00:02:37will decide Australia's best home cook and determine who takes home $100,000 we have never
00:02:47been this close to winning $100,000 it is absolutely life-changing we didn't come
00:02:52here to come fourth or third we came here to be in the grand final Maria Bailey lol and Liel are
00:02:59you both feeling confident today yeah yes be quiet quietly confident we've grown so much as cooks I
00:03:10feel like everybody can see that and each time we try and elevate our dishes and take on your
00:03:16feedback and just learn from it that's what we're doing today the only they have been through this
00:03:22amazing journey it's time for them to pack the bags and go home we have experience in the kitchen the
00:03:29drive to go to the end that's enough for us to win will it feel bad sending your friends home no we've
00:03:40mentally already have they're like cats they've used up all the nine lives and this will be their last
00:03:47life lol and Liel so I wouldn't mean to you to win this whole competition it would mean the world to
00:03:56have everyone that's come before us and told us we were going home standing up there and we are told
00:04:01we have one but just I would love that not this week good luck and we are so happy you're gonna be
00:04:11watching us in the grand final let's get the knives eyes shrink shrink I shafted mine before I got here
00:04:17Maria and Bailey aren't threatened by us however they should be if you look back and how we got here
00:04:23since round two we've been above them every single time um so I think they should definitely be
00:04:28threatened by Lilino tonight we want two spectacular courses main and dessert Justin and Will you'll see
00:04:38exactly what you're up against you guys and Justin and Will will join us at the tasting table
00:04:46mate we are taking notes we are scrutinizing each team's weaknesses and strengths and are going to try
00:04:52exploit the weaknesses in the grand final whoever gets to it tonight so we've got our notepads out
00:04:56and we're going to use that to our advantage teams you'll have two hours for your mains and one hour
00:05:02for your dessert the storeroom is topped with everything you need please move to your benches
00:05:09all right love so what are we thinking today obviously we have to go big or go home we're gonna
00:05:17keep it simple but lots of beautiful flavor okay we just need to present amazing food today and we're
00:05:23gonna be in the grand final are both teams ready the storeroom is open your time starts now

00:05:38holy crap yo I grabbed the lobsters that we need for our mains I definitely don't have enough hands to do
00:05:47two at once so I've got to do a few trips here I'm just gonna take a whole lot we really want to
00:05:52showcase truffle and mushrooms because they'll really elevate our main wow that looks amazing I'll get
00:05:59started on prepping those lobsters for our main we are making a sous vide lobster tail with
00:06:05lobster infused hollandaise and a pickled fennel salad it's the logan lobster ladies one lobster
00:06:12tail out it's just a delicious piece of seafood it's also very expensive it's something fancy
00:06:19something we don't usually do because we are the logan bogans i hope we do it justice we are
00:06:28elevating our dishes bringing some techniques that we haven't shown before we are going to fight so
00:06:33hard for our spot in the grand final tonight we will stop at nothing to get there done
00:06:39sous vide is getting to temp lou what are you making we're making sous vide lobster tail with
00:06:47lobster infused hollandaise and a pickled salad oh that's awesome that is a 10 out of 10 dish
00:06:56lowell new have made chicken skewers chicken and leg pies never have we seen them use fancy stuff
00:07:02like lobster the risk is if you overcook lobster it's chewy it's stringy it's just not nice but
00:07:10if it's undercooked it's still gooey yeah so you've got to find that balance if lowell and
00:07:15lil can pull off this dish tonight they could be going straight to the grand final like semi-finals
00:07:21they're going fancy right yeah man like lobster's not like small time plate no that is a fancy move
00:07:26yeah we're just really trying to elevate and show the judges how much we've grown
00:07:32and we're hoping that that pays off today i'm expecting a very close bottle today the thing is
00:07:38can lol and lil elevate the dishes and camaria and bailey parent right back i'm gonna get started on the
00:07:45pasta for our main course cook for the semi-final we are making a truffle and porcini cagliatelle
00:07:54with wild mushroom sauce all right so i'm just gonna separate my egg yolks i love mushrooms i love
00:08:01truffle and i love cream so putting all these three elements together i just love it so bailey i'm just
00:08:08adding some porcini powder in my pasta the judges have been saying this whole competition simple
00:08:15dishes done well is the way to go and i'm just gonna bleach that a little bit excellent we have
00:08:22been listening i know that it looks like we haven't however let's do pinky promise that i'm gonna keep
00:08:28it simple tonight okay i'm in for this i always put my pasta mixture in a blender it's definitely more
00:08:35efficient and you don't get as dirty we have worked so hard to be here in the semi-final
00:08:41especially after round two when we were on the bottom of this leaderboard and now i'm gonna do
00:08:46the rest by hand a good thing about pasta though is he can never over need it so yeah right her arms
00:08:52will be very sore maybe get a subscription for the gym today we're here to win bailey and i with
00:09:00everything that we do we always give 100 and we believe from day one in our abilities and cooking
00:09:08skills and we really really want to be in the grand final so bailey at the door and i'm gonna put it
00:09:14aside to rest and we'll deal with that later yeah great i'm just currently skewering the lobsters so
00:09:22that when i blanch them they don't curl up and we can remove the meat out of the shell a bit easier
00:09:27smash it lil we are aiming for beautiful dishes tonight that's the plan everything that's going
00:09:33on the plate tonight is with intent it's going to be delicious flavorful and technical lobsters are in
00:09:40so if you look at lil's got our lobsters going into our pot of water for 30 seconds then into our ice
