02:30but delicate in the kitchen it's a pastry garden ryan's bakes were laced with ambition get ready

02:43little heat over here he's on a hot streak just getting ready for the photo finish with back-to-back
02:48technical wins you sure taking everything he's learned i hear my wife saying less is more
02:54so maybe a little bit more he's ready for the ultimate test i didn't think i would get here to

03:25dad's pretty much the most important person of my life after playing it safe we want more than just
03:30a kiss of the rum she learned to trust herself i'm gonna put gochujang in my caramel sauce that's so
03:37unique and i'm glad you dare to do it and after finally winning her first star zoe yeah she's ready
03:45to prove she has what it takes to win it all i have realized that i'm a lot more resilient than i
03:53ever imagined i'm going for the win today may the best baker win but i'm hoping it's me

04:15for the very first time it was eight weeks ago time is so weird bakers you have come a long way and
04:23now only three bakes remain until the winner takes home the cake plate so let's get to it for your
04:29final signature challenge we're going dutch with bossa bolin vlai this dessert combines two popular
04:35dutch pastries the vlai a flat tart with a yeasted crust and bossa bolin profiteroles filled with whipped
04:41cream and covered in dark chocolate feel free to use any combination of toppings fillings and
04:47decorations to make this a winning bake bakers you have two hours and 15 minutes on your marks get set

05:09this is such an exciting finale every success and every failure this week matters towards who
05:19wins the coveted cake plate oh yeah i'm gonna pull this off with a lot of blood sweat and tears
05:24our signature today is a boss ball and vlai this is a very technical bake
05:29a yeasted tart dough and then just add shoe pastry on top because why not even for the most seasoned
05:36professional like me i know it will be a challenge the more things you have to do the more things can
05:42go wrong oh my god okay what are we doing now the bakers start with their vlai a dough that needs
05:50much more work than the average tart instead of the usual short crust tart it is made with a yeasted dough
05:56so like bread essentially you wouldn't think a tart dough would have to rise normally you just
06:03set it and forget it this is a lot everything needs to be taking the rings off the dough itself
06:11will have just a hint of ginger brushed with some ginger simple syrup at the end ultra gingery
06:15zoe's ginger vlai will house spiced carrot custard and ginger cream profiteroles as a nod to carrot cake
06:23her dad's favorite treat your dad comes up in a lot of bakes yeah my dad raised me and my sister
06:30um pretty much on his own so yeah everything i do i kind of do it for him while the dough proofs
06:37looking good vanilla where are you bakers get to their tart fillings chop chop gonna take a couple
06:44things i like on a charcuterie board it's not gonna be what anyone's used to but it's gonna be good
06:49i got two different types of pears to see which one tastes most pear-like i still have all my fingers
06:54so that's great isn't it delicious carrot juice not relying on whispers of flavors anymore

07:05shaping my dough for the tart i need the perfect thinness so that it's not too much bread but enough
07:15that it fluffs up oh boy ryan is opting to blind bake his crust going in while the others take a big
07:27risk i'm gonna bake it with my fillings i'm gonna be i know i won't know if it's cooked enough until we
07:32cut into it so okay fingers crossed for me um oh god it should be watery when you go in and it should
07:40be like jello when it comes out wow they've grown so much i don't even recognize them anymore oh well

07:54is close oh my gosh there's a lot that goes into a good shoe they don't puff up you just got dough
08:01balls and you can't fill dough balls you want it nice and soft you want it nice and shiny stressful
08:06normally i spend a day making shoe i feel like i've won it life everything under pressure is never
08:13quite the same joe strives to win at life with her chocolate pear pistachio fly crowned with orange
08:21cream profiteroles i'm trying to make a crown so i'm using two different shapes of shoe oh
08:28i go too small we're gonna go with it these are my parmesan cracklins it's gonna give it a nice

11:47you use just the right amount of orange in that chocolate and then the pear is still firm enough
11:53and for a crust you have the outer layer a bit crunchy but inside it's still soft so it's been baked perfectly

