38:06however a restaurant in treviso is also credited with its invention after it appeared on the dessert menu in the early 1970s
38:17it's clearly a controversial dessert but will the frisky origins of this dish ignite passions in the dining room

39:14chef mike dissects the different desserts to see how the supermarkets make theirs
39:23starting with the sainsbury's one it's quite a decent amount of mascarpone filling there
39:30i like the amount of cocoa on top i want to have a closer look at this sponge because you can see just
39:35how much moisture is in this sponge that's just too much it's essentially a coffee syrup and
39:42traditionally you're supposed to dip your lady fingers into the syrup and then take them out it's
39:48not supposed to be like sitting in the syrup
39:52taking a look at the little option
39:55it's a thick layer of sponge probably a little bit too thick for me the mascarpone layer on top that
40:01looks quite airy you see lots of air bubbles which means it's going to eat really easily because
40:07it'll be super light they're quite generous with the calco dusting on top
40:11so looking at this it's actually got 16 percent mascarpone which is very generous like sainsbury's
40:19only had seven percent and finally the mns food dessert which has 10 percent mascarpone
40:26it definitely looks like the premium option you can see the beautiful individual lady fingers
40:32that light aerated mascarpone filling in the middle and a generous dusting of cacao on top there's less
40:40of that coffee syrup in there and it looks more like a traditional tiramisu but do our diners prefer
40:48the more authentic look upstairs it's results time for the three tiramisu
40:55well diners the votes are in and it's our closest call which maybe proves that one man's tiramisu is
41:02another man's poison i don't know but the winner is tiramisu b
41:13which is from m and s beating sainsbury's tiramisu in second place with five votes
41:22and little's tiramisu in third place with four votes which was tiramisu a all three desserts of 500
41:32grams so first is b mns food tiramisu the most expensive at four pounds per pack second is c sainsbury's
41:43classic tiramisu at three pounds thirty and a the cheapest came bottom the little milbona desserts
41:52tiramisu at two pounds 69 so a closely run race in the dessert round showing it's really a matter of
41:59individual taste dear diners i feel so spoiled to have you today the critiques have been excellent

42:27the night it's been a revealing repast as my italian diners have been telling me it seems we've been
42:33eating a very british take on italian foods and today the premium supermarkets and brands delivered
