01:10this time the taste test restaurant is dishing up diet and free from foods that is the best thing
01:19we've eaten all day from hummus to ice cream that's heaven and above pancakes to pizza i felt it was a
01:26little bit like play-doh myself our diners will test the low fat the protein packed the taste isn't bad
01:35it's the texture that is just odd as well as gluten dairy and meat-free foods it's the texture of a
01:42blancmange so you know which deliver for your waistline your wallet and your taste buds
01:49oh that is deeply upsetting that's really not good

02:10from britain's biggest supermarkets to help you decide where to spend your money
02:16the restaurant is about to be stuffed with delicious diners all eager to pass judgment on diet
02:25and free from foods from britain's biggest brands upstairs we're frantically getting our ducks in a row
02:33while downstairs super chef and culinary wizard mike reed is prepping for service
02:40my menu for today is all about diet and free from foods we need to make sure our standards are right
02:47up there and have some fun yes chef with the kitchen busy preparing dishes our first diners have arrived
02:56at the taste test restaurant oh i say my first guests hello tonight's taste testers include you look
03:05lovely thank you so do you a couple who are fanatical about fitness make yourselves comfortable
03:13two visually impaired motivational speakers welcome let me get your chair a food loving daughter and
03:20mother-in-law you look ravishing thank you so much a trio of doctors
03:29it's our physicians going to be packed to the rafters in a minute
03:33some five-a-side footballers i spy the veterans
03:41we thought you might like to menace a bonquette
03:44and a group of passionate home cooks oh don't you look chic all of you
03:51oh this is lovely it was incomplete without people
03:54the guests will enjoy six dishes tasting three options from major supermarkets each time
04:03after every course they'll vote for their favorite
04:08your starter is about to arrive it's one of the nation's favorites it's hummus
04:14this is a battle of premium versus mid and budget reduced fat ranges
04:23our diners will taste test three supermarket reduced fat humus all accompanied by the same plain breadsticks
04:34they're labeled a b and c but neither they nor tom will know which is which
04:40in no particular order the starters are aldi the deli reduced fat hummus
04:49sainsbury's be good to yourself hummus and waitrose essential reduced fat hummus
04:55your starters are arriving but this is hummus with a twist so i'm going to task you with being
05:07the miss marples of mastication and see if you can tell me what that difference is
05:14the diners don't know that the hummuses they're tasting are lower fat versions so will they guess
05:24that one looks slightly more watery and that one looks thicker
05:28diners it's time to tuck in to hummus a
05:37it's like the hummus you know and love it tastes like what you'd expect okay
05:41hello my veteran footballers how old do you have to be to be a veteran uh 35 35 oh there are pros
05:50that are older than that exactly yeah have you sampled yet yeah i've never had it before in my life
05:56you've never had hummus no never again and all
06:00low fat would be my guess for that one oh i say this gentleman has a swollen frontal lobe
06:06yeah he knows what he's talking about maybe hummus b will tickle our diners taste buds
06:16it's just got a little bit more zing zest more lemony my motivational speakers table i heard the word
06:25lemony yes it was zingy and zesty and just what you want so this definitely had a bit more crunch to
06:32here and i prefer that yes i do too i like that coarseness in hummus you want to feel the bits in
06:37it don't you indeed you do finally what do the diners think of hummus c this is perfect it's creamy
06:46it sticks together it's got a little bit of coarseness delicious rahel chloe brought you together
06:54fitness did it we met in the gym yes oh i see you've sampled all three do you have a clear front
07:02runner well i think a and b yes there's something akin to what i imagine bathroom grout to taste like
07:09oh gosh clay don't sugar the pill will you yeah whereas c actually was quite tasty i still think it's
07:18down sort of the diet end of hummus it didn't feel as rich as some of them that i've had ah very
07:24discerning your antennae around so with all three hummuses tasted it's time for the diners to decide
07:32the winner diners it's time to vote for your favorite hummus a b or c while our diners cast their votes
07:45in the kitchen chef mike has got the skinny on reduced fat hummus
07:49they're reducing the fat in the hummus by reducing some of the more calorific ingredients in there
08:01tahini is a sesame paste essentially so it's full fat as is the oil which gives you the thickness the
08:07richness so by reducing those two ingredients you're reducing the calories straight away
08:12and they're replacing it with both water lemon juice and salt great way of still giving you that
08:20that tang that burst of flavor but with much less calories but how do these lower calorie ingredient
08:28swaps affect the look and texture of hummus i've got the waitrose full fat versus reduced fat you can see
08:36with the full fat that is thicker whereas with the reduced fat it is a little bit looser it's a little
