00:50Here's the thing.
00:51We're at the mid-season mark, and the judges really
00:54want to see what you can do.
00:56So for this challenge, you're going to be making holiday
00:59pies.

01:02And you can make any kind of pie you want.

01:09I think this challenge can divide who is a really good
01:13baker and who is not.
01:16You have to have a perfect flaky crust.
01:19Your feeling cannot be runny.
01:21So it is a really tough challenge.
01:26And while you're at it, each of you needs to make two identical
01:30pies for serving.
01:32We'll tell you why later.

01:34There's been so many twists and turns and shenanigans
01:37this season.
01:38And now we have to make two pies.
01:40Who knows what surprise Jesse has for us.

01:53So there are no limits, and there are no advantages.

02:26I'm going to do lemon meringue.

02:30so I feel confident in that.

03:33I won the first challenge with a bomb chest pie.
03:38That chest pie was ridiculous.
03:40That feeling was absolutely delicious.
03:43I make a stellar pie, so we're going to kick Team Naughty's butt today.
03:47I'm going to make a chocolate pecan bourbon pie, and we're adding tons of bourbon, obviously.
03:53For this challenge, I'm feeling inspired by Thanksgivings at my grandma's house as a kid.
04:00We would often build leaf piles in the yard, so I'm going to decorate with leaf piles made out of pie dough.
04:06Because what's nicer than, like, a bunch of children playing in leaves?
04:10Making an all-butter crust.
04:12I learned a long time ago that you don't want to leave your butter too big.
04:16The more you can work it into the dough, the more tender it's going to be.
04:19And I make it a metal tin because it conducts heat faster than glass or ceramic.
04:23It helps you to more quickly evaporate the water in your butter to create the separation of layers in your dough.
04:28So that you don't have soggy bottom, that you have a good crust.
04:31And then for my filling, I pre-toasted my pecans just to express the oils, get them aromatic.
04:38The judges told me last time that my flavors weren't balanced, and I really want to make sure that I do that today.
04:42I tasted elimination last time, and I don't ever want to taste it again.
04:46I came here to win.
04:47I feel like it would validate a part of myself that's always wondered, like, should you have gone to culinary school or should you have done something different?
04:56I'm going to fight with everything I got.
04:58Anybody need some pie weights?

05:01You know, it's been such a wild ride.
05:04Coming into this competition in the beginning, I don't know that I did believe in myself enough, but today I'm a top contender.
05:10Ashley, how does it feel?
05:13You could win this whole thing.
05:14You could take home $25,000.
05:15I could.
05:16And part of the dream of doing that is being able to take my dad on a trip to Scotland.
05:22He had a liver transplant about nine years ago, so hasn't been able to travel as much, and then this would be a dream for us.
05:29I love that.
05:30What kind of pie are you making?
05:31So I am making a pumpkin black pepper.
05:33Whoa.
05:34So that's kind of the secret ingredient.
05:36The black pepper really adds a little zing to it.
05:38And then I'm going to top it with a maple whipped cream as well as stained glass confetti sugar cookies to represent Christmas ornaments.
05:46The reason I'm making it today actually is because of my dad, because he hates pumpkin pie, like absolutely despises it.
05:52It became my favorite pie as an adult, and now out of spite, I bring it to Thanksgiving.
05:57So we're going a little bit naughty on the sense that my dad hates pumpkin pie.
06:01It's so ironic.
06:02You're making something your dad hates.
06:03Hopefully to send him to Scotland.

06:07I hope that that makes him proud.
06:09I hope this pie is good enough to win immunity.
06:12Pie is something that I feel pretty confident about.
06:14So today I'm making a lemon meringue pie.
06:17On the top will be a toasted Swiss meringue with some silver bells out of chocolate, candied lemon, and holly leaves.
06:25And I think it just really reads nice Christmas.

06:32You know, just checking out on someone who's been dominating in this competition.

06:36Yeah, but Ashley, like you, she's bringing it every week.

06:40But I know my way around pie dough.
06:42I use shortening.
06:43Shortening kind of gives you a little bit of that structure.
06:45It gives you some flakiness.
06:47And then I did add some lemon zest and some thyme to the crust just to give it a little bit of an herbaceous pop.

