00:00Stuffed Sweet Potatoes
00:02These stuffed sweet potatoes are about to become your new favorite way to feel like
00:06a responsible adult who has their nutrition game completely figured out.
00:11You'll need to use 6 small sweet potatoes, each weighing about 8 ounces.
00:16Add 1 third cup of quinoa, or 1 cup of leftover cooked quinoa, heat 1 tablespoon of extra
00:22virgin olive oil and saute, 1 small diced yellow onion, 1 small diced red bell pepper,
00:28and 1 finely chopped jalapeno that has been cored and seeded.
00:32Season with ½ teaspoon of kosher salt.
00:35Stir in 2 minced garlic cloves, about 2 teaspoons, 2 teaspoons of chili powder, 1 ½ teaspoons
00:41of smoked paprika, and ½ teaspoon of ground cumin.
00:45Add 1 15-ounce can of low-sodium black beans, rinsed and drained.
00:49Mix in ½ cup of nonfat plain Greek yogurt and 2 tablespoons of freshly squeezed lime juice,
00:55which is roughly the juice of 1 lime.
00:58Finally, include 1 cup of shredded Monterey Jack, pepper jack, or cheddar cheese, reserving
01:04a portion to sprinkle on top.
01:06For serving, include prepared salsa, diced avocado or guacamole, plain nonfat Greek yogurt or sour
01:12cream, and a garnish of fresh cilantro.
01:15Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with foil.
01:20This ensures evenly baked sweet potatoes with a caramelized exterior and soft interior.
01:26Scrub and dry the sweet potatoes, then prick them with a fork to release steam.
01:31Bake until fork tender, about 45 minutes to an hour, and let them cool slightly.
01:36Meanwhile, cook and rinse the quinoa, then heat olive oil in a skillet.
01:40Sauté onion, bell pepper, jalapeno, and salt until softened and lightly golden.
01:46Add garlic, chili powder, smoked paprika, and cumin, stirring until fragrant.
01:52Mix in black beans and cooked quinoa, then remove from heat.
01:56Stir in Greek yogurt, lime juice, and half the cheese to create a creamy filling.