14:31bakers today for your technical challenge you will make a crema de fruta this filipino treat
14:37is typically put together using store-bought ingredients sponge graham crackers sweet custard
14:43and a fruit cocktail encased in gelatin but today the stores are closed and you'll have to make
14:49everything by hand bakers you have two hours and 15 minutes labanlan got you begun you can do it
14:56bakers on your marks get set bake oh my god come on there are so many elements i'm worried about all of
15:05them a lot of things that need time you've got cake you've got custard you've got gelatin you've got fruit
15:12you've got graham crackers you've got whipped cream oh my gosh final technical oh thank goodness
15:18i don't think my heart can take more of this
15:23kyla this cake screams happiness it's kind of that homey favorite made from store-bought goods usually
15:30served in a casserole dish but we've changed it up a lot i'm sure you dressed up the technical approach
15:36of it yeah the bakers will be making their own graham crackers but on top this is what it's all
15:41about they'll carve this beautiful fruit and set it with a panda and jelly so that's already a lot
15:48just wait till you see what's inside we have two layers of calamansi chiffon cake now making a chiffon
15:54cake that's hard well on top of that we've got a custard in the center it must set up inside that cake
16:01and it's a thick layer the custard is so creamy and the chiffon cake is so light you turn something
16:07simple into something that's going to give our bakers a lot of trouble i have faith in them
16:14i'm starting with the chiffon because i feel like separating eggs is easy everything else that's the
16:19hard part beating up these egg whites into a meringue getting the batter going i don't know what this fruit
16:25is never seen it before i'm just starting to incorporate the meringue into the heavy batter
16:31but you don't want to over mix it because the judge has said to make sure it doesn't deflate
16:35gentle they didn't tell you how long to cook it for appreciate that six egg yolks working on the
16:43custard now vanilla okay let me guess no measurements perfect there's a window with custard you want to
16:51avoid to make sure it doesn't turn into scrambled eggs you gotta be quick you gotta know what you're doing
16:55perfect custard is smooth and silky the right amount of sweetness so it's kind of a baker's intuition

17:09what's next i'm making the pandan gelatin next pandan never worked with it before i know it's green
17:17feel like you need to try it it tastes like a cross between a leaf and grass while the pandan steeps
17:24to release its sweet nutty flavor i don't know how strong to make this the bakers cut to their next
17:30juicy task prepare your fruits oh my gosh every single fruit i can think of is in this technical do
17:36you know what this fruit is because i don't that's papaya okay i know what that one is i just never
17:40see the fire i've never seen it not cut off what do we do with the strawberries you ever make a cake

18:33you yes a little bit yeah let's give her i guess we're hoping that our gelatin skills are on par
18:42says only fill it up halfway but every time i board it just comes right out the ring
18:46i don't know this feels wrong concerned about how this is gonna set in time okay to the fridge
18:55now i'm gonna build this bad boy all of this acetate and stuff is throwing me off custard
19:03such a pretty color i mean i hate to be a whinger but it's a really hot day today and we've got to
19:12set various elements if this doesn't set it's gonna be a pool chill in the refrigerator till it's stable
19:20playing the waiting game now while the bakers wait for things to set i'm feeling lost okay there's plenty
19:26more to whip up i'm gonna add half a pack of vanilla pudding mix this is the whipped vanilla pudding
19:33icing i don't know if i would call that an icing maybe a frosting semantics i feel like i need to
19:39step on it i have not made graham crackers before i can't imagine i will in the future i'd rather buy

20:02nothing like covering a custard filled cake with whipped cream on a hot day is there ryan this is
20:10gonna be slop you check yours you check yours after you i'm not going first bakers 10 minutes left
20:19hurry up out with your crema de fruta screw it i'm going for it i am just hoping that i can put
20:24something on the plate i can't tell if that's the custard leaking out
20:32that's fine so have you any clue as to what this is going to look like no sounds like a crazy looking
20:40cake don't start shifting on me now i'm just trying to follow the instructions it's really confusing
20:49so i'm gonna do my own thing i don't have time to think so i'm just winging it i don't have to get
20:55the thing on the cake fudge i don't know what we're gonna do yeah not a chance
21:03oh my god this is just a disaster story of my life minute left and there's another step here
21:10oh god god this is a mess this is not a good representation of my decorating skills
21:17oh my goodness me did i miss anything probably please bring your crema de frutas up to the gingham altar
21:43and place them behind your photos the judges are looking for fluffy chiffon cake pandan flavored jelly
21:51and a set vanilla custard so baker number one although we see all the components here it looks very rushed
21:59lovely sponginess too at the chiffon and the calamansi is coming through in a really nice way there

22:12good flavor the vanilla custard is smooth however it's quite flat in sweetness i think there is no
22:20sugar in it all right moving to baker number two the fruit has a beautiful artistry to it
22:28mm-hmm look at that that bounced back the way it should be bouncing yeah very spongy and very well
22:38made vanilla custard is smooth great flavor just a bit too soft i think and good flavor on the jelly so
22:45it was infused properly yeah moving to our third and final baker the fruit itself looks like it was well
22:53cut and nice piping with the cream nice shine to the vanilla custard seems to be holding up well inside
23:03the chiffon cake lacks aeration it's a bit gummy in texture also the jelly lipanan wasn't infused long
23:10enough so it's lacking that typical flavor the judges will now rank the crema de frutas from bottom to top
23:19in third place who says this joe it looked great but the chiffon was gummy in second place
23:36zoe the cake was excellent but i have no idea how you make the custard so smooth with no sugar magic
23:44and in first place ryan that technical was pretty brutal i'm glad i got that win super
23:53pumped about it one more bake leave it all out on the table how are you gonna make a cake and forget
23:57the sugar i feel extremely surprised with where i placed it wasn't the worst so that's fine someone
24:04has to come last you can't cry over gummy cake i need to have a fantastic showstopper to have a chance
24:10of winning this thing so today is the day we hand out the cake plate has anyone emerged as the leader
24:23nobody really has an advantage today joe is the only one who had a perfectly baked signature but then she
24:30was last in the technical ryan took a risk by making a savory dish had some issues with the baking
24:37time but then turn around and was the top of the technical and the way you know she's in the middle
24:41her signature was solid and she finished middle in the technical so then there's really no difference
24:46between them after day one any of these bakers could win the whole thing
24:53bakers it's your final challenge of season nine your showstopper we'll be wrapping up the season with
25:00a stunning display a madeleine tree a madeleine tree is a baking trend where you take individual
25:06madeleines and assemble them into a beautiful tree your presentation must be grand impressive and of