06:53So Team Nice is going to continue to keep rocking it.
06:55We can whittle the Naughty team down a little bit.

07:18The biggest competition is Chase.
07:20What he knows how to do, he's very good at doing.
07:22He knows how to make a mean pie.
07:24But, I mean, if you had to guess, who's the next baker to go home on that side?
07:28I would say either Aaron or Kamri, just because I think the other three have been really consistent.
07:34Yeah.
07:35But, you know, who am I to talk, right?
07:38Overall, my bakes have been average at best.
07:42And I feel like I'm kind of the weakest link on my team.
07:45Which is why this week I want to make something mind-blowing.
07:49Something that's not only going to taste great, but something that's just going to be memorable.
07:53And so I'm making a blueberry cream pie.
07:57To add a little bit of like a deeper flavor to my blueberry filling, I want to play into the warm spices like cinnamon and ginger and stuff that you would traditionally see around the holidays.
08:05And then also I'm adding bourbon.
08:07I feel like the flavor of the alcohol plays well with fruit and it's going to taste bomb.
08:12And then I'm going to decorate it inspired by one of my old family traditions, which was where my siblings and I would not only leave milk and cookies, but we would leave shots and a pack of cigarettes for Santa.
08:25It was definitely naughty.
08:27I will say that.
08:28So my pie is going to have a cream filling.
08:31There's going to be a spiced blueberry filling.
08:33And then I'm going to top it with pretzel cigarettes because I really want my pie to look like an ashtray.
08:39It's definitely a risk.
08:41You know, I can't help but to be like really nervous.
08:43But yeah, I think if this one can come out the way I want it to, it'd be a winner.

09:38I'm feeling inspired by my grandma Maxine and her love of Elvis Presley.
09:44And every year, we would sit in her living room while she played his records.
09:49And this year, I'm feeling a little blue Christmas.
09:52So I'm making a blueberry ganache pie.

09:56I'm getting teary-eyed thinking about my pie.
09:59Coincidentally, I woke up this morning and I was really, really missing my grandma.
10:04I started thinking about all of the things that made me feel close to Christmas and close to her.
10:12And I think, how do I turn that into a pie?
10:15So it will be a blueberry pie filling, a blueberry white chocolate ganache top,
10:21and decorated with a goat cheese whipped cream Christmas tree and pie crust snowflakes and stars.
10:28I spent most of my childhood sitting on my grandmother's lap in the Lake of the Ozark
10:33staring up into constellations.
10:36I learned constellations from her.
10:38So I'm really excited to make this in her memory.
10:44Oh.
10:47Wow. Well, this hasn't been shut the whole time.
10:49So that's great.

10:54I'm feeling nervous.
10:56My bottom oven just was left open.

11:09I'm scared because it takes a while to bake such a thick pie.
11:12To make sure it's baked in the center, and I have to make sure that it cools in time to put on my decor.

12:08The inspiration for this dessert today is a combination of one of my favorite pie flavors.
12:13I'm making a pumpkin and cherry pie.
12:16Pumpkin pie was the first pie I was excited to eat when I got here in America, and I love cherries.
12:23So, I'm going to bake my pumpkin filling, and later, I will add my top for the cherries.
12:30And I will cover the pie with puff pastry lettuce, and I will decorate with cinnamon buttercream, cherries, candy cans, and hollies.
12:39For my cherry compote, I'm adding orange juice to make my cherry really pop.
12:45I will take Team Naughty down by the flavors.

12:50Yes.
12:51Be ready.
12:52I'm coming for you.
12:53Oh, my God.
12:54So, I get my pies out of the oven with a pistachio frangipane baked on the inside.
13:00I'm feeling good.
13:01So, today, we have to make two identical pies.
13:04So, my inspiration is, honestly, just like my love for the flavors.
13:07Apple pie is, like, classic.
13:09But I want to do, like, a little twist on it.
13:11So, I'm making a bourbon ginger miso apple pie.
13:16And I'm going to fill each of the layers.
13:18So, I want a little layer of frangipane, a little layer of miso caramel, a layer of cooked apples.
13:25And then, to decorate, I want to do a cute, beanie-inspired hat.
13:30It's going to stay nice because it's going to be the cutest little hat you ever did see.
13:35Fit for the holidays.
13:37So, the main thing with this challenge, I feel like there's something coming.
13:41Because, like, having to make two pies, why?
13:44I don't know.
13:45So, I just got to wait and see.

