00:57great Canadian baking show the season 9 winner is
01:22three unique bakers with the same goal this is it to take the top spot no time to dilly dally
01:34Joe arrived wish me luck poised and polished lots of decorating which I love and full of surprises
01:42though her bakes looked effortless this is a 10 in my mind they took patience and practice
01:51that's the kind of desert you will expect in a high-end restaurant two-time star Baker always a
01:59friend are you okay is it really hurting you Joe will bring her intuition and skill all the tricks
02:05and hacks I have the old-school hacks to take home the cake plate it's such a pinch me moment like I'm
02:11actually in the finale of the great Canadian baking show go big or go home quite literally I'm
02:16gonna try my best to win it's a friendly competition but it's still a competition
02:21I'm here to prove something so let's bake tough on the job driving a crane is way easier than this but
02:30delicate in the kitchen it's a pastry garden Ryan's bakes were laced with ambition get ready for a
02:36spectacle and elegance you're a steam bun master though star Baker was elusive working up a little
02:43heat over here he's on a hot streak just getting ready for the photo finish with back-to-back technical
02:49wins sure taking everything he's learned here my wife saying less is more so a little bit more he's
02:57ready for the ultimate test I didn't think I would get here to be honest with you what I've done in this
03:02journey the relationships I've made the bakes I've done that I didn't think I could ever do I've
03:07definitely changed we're at the point of no return now so I gotta roll with it my boys talent and banks
03:12I just want them to know if you got a dream work hard and you'll accomplish it drop in enjoy the show
03:20Zoe brought sparkle I call them disco cherries and heart my dad's pretty much the most important person
03:27my life after playing it safe we want more than just a kiss of the room she learned to trust herself
03:33I'm gonna put gochujang in my caramel sauce that's so unique and I'm glad you dare to do it and after
03:41finally winning her first star Zoe yeah she's ready to prove she has what it takes to win it all I have
03:50realized that I'm a lot more resilient than I ever imagined I'm going for the win today may the best

04:04Zoe Ryan and Joe welcome to the finale it feels like just eight weeks ago you walked into this tent for
04:15the very first time it was eight weeks ago yeah time is so weird bakers you have come a long way and
04:23now only three bakes remain until the winner takes home the cake plate so let's get to it for your final
04:30signature challenge we're going Dutch with boss a bowling fly this dessert combines two popular Dutch
04:36pastries the vlai a flat tart with a yeasted crust and bossa bowling profiteroles filled with whipped
04:42cream and covered in dark chocolate feel free to use any combination of toppings fillings and
04:47decorations to make this a winning bake because you have two hours and 15 minutes on your marks get set
04:54bake oh my goodness welcome to the finale oh my god I just like can't mess this one up in the dream
05:06scenario I win this is such an exciting finale every success and every failure this week matters towards who wins the coveted cake plate oh yeah
05:21I'm gonna pull this off with a lot of blood sweat and tears our signature today is a bosch
05:26bowl and dry this is a very technical bake a yeasted tart dough and then just add shoe pastry on top because why not even for the most
05:36seasoned professional like me I know it will be a challenge the more things you have to do the
05:42more things can go wrong oh my god okay what am I doing now the bakers start with their vlai a dough that
05:50needs much more work than the average tart instead of the usual short crust tart it is made with a
05:56yeasted dough so like bread essentially you wouldn't think a tart dough would have to rise normally you just set it and forget it
06:04this is a lot everything needs to be taking the rings off the dough itself will have just a hint of
06:12ginger brushed with some ginger simple syrup at the end ultra gingery Zoe's ginger vlai will house spiced
06:19carrot custard and ginger cream profiteroles as a nod to carrot cake her dad's favorite treat
06:25your dad comes up in a lot of bakes yeah my dad raised me and my sister um pretty much on his own
06:31so yeah everything I do I kind of do it for him oh while the dough proofs looking good vanilla where have you
06:40bakers get to their tart fillings chop chop gonna take a couple things I like on a charcuterie board