25:23showstopper finale you really got to bring it a lot of work today i'm being very ambitious this is
25:32a really complicated bake but it has to be because it's the finale everything has led to this just
25:38gotta work hard and hunker down it's a final showstopper that means he got to be stunning polished
25:47tasty the stack are very high today i need to have everything go right today i made it to the end might
25:52well win now a madeleine tree is the perfect showstopper for the finale it requires absolute
26:00precision work but it actually allows a lot of space for the bakers to take risks and make it something
26:06we'll remember forever there's a lot to do these towers are not small the tod pot is timing pressure
26:13is very much on the journey to a stunning display doing something fancy we're going to high tea in my
26:20garden today begins with the tricky and technical madeline my pandan madeline they're a lot of work
26:26but i did not forget the sugar this time we'll never do that again madeline stressed me out because
26:31how finicky they are the judges are going to be looking for that standard madeline hump that you get
26:37when you bake i've got two different batters on the go sherbet lemon and a strawberry bonbon when i was a
26:43little girl we used to go and get sweets with my dad me and my sisters it was the best day of the week so
26:49sweetie day is the theme for my madeline tower joe's candy themed lemon and strawberry madelines
26:56will be paired with licorice cake rolls evoking sweet family memories do you feel more calm or more
27:03pressure knowing that you're going to see your family today oh more pressure because they haven't
27:07seen anything i've done so far they must be so proud of you for coming this far they are and i just can't
27:12wait to see them tea time joe is unique she's special and someone who finds the beauty in anything
27:21she's an incredible mother an incredible wife and when you start knowing joe the extraordinary
27:26everything she does becomes almost like oh of course it's joe of course you can do all that

27:56thing about this part i think is making sure your batter is piped right you got to make sure you're
28:02piping enough but not too much i'm stuffing them all with filling so i need to make sure that they have
28:07enough body and we're off the timing between under baked and burnt is like a minute so it's awesome oh

28:27zoe hopes to catch the judge's attention with panda and madelines stuffed with coconut ganache
28:33caramel filled lemon madelines and zesty orange fortune cookies i feel really really happy and
28:39thankful to be here and this bake is so important because it's the last chance i have to show people
28:44a bit of who i am there you go baking has always been zoe's thing for sure what do you rate it daddy
28:51i rate a 10. from day one she's just right into the pot and stirring the pot she's always had a fire
28:59inside of her we just knew she was always destined for greatness so it didn't come as a surprise when
29:05i found out she was in the finale i told her from the beginning that oh she's gonna go right to number
29:11one and i still say the same thing i'm very proud she's a daughter which every dad would love to have
29:19on to my fortune cookies all roads led to this madeleine tree please act impressed the madeleines must
29:25be paired with at least one additional bake my dad and my granddad both love licorice so i'm doing a
29:31swiss roll lollipop that's flavored with black currant and licorice tarts are a pain i do it to myself so
29:37i can't complain i will complain but i shouldn't complain we have humps i feel like i'm announcing the
29:44birth or something like it's the boy we have humps we got like baby humps i feel like a maniac running
29:53back and forth i know two stations two ovens we got a lot on the go here oh my god hot facts number
30:00three behind him oh you stress me out bakers you're halfway through the bake this is so thrilling it's
30:10like i'm watching my favorite show you are i am hurry up i'm making my coconut passion fruit ganache
30:19and i'm also making my caramel right now so much to do not enough time the theme for the day multitasking
30:25smells like peaches and raspberries there's a lot of elements in the tarts there's going to be a cream
30:29there's going to be jelly you got to bring it all empty out the skill chest ryan is going all out
30:36with his layered fruit tarts and his chocolate raspberry and orange peach madelines so who's

31:41decorate them these are so delicate these little teeny weeny things the trick to this is be slow and
31:48steady these are very important it's called the madeleine tree not a tart tree oh gosh i have sweat

31:56this part is crucial if i don't get this hard caramel crack then they're just lemon madeleines
32:05i'll hope to the lord that they pop out say a little prayer for me will you time is ticking