08:44bit wetter in texture because of the increase in water and reduction in tahini but it's still a very
08:50good hummus for me this is a really good example of supermarkets getting it right where you can save
08:57on those calories and have a good product in the restaurant the votes have been counted
09:04and it's time to reveal our diners favorite low-fat hummus well diners the results are in and the winner
09:14by a country mile is hummus c
09:19it might surprise you it's from aldi yes and it is their daily reduced fat hummus the other hummuses
09:34was sainsbury's hummus be good to yourself range that was hummus b and hummus a was waitrose
09:43essential reduced fat hummus so in the battle of the starters it's a runaway victory for aldi the
09:51delhi reduced fat hummus at a bargain 99 pence for 200 grams in second place it's sainsbury's be good
10:01to yourself hummus at one pound 45 for 200 grams and waitrose essential reduced fat hummus comes in third
10:10also at one pound 45 and 200 grams a resounding success the diners have decided when it comes to
10:19healthier hummus you don't need to splash the cash on a low-fat dip
10:26coming up the taste testers chow down on gluten-free pizza slightly anemic based getting a diagnosis
10:33disease and chef mike reveals the secrets behind plant-based burgers believe it or not it's actually
10:42used as a constipation treatment but here it's used to give it great structure
10:52the taste testers chow down on gluten-free diet and free from foods they might now be freely available
11:11but are they free from flavor three supermarket brands will be put to the taste test by our guests
11:19diners it's time for your next taste test it's pizza somebody once said of pizza it's the only love
11:27triangle anybody wants and i completely agree with that sentiment but this is pizza with a twist
11:35so i'm going to ask you to be the uh poirot's of pizza and see if you can detect what that difference is
11:43this is the battle of fresh versus frozen gluten-free pizzas
11:54let's go please diners your pizzas are arriving remember the diners have no idea which supermarket brand
12:03is which the pizzas they're testing are morrison's frozen free from gluten margarita pizza
12:13asda frozen free from gluten margarita pizza and the only one which is fresh m s food made without
12:20wheat gluten-free margarita pizza that one looks the best already it's got more cheese on it
12:27diners time to tuck in to pizza a
12:36it's a bit light it's dodgy

12:40delicious doctors hello hello what do you think of pizza a it's got a nice kind of thickness to it and
12:52i like it i like a good amount of cheese as i'm a big cheese fan but slightly anemic base it's getting
12:58a diagnosis diners time to tuck in to pizza b
13:11separated from the others a bit more willingly isn't that sweet it's probably sweet
13:16the home cook's table what do we think of pizza b well it's a lot better than a a is it
13:24mmm the cheese has definitely got more flavor on this one has it yeah but you also want a good
13:29caramelization on the cheese and a bit of stringy cheese and that wasn't stringy oh you're looking

13:47it reminded me of when you have a children's party and you get like the little cheapy pizzas for
13:53the kids to share yes yes the individuals yes it was very much that vibe but i really like the
13:58quest on this one so do we have a stonking leaning yet i am sorry are you deciding susan you are so
14:05decisive i am still very much into your mind i'll i'll wait for the voting julie noted oh gosh
14:11diners it's time to vote for your favorite pizzas a b or c
14:22while the diners vote chef mike reveals the secret behind supermarket gluten-free pizza
14:29gluten is basically a protein which is derived from wheat it's in so much of what we eat but
14:36there's a lot of people who are gluten intolerant or celiac which means you can't eat gluten
14:41mike is going to compare a regular pizza dough with a gluten-free one to reveal the differences
14:48the supermarkets have to overcome when making their free-from pizza bases this dough is made from
14:55flour oil yeast and water it's a super pliable dough the gluten is what makes it so easily workable
15:04gives it that body that stretchability it's hard to replicate that when you're not using gluten
15:11i've made a gluten-free dough and the only difference is i'm using gluten-free flour made from
15:16rice maize and potato flour you can see straight away the gluten one if i pick it up i can stretch it
15:23whereas with the gluten-free dough there's no stretchability in that at all it's a very different
15:29type of dough there's a secret ingredient the supermarkets use to help create a stretchy gluten-free
15:38pizza base this is the key to the supermarket's gluten-free pizza psyllium husk and it's a product
15:45you can get on the high street now in health food shops it comes in powdered form and it's essentially
15:52a plant-based fiber which is very elastic once mixed with water it's what's giving the gluten-free pizza
16:02that stretch to their dough and gives you a really nice chew when it comes to eating the pizzas it's
16:08going to be interesting to see if the diners realize that they're eating this rather than traditional
16:14gluten meanwhile back in the restaurant it's the moment of truth for the supermarket gluten-free pizzas
16:23fresh versus frozen diners