06:46it's not gonna be what anyone's used to but it's gonna be good I got two different types of pears to
06:51see which one tastes most pear like I still have all my fingers so that's great isn't it delicious
06:58carrot juice not relying on whispers of flavors anymore I swear I'll get it there we go
07:05shaping my dough for the tart I need the perfect thinness so that it's not too much bread but
07:15enough that it fluffs up oh boy Ryan is opting to blind bake his crust going in
07:24while the others take a big risk I'm gonna bake it with my fillings I'm gonna be I know I won't
07:31know if it's cooked enough till we cut into it so okay fingers crossed for me and oh god it should
07:38be watery when you go in and it should be like jello when it comes out wow they've grown so much I don't
07:47even recognize them anymore oh well that's Ryan that's Joe that's Zoe it's a figure of speech one
07:52hour left I know what a finger of speech is close oh my gosh there's a lot that goes into a good shoe
07:59they don't puff up you just got dough balls and you can't fill dough balls you want it nice and soft
08:05you want it nice and shiny stressful normally I spend a day making shoot feel like I've won it life
08:12everything under pressure is never quite the same Joe strives to win it life with her chocolate
08:18pear pistachio fly crowned with orange cream profiteroles I'm trying to make a crown so I'm using two
08:26different shapes of shoe oh I go too small we're gonna go with it these are my Parmesan cracklins it's
08:34gonna give it a nice textural look we have two ovens otherwise everything won't be baked I need eyes
08:42in the back of my head but I'm quite good at that with all the children be big and beautiful don't do
08:48anything stupid in there bakers 30 minutes left oh my god how do we feel about time do we have enough
08:55for get everything done I think so what else have I got to do oh make the filling for my shoe almost
08:59forgot about that thank you for asking me ginger pastry cream I hope the judges don't have an aversion
09:05to ginger working on my chicken liver mousse I have to nail this one because it's a very obscure
09:11filling we're giving her today Ryan will give her with a charcuterie inspired fly filled with onion
09:19jam and cheese and topped with chicken liver mousse puffs it's a risk but you know finale you know I want
09:25you guys walking away here either saying what the heck or what the heck I gotta check on those babies
09:35tart we come out of the oven now oh hot so jiggly it doesn't look set but it will solidify as it cools
09:49it's bread right so it does puff up I just want to get it back down so I have uh lots of room for my
09:56fillings all right let's see running around like a madman
10:00I would like to leave it a few more minutes but I need it cold so I can get cream in it

11:20the judges want a bossa bull and vly with evenly baked crust delicious set fillings and crisp choux
11:31your signature has a lot of presence it's very elegant thank you
11:37the aroma from the chocolate is just intoxicating
11:42you use just the right amount of orange in that chocolate and then the pear is still firm enough
11:53and for a crust you have the outer layer a bit crunchy but inside it's still soft so it's even baked perfectly

12:32and then that creamy cheese filling delicious
12:35but the actual dough of your vly could handle a little bit more baking time

12:41your chicken liver pate just melts in your mouth as it should
12:48so i can see you didn't hold back on the butter in your
12:51i know you bruno so
12:52you made it like a true frenchman

14:31bakers today for your technical challenge you will make a crema de fruta
14:36this filipino treat is typically put together using store-bought ingredients
14:40sponge graham crackers sweet custard and a fruit cocktail encased in gelatin
14:47but today the stores are closed and you'll have to make everything by hand
14:51bakers you have two hours and fifteen minutes
14:54laban lang kaibigan you can do it bakers on your marks
14:57get set bake
14:59oh my god
15:02come on
15:03there are so many elements i'm worried about all of them
15:06a lot of things that need
15:07time
15:08you've got cake you've got custard you've got gelatin
15:11you've got fruit you've got cramp crackers
15:13you've got whipped cream oh my gosh
15:16final technical
15:17oh thank goodness i don't think my heart can take more of this
15:22kyle this cake screams happiness it's kind of that homey favorite made from store-bought
15:29goods usually served in a casserole dish but we've changed it up a lot i'm sure you
