00:00Loaded Cauliflower Casserole
00:03Loaded cauliflower casserole brings creamy, bacon-topped comfort without the carbs.
00:08Tender florets, cream cheese, sharp cheddar, and tangy Greek yogurt come together in 40
00:13minutes.
00:14For roasted cauliflower, use 2 heads of cauliflower, 2 tablespoons olive oil, 2 teaspoons minced
00:19garlic or ½ teaspoon garlic powder, ¾ teaspoon fine sea salt, and ¼ teaspoon black pepper.
00:26For a creamy base, use 4 ounces of cream cheese, ½ cup whole milk Greek yogurt or sour cream,
00:331 cup sharp cheddar cheese, and ¼ cup freshly grated Parmesan.
00:39For loaded toppings, use 3 slices of bacon and 2 thinly sliced scallions.
00:44Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment.
00:49Cut the cauliflower into 1 ½-inch florets, spread on the sheet, and toss with olive oil,
00:54salt, pepper, and garlic until lightly coated.
00:58Roast for 25-30 minutes, stirring halfway, until fork tender and golden.
01:03Keep the oven on.
01:04While the cauliflower roasts, cook the bacon in a skillet over medium heat for 6-8 minutes
01:09until crisp, then drain and crumble.
01:12In a bowl, beat the cream cheese, Greek yogurt, and sharp cheddar until smooth and spreadable.
01:18Add half the cauliflower to a 2 ½-3 quart casserole dish and dollop with half the cheese mixture.
01:24Repeat with the remaining cauliflower and cheese mixture, pressing gently between the florets.
01:29Bake for about 8 minutes until melted and creamy, then top immediately with extra cheddar, parmesan,
01:35bacon, and scallions.
01:37Add dollops of Greek yogurt if desired and serve warm.