14:42I have decided on an apple pie because it's kind of an American classic.
14:46It's a risk to go simple, but I'm going to make it stand out by I shred apple and dice it.
14:52I cook down the shredded apple so it really concentrates that flavor.
14:55So there's no mistaking it's an apple pie.
14:58And I try not to use too many spices because otherwise it just covers up all the natural kind of brightness that apples have.
15:03And then I am decorating it with braided pie crust and a little whipped cream fresh.
15:09And I'm also going to make a little semi-rotten apple in the center with a little Christmas worm.
15:13And just to really tie in the knotty theme.
15:16It's a lot to make the filling and break down all these apples, but I think it can be very delicious and impress the judges.

15:23This looks so dark.
15:24I'm freaking out a little bit because my pies are looking just a little on the scorched side.
15:30I'm worried about what the judges are going to think about this, but it's too late for me to really do anything about that now.
15:35So I'm just going to keep moving forward with my plan and hope for the best.

15:52So a sweet potato and pecan pie sitting on a pretzel and ginger snap crust with a toasted brown sugar meringue.
15:59And I'm going to have the nice team made out of showbread cookies setting aflame a marzipan Santa's real naughty list.

16:09I've sort of made a name for myself as being the one to kind of go a little past the line on the naughty side.
16:14And I want to just keep that up.

16:18You have such an incredible energy and passion for this.

16:21How did you find baking?
16:22Like a lot of kids is kind of doing it for fun at home.
16:25And then as time went on, I started to continue to find my love and my passion for it.
16:30But it like, I had a while where I wasn't sure if it was going to be something that lasted.

16:36Because I just had a lot of struggles with like food and eating.
16:39I'm diagnosed anorexia.
16:40Okay.
16:41So I actually had to drop out of culinary school.
16:43Oh, man.
16:44Yeah.
16:45To go to a recovery.
16:46But since then, I've gone through treatment.
16:48I'm in the greatest place I've ever been in my life right now.
16:51And the last four months, I've gained about 50 pounds.
16:54And a big motivator in doing that was being able to come out here and live out a dream of being here.
16:59And it's like, even like if I'm not successful in every bank, just being physically healthy enough to be here is like a win in and of itself.

18:17The reason I chose this decoration for today is because my niece makes me stained glass ornaments every single year for Christmas.
18:25And it's one of my favorite things to receive from her.
18:28And she's eight.
18:29Shout out to Clara.
18:30So I'm going to take a little spin on those ornaments and stack the cookies with a little bit of royal icing to glue them together with some sprinkles in the center to make them look like a little bit of a snow globe with sprinkles inside.
18:41I just want a little bit more sprinkles.
18:44Now I'm carving my cherries and dipping in red chocolate because I want this to be my decoration on top of my pie.

21:15I'm a little stunned.
21:16It is a bit shocking to then have to now judge your own teammates,
21:21especially because we all are competitive and we all want to win.
21:25Yeah, we'll see how this turns out.
21:27All right, Team Naughty, you're already down two bakers.
21:30You don't want to be down a third.
21:31So it's very important you guys are honest with one another in terms of whose two pies are the best.
21:38Okay, so Charles, tell us what you made.
21:40So I just made a classic apple pie.
21:42And then on the top, it's a little Christmas worm coming out of a rotten apple.
21:46I think that blade is a really, really strong technical scale.
21:49The crust is so beautiful.
21:51Yeah, I think this is a phenomenal apple pie.
21:53The textures are insane.
21:54The cream is really good.
21:55Honestly, I can't find a single negative.
21:58Well, that's only one dessert.
21:59Yeah, so true.

23:17So I made a black pepper pumpkin pie and I did the pumpkin pie because my dad hates pumpkin pie.

27:41This is the whole Thanksgiving experience at my grandma's house.
27:45The pecan pie is not only the one that's always fought over, but while we were kids, I think to distract us and keep us out of the kitchen, it was like, go collect sticks, go make leaf piles in the yard.
27:59So I wanted to replicate the leaf piles.

28:04Like, if I would see that in a bakery case, I would say, give me three of those.