15:34dressed up the technical approach of it yeah the bakers will be making their own graham
15:39crackers but on top this is what it's all about they'll carve this beautiful fruit and
15:44set it with a panda and jelly so that's already a lot just wait till you see what's inside we have
15:50two layers of calamansi chiffon cake now making a chiffon cake that's hard well on top of that
15:57we've got a custard in the center it must set up inside that cake and it's a thick layer the
16:02custard is so creamy and the chiffon cake is so light you turn something simple into something that's
16:09going to give our bakers a lot of trouble i have faith in them i'm starting with the chiffon
16:16because i feel like separating eggs is easy everything else that's the hard part beating
16:21up these egg whites into a meringue getting the batter going i don't know what this fruit is never
16:26seen it before i'm just starting to incorporate the meringue into the heavy batter but you don't want
16:31to over mix it because the judges said to make sure it doesn't deflate
16:35gentle they didn't tell you how long to cook it for appreciate that six egg yolks working on the
16:43custard now vanilla okay let me guess no vegetables perfect there's a window with custard you want to
16:51avoid to make sure it doesn't turn into scrambled eggs you gotta be quick you gotta know what you're
16:54doing perfect custard is smooth and silky the right amount of sweetness so it's kind of a baker's intuition
17:02kind of thing hurry up cool down what's next i'm making the pandan gelatin next pandan never worked
17:15with it before i know it's green feel like you need to try it it tastes like a crust between a leaf and
17:22grass while the pandan steeps to release its sweet nutty flavor i don't know how strong to make this
17:28the bakers cut to their next juicy task prepare your fruits oh my gosh every single fruit i can
17:35think of is in this technical do you know what this fruit is because i don't that's papaya okay i know
17:39what that one is i've never seen it i've never seen it not cut off what do we do with the strawberries
17:47you ever make a cake with this much fruit nope heck no i didn't even know half this fruit existed star fruit
17:54it's a star so i get it now what's a kiwi crown i think this is like this it's very complex and
18:05everything must look perfect there's a lot of fruit for a tiny little jar can we please be done with this fruit
18:11praying that everything cooked right
18:22if i cannot produce the worst cakes that would be great bakers you have one hour left
18:29oh baby we don't have a lot of time does that smell like pandan to you yes a little bit yeah let's
18:35give her i guess we're hoping that our gelatin skills are on par it says only fill it up halfway
18:44but every time i board it just comes right out the ring i don't know this feels wrong concerned
18:48about how this is gonna set in time okay to the fridge now i'm gonna build this bad boy all of this
18:59acetate and stuff is throwing me off custard such a pretty color i mean i hate to be a whinger but
19:10it's a really hot day today and we've got to set various elements if this doesn't set it's gonna be
19:15a pool chill in the refrigerator till it's stable playing the waiting game now while the bakers wait
19:23for things to set i'm feeling lost okay there's plenty more to whip up i'm gonna add half a pack
19:29of vanilla pudding mix this is the whipped vanilla pudding icing i don't know if i would
19:34call that an icing maybe a frosting semantics i feel like i need to step on it i have not made graham
19:42crackers before i can't imagine i will in the future i'd rather buy graham crackers to be honest with you
19:48okay what do i want honey unknown amount of honey i think i'm moving way too slow quarter cup of
19:54butter is that going in here quarter inch okay final words be good be nice
20:05nothing like covering a custard filled cake with whipped cream on a hot day is there ryan this is
20:10gonna be slop you check yours you check yours after you i'm not going first
20:16baker's 10 minutes left hurry up out with your crema de fruta screw it i'm going for it i am just
20:23hoping that i can put something on the plate i can't tell if that's a custard leaking out
20:32that's fine so have you any clue as to what this is going to look like no sounds like a crazy looking
20:40cake don't start shifting on me now i'm just trying to follow the instructions it's really confusing
20:50so i'm gonna do my own thing i don't have time to think so i'm just winging it i don't have to get