16:27the votes are in and the winner is pizza b
16:40this pizza is mns made without margarita pizza now did anybody detect what the difference was with
16:49these pizzas john luke you did the crust was gluten-free you are spot on the crust was gluten-free
16:58here's the result in our parade of pizzas first is the only fresh pizza on the table
17:05the mns food made without wheat gluten-free margarita at four pounds 75 for 271 grams
17:12in second place morrison's frozen free from gluten margarita pizza at just two pounds 35 for 300 grams
17:25and in last place the asda frozen free from gluten margarita pizza at two pounds 60 for 380 grams
17:34now mns did win but it's more than double the price of a which is asda and c which is morrison so
17:44anyone that voted for b would you go the extra distance and pay the extra money for the mns pizza
17:50no i don't think i would i think i would go for a so not double the price was not necessarily worth it no
17:58would anybody say that it was worth double the price absolutely absolutely rahel
18:08so our pizza playoff has ended with frozen losing out to fresh and it seems the pricier pizza is well
18:16worth the extra dough our diners now face their next taste test challenge darling diners it's burger time
18:25but yes but as you may by now have guessed it's burgers with a difference so i'm going to task you
18:34with being the bergerac of burgers and see if you can tell me what that difference is
18:44this round is a battle between the brand leader and supermarket own brands
18:48and once again our diners will taste a selection of three dishes the burgers are arriving
19:00the diners meat-free choices are mns food plant kitchen steak burgers the only frozen product asda omv
19:10no beef burgers and beyond meat beyond burger original plant-based patties
19:16i'm wondering what this is made from diners it's time to taste burger a
19:29that's actually not too bad spongy it's really nicely seasoned
19:35what do our home cook queens make of this ready-made burger
19:39ladies thoughts on burger a not bad at all oh great well i thought there were positive noises
19:48i love it oh that's our first love of the day yes i do i think a bit of red onion red onion red
19:57onions dress it up there's a lot of love for burger a how about burger b
20:04this tastes more like meat it's a little bit smoky if this got handed to me at a barbecue i'd be happy
20:13sarah i thought i just heard you say about burger b if someone handed it to you at barbecue you'd be
20:19jolly happy i would be i think in comparison to the first burger this has a sweetness the texture
20:25of it is more burger-like it's slightly smoky it's really nice i'd be really happy with this
20:31and finally it's burger c
20:37what is that the consistency's not there it's the texture of a blemange
20:47darren louise i've noticed you got very vocal with with burger c is it good vocal or bad for
20:54shocking oh yeah it was just soft and squidgy and then when i put it in my mouth it it got worse
21:01to be honest oh no so the worst would you say yeah by far by far oh let's see how the votes go
21:11diners it's time to vote for your favorite burgers a b or c
21:17as our diners decide their favorite of the three plant-based burgers
21:24in the kitchen chef mike is frying up a few more to help explain how brands mimic meat patties
21:33the key job for brand and supermarkets is to replicate that taste texture that
21:39look and feel of a burger and that's not easy to do the base for all three patties is pea protein
21:48but supermarkets add other ingredients to help mimic the look feel and taste of meat
21:55all of the patties contain various things like mushrooms and beetroot they're using it for color you
22:03know to replicate that that meat look but also the mns ones use shiitake mushrooms it's a great flavor
22:11and it gives you almost that meaty feel when you eat a mushroom as well
22:16so you can see with the juices coming to the top here those are the ingredients that beyond burger have
22:21added the beetroot juice pomegranate juice and it gives you that bleed that you would expect from a
22:28meat-based patty so one of the key ingredients is methyl cellulose believe it or not it's actually used
22:34as a constipation treatment but here it's used to bind the patties together and give it great structure
22:43i'm really intrigued by these and i can't wait to see what the diners think of them
22:49back in the restaurant the results are in for the plant-based burgers
22:54well diners your votes are in and i can reveal that the burger that won by a considerable margin was

23:12this is the beyond meat beyond burger now there's a little clue there but can any of you tell me
23:20what the difference was with these burgers ernest none of them were meat very good very discerning
23:30palette yes they were all plant-based burgers so in the battle of meat-free burgers all packs of two
23:38the winner is beyond meat beyond burger original plant-based patties at four pounds in second place
23:46is mns food plant kitchen steak burgers also at four pounds and last with zero votes is the cheapest and
23:55only frozen product as does own brand omv no beef burgers at two pounds thirty
24:04but is the more expensive winner worthy of its price tag would you go the extra mile and spend the extra
24:12money for b sarah you're nodding emphatically you would yeah i think by far this was the best one
