Tristen Epps is bringing Afro-Caribbean cuisine to the fine dining scene. In this video, we caught up with Top Chef winner Tristen Epps, who shares his inspiration behind what kind of experience he wants restaurant guests to have. To him, the “Aha” moment is the most important and satisfying experience to give someone, showing his Southern and Houstonian roots mixed with Caribbean culture, all wrapped up in a delicious and hospitable meal.

00:00My favorite experience that I want people to have is the aha moment.
00:04That's the experience.
00:05I can't tell you how many people that I've cooked for.
00:08They're like, man, this is Afro-Caribbean cuisine.
00:10This tastes so much like Southern cuisine or like something I've had growing up in
00:14Louisiana, in South Carolina, North Carolina, in the low country, in Latin America.
00:19I was like, yeah, well, you know, this came from here and that came from here and this
00:22is how it's got here.
00:23And it's just that, okay, that makes so much sense now.
00:26I've never thought about it like that.
00:27That aha moment is the most satisfying moment to me.
00:30Obviously I want them to have a delicious hospitable experience, but it's just really
00:34that thing where like you see the light in their eyes just brighten.
00:37It's the absolute coolest part.