20:55the thing on the cake fudge i don't know what we're gonna do yeah not a chance
21:01oh my god this is just a disaster story of my life minute left and there's another step here
21:10oh god god this is a mess this is not a good representation of my decorating skills
21:1710 9 8 7 6 5 4 3 2 1 you're done bakers hands off your cremas de frutas great job
21:35everyone oh my goodness me did i miss anything probably please bring your crema de frutas up to
21:42the gingham altar and place them behind your photos the judges are looking for fluffy chiffon cake
21:49pandan flavored jelly and a set vanilla custard so baker number one although we see all the
21:57components here it looks very rushed lovely sponginess too at the chiffon and the calamansi is coming
22:08through in a really nice way there and that pandan jelly good flavor the vanilla custard is smooth
22:17however it's quite flat in sweetness i think there is no sugar in it
22:23all right moving to baker number two the fruit has a beautiful artistry to it
22:28mm-hmm look at that that bounce back the way it should be bouncing yeah very spongy and very well
22:38made vanilla custard is smooth great flavor just a bit too soft i think and good flavor on the jelly
22:45so it was infused properly yeah moving to our third and final baker the fruit itself looks like it was
22:53well cut and nice piping with the cream nice shine to the vanilla custard seems to be holding up well
23:01inside the chiffon cake lacks aeration it's a bit gummy in texture also the jelly the pan and wasn't
23:10infused long enough so it's lacking that typical flavor the judges will now rank the crema de frutas from
23:18bottom to top in third place who says this joe it looks great but the chiffon was gummy in second place
23:36zoe the cake was excellent but i have no idea how you make the custard so smooth with no sugar magic
23:44and in first place ryan that technical was pretty brutal i'm glad i got that win super pumped about
23:54it one more bake leave it all out on the table how are you gonna make a cake and forget the sugar
24:00i feel extremely surprised with where i placed it wasn't the worst so that's fine someone has to come
24:05last you can't cry over gummy cake i need to have a fantastic showstopper to have a chance of winning this
24:11thing so today is the day we hand out the cake plate has anyone emerged as the leader nobody really
24:24has an advantage today joe is the only one who had a perfectly baked signature but then she was last in
24:31the technical ryan took a risk by making a savory dish had some issues with the baking time but then
24:37turn around and was the top of the technical and the way you know she's in the middle her signature
24:42was solid and she finished middle in the technical so then there's really no difference between them
24:47after day one any of these bakers could win the whole thing
24:53bakers it's your final challenge of season nine your showstopper we'll be wrapping up the season with
25:00a stunning display a madeleine tree a madeleine tree is a baking trend where you take individual
25:06madeleines and assemble them into a beautiful tree your presentation must be grand impressive and of
25:13course worthy of the cake plate you have four and a half intense hours bakers good luck on your marks
25:20get set and for the last time this season bake
25:27showstopper finale you really got to bring it a lot of work today i'm being very ambitious this is a
25:32really complicated bake but it has to be because it's the finale everything has led to this just
25:38gotta work hard and hunker down it's a final showstopper that means he got to be stunning polished
25:47tasty the stack are very high today i need to have everything go right today i made it to the end might
25:52as well win now a madeleine tree is the perfect showstopper for the finale it requires absolute precision
26:00work but it actually allows a lot of space for the bakers to take risks and make it something
26:06we'll remember forever there's a lot to do these towers are not small the tod pot is timing pressure
26:14is very much on the journey to a stunning display doing something fancy we're going to high tea in my
26:20garden today begins with the tricky and technical madeleine my panda and madeleine they're a lot of work
26:26but i did not forget the sugar this time we'll never do that again madeline stressed me out because
26:32how finicky they are the judges are going to be looking for that standard madeline hump that you
26:37get when you bake i've got two different batters on the go sherbet lemon and a strawberry bonbon when