24:19on the table i think when you compare it texture flavor smell even yeah absolutely lovely heaven that
24:26sounds like a trash of heaven bravo diners a resounding victory for the beyond burger in our meat-free matchup
24:36coming up coming up high stakes decisions about low-calorie ice creams this is going to be a really
24:44difficult choice i just want to double check and our footballers tackle protein pancakes

25:11welcome back we're about to look at another trend that's sweeping the nation high protein foods
25:17our diners will be testing three versions of supermarket foods for each course dearest diners
25:25it's pancake time
25:30yes i love them too i think of them as the culinary stage on which myriad ingredients can sing
25:37but these are pancakes with a difference so i want you to be the colombo of crepes
25:44and see if you can detect what that difference is
25:53this round is a battle between the premium and budget supermarkets our diners don't know that the
26:00pancakes they'll be trying are high protein versions it's crunch time time to get the pancakes up
26:08the supermarket choices are aldi dessert menu protein pancakes
26:16little rowan hill bakery high protein buttermilk pancakes
26:21and mns food high protein maple pancakes the pancakes are arriving
26:28well one on the left and the one on the right are quite a lot and then the ones in the middle are quite small
26:40diners it's time to tuck in to pancake a
26:44hmm it's not very sweet no it's not there's not a lot of flavor to it but it's not bad
26:54lee you've half inhaled pancake a that's the best thing we've eaten all day oh i say well this is applauded
27:03it well he's right you know and i've oh i'm i like to think that i'm an expert on pancakes as well
27:09he has pancakes and maple syrup before every game oh i say mark do you agree you've only attacked the rim
27:17the rim of the bag moving on it's time to taste pancake b the taste isn't bad it's the texture that is
27:30just odd i'm not sold it certainly maintains its agility i think
27:36and finally it's pancake c this is my bodybuilding background clearly but these remind me awfully of
27:49protein pancakes it doesn't quite fully satisfy you but it doesn't have to because you know it's good
27:55for you i was hearing a really extensive review of pancake c it's um my former career as a bodybuilder
28:05i have consumed quite a few of protein rich products i think i may have recognized our little trick here
28:13today very interesting and what about the merits of of c itself as a pancake i felt it was a little bit
28:20like play-doh myself love your feedback it's time to put the supermarket protein pancakes to the vote
28:31and while the diners do their scoring chef mike reveals how the supermarkets pump up the protein
28:39in their pancakes so the supermarkets are adding protein by utilizing both of these products
28:48this is a wheat protein which is gluten essentially you know what you get from flour it's just ground down
28:55into a powder form then we have a whey based protein which is the byproduct of making butter so
29:03it's from animal fats a very good source of protein once again this makes protein pancakes more than
29:10twice as protein packed as standard ones all these pancakes have a different amount of added protein to
29:17them and that does really affect the taste and the texture of the pancake so it's going to be
29:22interesting to see if the diners pick up on that and which one they choose
29:28back in the restaurant the results are in for the supermarket protein pancakes
29:34well diners the votes are in and it's a narrow victory this time for pancake
29:41a which is from little and it narrowly beat pancake c which is from m and s i think it'd be very
29:57tough to learn that the favorite pancake in the room also happened to be the cheapest pancake
30:04one pound 79 from little bravo diners in top place it's the little rowan hill bakery high protein buttermilk
30:16pancakes at one pound 79 for 240 grams in second place the m and s food high protein maple pancakes at two
30:28pounds 30 for 280 grams and in third position aldi dessert menu protein pancakes at one pound 89 for 160 grams
30:40now i think i heard rahel say what the difference was with these pancakes what do you think it is
30:47these are high protein pancakes they are high protein pancakes that's very good because that's probably the
30:53hardest one to detect in this great smorgasbord today so in this battle of the protein pancakes
31:02a budget brand wins the most votes leaving the most expensive with a silver medal
31:09diners i think for your next taste test you've earned a sweet treat and more specifically ice cream
31:17ice cream and even more specifically ice cream with a twist see if you can tell me what that difference is
31:30ice cream is always a challenge you've got to get it all scooped get it in get it up before it's melted
31:35this round is a battle between a brand leader and supermarket-owned brands low-calorie and low-fat
31:42ice cream ice cream the ice creams are coming thank you thank you in no particular order the ice creams are
31:53halo top sea salt caramel ice cream
31:58morrison's low calorie high protein salted caramel ice cream
32:03and m and s food salted caramel ice dessert
32:07our diners and tom don't know which is which diners do tuck in to ice cream a
