03:42So, bakers, your semi-final challenge is all about fantastic beasts.

03:52And in honor of the famous Gringotts dragon, your tasting element needs to be either smoky or fiery.

06:58a smoked whipped dark chocolate ganache.
07:01And that is going to add a lot of flavor to the cake itself.

07:07Mole, it's a typical Mexican sauce.
07:09It's a blend of chiles with some cacao, and it brings this umami flavor that everybody
07:16loves in Mexico.

08:06To find the fiery note, I will be creating an entremet that has a chocolate chili cake,
08:11a black currant, and chili mousse.
08:14In the middle of that, there's going to be a tamarind marshmallow.
08:17The marshmallow is in there because it's really to represent the bone marrow within the
08:21spine of the festeral.
08:22And then we're going to finish it off with a pink peppercorn chocolate sablé.
08:26I've been an athlete my whole life.
08:28I played baseball in college.
08:29I have won four out of the five competitions I've done on the network.
08:32I've also been nominated for Forbes 30 of the 30.

08:47And it's a really big piece, and we have to cut thousands of feathers, and it's going to

16:44It applies, like, a layer of elasticity, so it literally turns from paper into fabric.

21:10And scotch has a really nice smoky flavor.
21:13And then for our smoky element, I'm making smoked caramel.
21:16The fats and the cream will absorb the flavor of the smoke.
21:19We smoke a lot of foods at home.
21:20I live in the South.
21:21Smoking is, like, just that's part of life.
21:24I mold my caramels into mini domes.
21:26These are going to go into the blast.
21:28And they will pop out.
21:29And they'll be chewy caramel.
21:30Also inside of the pumpkin entremé, we are going to do caramelized bacon brushed with
21:35brown sugar and maple syrup.

21:38Once the tasting elements are inside of our entremé, I can dust them with some edible paint.

23:55She's a beautiful creature, but very anatomically complicated.
24:01If I get an airbrush on it, it's going to homogenize,
24:04and it's just going to fit better than it does at the moment.

24:09Seeing you do this reminds me of walking into the creature shop
24:12on the films and seeing them create the real hippogriff,
24:15in which they did lay in individual feathers, thousands of them.

28:35The tasting element is an entremet built around fire.
28:38And we decided to hide the entremet in the vertebrae of the Thestral.
28:43Which saddens me because it means you're cutting into this, aren't you?

28:47Well, we did it in a good way.
28:48There's a layer of a chili chocolate cake,
28:49and then we have the freshness of a blackcurrant mousse
28:51with some fresh jalapenos, a little bit of scotch bonnet in there.
28:54And then in the middle, there's a tamarind marshmallow,
28:56and then at the base, there's a pink peppercorn chocolate sublee.
28:59I'm a little concerned about the combination of flavors
29:02because, as you may remember from series one,
29:05I'm not particularly exotic in my taste.
29:08Adventurous.
29:09I think you might be pleasantly surprised with this.

31:02But I do think the joints could have been a little cleaner.
31:05We see some where that you have the chocolate.
31:07There are some that are a little bubbled and a little heavy in the sugar.
31:10You say all this, but I'm distracted by the fun and the joy of the whole piece, which is lovely.

31:18We've got beautiful characters.
31:20It is like a movie set, really, or a stage set.
31:22In terms of storytelling, I think you all have done one of the best jobs.

31:32In terms of the execution, the amount of work that you guys have done in building this scene,
31:37the details that you've put into it, all the different textures, it's super impressive.

33:44Ah, the hippogriff. Half horse, half eagle. Not just anyone though, this is Buckbeak. We love
33:53everything about Buckbeak. We feel like he is so powerful, he's so loyal and you have to earn his
33:58loyalty. So should we bow first? Yeah. Hey. If he bows back it means you can touch him. I may fly off on him.
34:14Wow. I think that bow really ties into the story. Great shape on the wings. That really does
34:22bring the piece to life. Yeah, I remember seeing the real hippogriff while working on the films and
34:26you've got the colouring just right, the grey and the feathers. What lets you down I think is the way
34:31these feathers on his neck have curled. The creature for the films was made in that way. The feathers were
34:37laid on and went against each other. I feel like he just looks a little bit scruffy and that takes away
34:42from the elegance of the creature. Okay. We have a pumpkin entremet inside of our scene so we can pull it
34:49right off of the scene. It is pumpkin and scotch for the mousse on the exterior and then it has a layer of
34:55caramelized bacon on the inside. This is very pleasing on the eye, isn't it? It looks so cute.
35:00Yeah, it looks great, doesn't it? It's so well decorated. Are you worried about the bacon?
35:04Well, I think that salty and sweet can go together, so you never know. You might be surprised.

36:26And it's interesting. It's very rare we see a cake that looks like a cake on this show.
36:30He looks wearied from the little hairs on his head to the texture of the skin.
36:40I mean, the feet. Do you know,
36:42this poor chocolatier was even hand painting Dobby's toenails.

38:03The aroma of the coffee and the molly, it smells delicious.

38:20or something that punches through a little.
38:23But overall, incredible job.