26:43i was a little girl we used to go and get sweets with my dad me and my sisters it was the best day of
26:48the week so sweetie day is the theme for my madeline tower joe's candy themed lemon and strawberry
26:55madelines will be paired with licorice cake rolls evoking sweet family memories do you feel more calm
27:02or more pressure knowing that you're going to see your family today oh more pressure because they
27:06haven't seen anything i've done so far they must be so proud of you for coming this far they are and i
27:11just can't wait to see them tea time joe is unique she's special and someone who finds the beauty in
27:20anything she's an incredible mother an incredible wife and when you start knowing joe the extraordinary
27:26thing she does becomes almost like of course it's joe of course you can do all that
27:31i definitely have the best mom it's really inspiring to see someone that we look up to so much
27:42take new opportunities to grow and i feel like that's what she shows us i can't really give my
27:48mom a huge hug there's just so much to do today trying to not rush and then mess things up trickiest
27:56thing about this part i think is making sure your batter is piped right you've got to make sure
28:02you're piping enough but not too much i'm stuffing them all with filling so i need to make sure that
28:06they have enough body and we're off the timing between under baked and burnt is like a minute
28:14so it's awesome oh boy so you're gonna go in that oven over there
28:20oh my god i should have played sports as a kid zoe hopes to catch the judge's attention with pandan
28:30madelines stuffed with coconut ganache caramel filled lemon madelines and zesty orange fortune
28:36cookies i feel really really happy and thankful to be here and this bake is so important because it's
28:42the last chance i have to show people a bit of who i am there you go baking has always been zoe's
28:49thing for sure what do you rate it daddy i rate a 10. from day one she's just right into the pot and
28:57stirring the pot she's always had a fire inside of her we just knew she was always destined for
29:03greatness so it didn't come as a surprise when i found out she was in the finale i told her from the
29:09beginning that oh she's gonna go right to number one and i still say the same thing i'm very proud
29:15she's a daughter which every dad would love to have on to my fortune cookies all roads led to this
29:22madeleine tree please act impressed the madeleines must be paired with at least one additional bake
29:28my dad and my granddad both love licorice so i'm doing a swiss roll lollipop that's flavored with black
29:34currant and licorice tarts are a pain i do it to myself so i can't complain i will complain but i
29:39shouldn't complain we have humps i feel like i'm announcing the birth or something like it's the
29:46boy we have humps we got like baby humps i feel like a maniac running back and forth i know two stations
29:55two ovens we got a lot on the go here oh my god hot fact number three behind you
30:05oh you stress me out bakers you're halfway through the bake
30:09this is so thrilling it's like i'm watching my favorite show you are i am hurry up i'm making my
30:17coconut passion fruit ganache and i'm also making my caramel right now so much to do not enough time
30:23the theme for the day multitasking smells like peaches and raspberries there's a lot of elements
30:28in the tarts there's going to be a cream there's going to be jelly you got to bring it all empty
30:32out the skill chest ryan is going all out with his layered fruit tarts and his chocolate raspberry
30:39and orange peach madeleines so who's cheering you on right now i know chris is super proud parents are
30:45proud and uh everyone's everyone's super excited you know so this is the longest you've gone without
30:49seeing your wife yeah the longest i've ever been away from all of them is four days
30:55ryan he's a great father he's so involved he basically puts everybody else's needs before his
31:02own banksy how about you you want a toast the sacrifices that he makes are on a daily basis on
31:08a daily basis for a man who works 12 hours a day and then you find time to play with your children
31:13after and time to cook i don't know when he sleeps unbelievable he gets into something he's going to
31:18do it until he's the best at it he does that with baking and here he is he's going to do great
31:27humps again let's go let's go we're cooking on gas ryan i sound like my mom oh my god it's happening
31:35bakers you have one hour left setting up my madeleines here gonna decorate them these are so