32:21very very caramelly very toffee actually i have to say it's too rich for me
32:30darren what do you think of bolet it's very sweet i guess it's if you like that kind of thing it's really
32:35nice but i wouldn't personally what about you louise it was too sweet but i think the flavor on it it
32:42certainly packs a bunch ice cream a seems rich and flavorful but what do our diners make of ice cream b
32:52that's heaven in a bar that i could sit all night and just watch a film now ladies i came here because
32:58something made my antennae shoot up it's actually delicious there's a 10 out of 10 for that one a 10
33:05oh you've put wings on my hands
33:09and finally it's ice cream c
33:14b had that creaminess but i think c is even more creamy this is going to be a really difficult choice
33:20i think i might get some more i just want to double check
33:28it's time to put the lower calorie ice creams to the vote and while the diners do their scoring
33:36in the kitchen chef mike has the inside scoop on the lower fat frozen desserts
33:42we all love ice cream and it's essentially made from milk cream sugar and then whatever flavor you want
33:48to add to it so it's really tricky for supermarkets and brands to be able to produce low fat low calorie
33:55ice creams because it really is those indulgent ingredients that give it so much of its flavor and taste
34:03supermarkets and brands reduce fat and sugar in their lower calorie ice creams
34:08and there's one other trick of the trade that mike thinks they may be using
34:14the secret to a low fat low calorie ice cream is air introducing air to their ice cream mix
34:22which basically makes it lighter in feel and texture than you would have from a traditional ice cream
34:29to demonstrate how lower fat ingredients less sugar and potentially more air than is used in full fat ice
34:36cream could create a lower calorie product chef mike is going to look at how much it weighs compared to
34:44a standard full fat tub so we've got two tubs here same brand same size and same flavor so this is the low
34:54calorie low fat and this is the regular so this one the low calorie low fat is 263 grams versus the
35:02regular at 395 grams over 100 grams difference and that means fewer calories in every scoop
35:11back in the restaurant the results are in dearest diners we have a winner by quite a substantial
35:26margin it's ice cream
35:36this is halo top sea salt caramel i wonder if any of you got the oh louise what do you think the
35:45difference was louise dairy free ice creams they are not dairy free any other punts are they low calorie
35:54ice cream you are spot on and how wonderful that that slipped under the radar in the room
36:02so the runaway winner is halo top sea salt caramel ice cream our most expensive at 5 pounds 50 a tub
36:12in second place is morrison's low calorie high protein salted caramel ice cream at three pounds
36:18and last mns food salted caramel ice dessert at three pounds 75
36:27is there anybody knowing that ice cream c was a full two pounds 50 more than the second favorite
36:33ice cream b from morrison's would switch to morrison's because of the saving
36:37yeah i definitely think me and my mother-in-law are somebody who likes a bargain and so i think for
36:44the sake of two pound 50 we said that we would just go morrison's savvy shoppers indeed
36:51there you have it if you don't mind paying a premium for low calorie ice cream
36:57then halo top is top of the league but if you want to save pennies as well as calories
37:03morrison's low calorie ice cream is a lower budget choice
37:11coming up we round off our taste test menu with a cheese course oh that's horrible
37:19oh that is deeply upsetting
37:33i think i think it's awfully civilized to round things off with a cheese course but as i'm sure
37:45you all know by now with a twist so i'm going to ask you to be the chief inspectors of cheese and see
37:56if you can detect what that difference is this final round is the battle of a brand leader versus
38:06supermarket owned brand dairy-free cheeses the products our diners are taste testing are tesco
38:14free from coconut oil alternative to mature cheddar aldi plant menu mature block and cathedral city plant-based
38:24mature cheddar flavor come on guys let's go please service tray one let's go let's go let's go our diners
38:33don't know which product is which smells quite nice that one actually time to tuck in to cheese a
38:42yay yay it doesn't quite taste like the cheese that i'm used to
38:50That is like eating plasticine, I'm sorry.

40:41And, yeah, I could just imagine it having with any kind of cheesy crackers
40:44and having a lovely evening watching a movie.

40:53Cheese C has hit the spot with our fitness fanatics.

40:58Yeah, this one doesn't smell like athlete's foot, so that's better.
41:05I saw what I can only describe as grimaces.
41:09I think it's safe to say, as far as these go, I camembert it.
41:17I can't top that, so I'm retreating.
41:22While our diners vote for their favourite cheese,
41:24Chef Mike reveals how supermarkets and brands manage to make cheese,
41:30minus the dairy products.
41:32A lot of people are choosing to buy plant-based cheeses now
41:36for both dietary and ethical reasons.
41:39So how do brands and supermarkets make their dairy-free cheese so cheese-like?
41:44They get that by basically using things like the coconut oils