31:43delicate these little teeny weeny things the trick to this is be slow and steady these are very important
31:50it's called the madeleine tree not a tart tree oh gosh i have sweat running down my back join the club
31:56this part is crucial if i don't get this hard caramel crack then they're just lemon madeleines
32:05i'll hope to the lord that they pop out say a little prayer for me will you time is ticking
32:11it's just a painstaking process oh one down
32:1911 to go while things heat up for the bakers old friends reunite
32:25oh so good to see you jen it feels great to see everyone again it feels like i never left
32:32though it also feels like it was a bit of a dream i'm thrilled that the three that are here are here
32:39i wait to see who wins very relieved i'm not baking in that tent right now i don't want to pick a
32:45favorite because there are no favorites joe is unbelievable she's never flustered she produces
32:51these amazing bakes i want to be like her when i grow up ryan he's crypto in 2010 so you just you
32:59can't miss out on him you know like i'll put all my savings in there i love zoe's bakes because
33:03zoe's a smart baker and a creative baker and in my mind that's a that's a winning combination
33:10you know what whoever wins i'm always going to be happy for them 30 minutes left keep trucking that is not
33:18enough time i am piping my lady fingers now i want to make sure that they're all the same height
33:25i'm like behind way behind so i remember when i said i was gonna do tarts and like nobody stopped me
33:31yeah and why didn't you stop me why on earth did i decide that this was what i was gonna do hot hot hot
33:38right after they come into the oven you have to be pretty quick too slow this gum face is so stiff
33:47come on there's a lot going on this gives me anxiety bring your a-game because the smallest

35:12this has truly been a special adventure for us all i could not be happier prouder it's been one of the
35:20most wonderful experiences of my life but it's been tough i think now i'm just relieved
35:29oh we're out of here we're actually out of here this whole experience is uh you know it's an emotional
35:35roller coaster um it's really hard to put to words what i'm feeling right now you know it's uh
35:41uh it's good

36:31it's rich with lots of beautiful flavor coming from that raspberry powder this is a very nice
36:36madeleine and chocolate madeleines are very hard to make so kudos to you thank you okay let's try
36:41the madeleine with orange blossom and the white peach you've definitely got the hump here but
36:47i would love one more minute in the oven i love what happens when you squeeze the pipette that peach
36:57comes through and we get the orange blossom and then the peach raspberry tart
37:03it tastes so fresh so fruity it's lip smacking and finger leaking it's very good thank you
37:24zoe this is such a grand presence you have so many beautiful elements here this is showing so much
37:32color and effervescence and when we think of you that's what we think of thank you this is the
37:37brown butter lemon madeleine you've done a really beautiful job here of adding that tempered chocolate
37:44really good control beautiful lemon test i just found it a bit mealy but the caramel itself was very
37:54good very creamy thanks so now we have fortune cookies with a hint of orange

38:09panda madeleine this one excites me a lot look at the great color you're getting from it

38:53i love the color that you've got you can see that nice hump i could close my eyes and

39:05swiss roll lollipop perfectly baked the licorice and that black currant meld together in a way that
39:17it's supposed to get us try the charbet lemon nice cracking noise oh my mouth is still singing
39:35that sour pop and then the melt in your mouth that is heavenly thank you so much
39:41okay well time's up you've had all season long to decide who's going to win the cake plate
39:50so who was it going to be it's not that easy look what they did this week
40:00brian came to us with that madeleine tree that just had that old world tradition in the theme
40:06i love that he's always willing to push himself even further it looks so good look at joe her
40:14signature was quite good and well baked and her showstopper was stunning and they don't grow up
40:20with those candies yet the moment i saw them i felt a connection and zoe her signature this week was so
40:29delicious and then that pandan madeleine today was really spectacular there could be an argument for
40:36any of the three bakers the question is who really stood above the rest