00:09:47ice to cook it then straight away so they stop cooking yep and then they're gonna take the shop off
00:09:52we really would love if minu and colin said our lobster was cooked perfectly that's all we want
00:09:58we are out of our comfort zone today we are bringing new techniques that we don't usually do look at that
00:10:03it's beautiful we have to blanch 12 lobsters and get them in an ice bath then sous vide them which is a
00:10:09little bit scary like we've sous vide a handful of times but if we get the grand final it's so worth it
00:10:16it's high risk high reward maria i don't know if it's a smart move for low and lil to be making
00:10:21lobster i mean you know it's got some technique involved in there and i don't know if they have
00:10:27that yet i'm hoping this meat just falls straight out they're inexperienced in the kitchen to be honest
00:10:33but look they're sponges they've learned a lot but this is the end of the road this is the moment of truth

00:10:54maria looks like i'm running a mushroom farm yeah let's pick from the wild one
00:10:58i think these ones are cute we're gonna bring great flavors tonight and we're gonna add some
00:11:04beautiful white mushrooms for the extra bite cut it in quarters yeah if it's too small leave a hole
00:11:11because it will shrink once we pan fry it later teamwork is going to be imperative for us tonight if
00:11:18we want to get into the grand final bailey i'm so proud of you thank you are moving extremely fast
00:11:26us as boss besties we have put in so much work it has made us grow as friends we've been through tough
00:11:32times we've been through crazy times how many elements do you guys have not many if any we've
00:11:37been through absolute chaos and we've come out still best friends and we're ready to win this thing
00:11:44is there any more mushrooms i think you have enough for the plates that we need darling so obviously we're
00:11:49in the grand final yeah which feels unreal yeah who are we going to go up against bailey our kitchen
00:11:55smells delicious right now like bailey and maria they're looking pretty strong yeah they're working
00:12:01well today as a team you're gonna be in charge here darling yeah and then we've got lol and will
00:12:06over there they're working great together both teams are working hard at the moment i found a new
00:12:12way to de-poop it but we know what it's like in the kitchen anything can happen it's anyone's game
00:12:18tonight oh my god this is so good oh my god let's go still to come it's simple two teams only one spot in
00:12:31the grand final well we are fighting to the dip the battle is on and this is just spectacular to watch
00:12:40maria and bailey have a plan this is the first time we're doing something so simple but will simple be
00:12:46their downfall oh it's not coming out well marie why isn't it coming out oh no it's baby that is a
00:12:55total fail this could cost you your position in the grand final
00:12:59get a move on this is not a grand final let's go let's go it's our second semi-final it's marie and
00:13:14bailey versus lol and lil it mean everything to us we can pull this off today bailey i'm so proud of you
00:13:20you're working fast bosses versus besties i'm feeling good are you feeling good i'm feeling good
00:13:28i need to get these in on one side we got a sous vide lobster on the other side we've got a truffle
00:13:33tagatelli okay i need some bigger balls the thing is camaria and bailey pair it right back it's gonna
00:13:40have to be strong in flavor though because there's nowhere to hide and can lol and lil elevate the dishes
00:13:45from what they normally do you could see this in a fondant yeah 100 percent there's a solid game
00:13:53yeah they know their roles i think they're doing all right so far justin and will get to taste and
00:13:58critique the dishes so they know exactly who they're up against in the grand final i reckon
00:14:03it's going to come down to the wire with deserve that's what we want yes we want it down to the
00:14:07yeah 100 you can feel it in the air both teams do not want to go home tonight oh my god
00:14:13the battle is on and this is just spectacular to watch they should be working on their mains and
00:14:21desserts correct i have to start on desserts early because we have a panna cotta in our dessert and we
00:14:25need a few hours for that to set for our dessert we are making berry panna cotta and vanilla creme tart
00:14:32we're doing a mixed berry panna cotta so we have all the berries which will be delicious we absolutely
00:14:38love this dish this is kind of two desserts in one so we get the best of both worlds you have a
00:14:43beautiful wobbling berry panna cotta sitting on top of the tart shells with a delicious vanilla custard
00:14:50we took inspiration from all different types of recipes and we then turned it into our own creation
00:14:55definitely want that dough done for the parts kind of has to chill before i roll it there's so many
00:15:00elements but they all work so well together there's a lot of nerves creeping in right now lil because we've
00:15:05made it this far i don't want it to be like we go home now we're so close to the end it's us on a
00:15:10plate it is it's colorful vibrant and tasty it's really something to impress the judges get us through
00:15:15that grand final lil the dough feels great i'm really happy with it getting it in the fridge now awesome
00:15:21one out of ten minutes come on maria i'm gonna get started on the dessert for our semi-final dessert cook
00:15:29we are making a duck egg creme caramel with a vanilla twill okay so i'm gonna do my duck eggs
00:15:36traditionally you use like chicken eggs but we're gonna go with duck eggs for some extra richness
00:15:44this dessert is definitely a classic so bailey for the perfect creme caramel we want a nice silky smooth
00:15:51cream this is a very risky dessert yes it's simple but it can definitely collapse if it doesn't bake and
00:15:58chill on time we know that in their last instant restaurant lo and lil scored a 10 for their
00:16:04dessert so they definitely could beat us here all right bailey you're doing the caramel for our ramekins
00:16:11yes the caramel is used for the insides of the ramekin the eels melt nicely over the top when we flip
00:16:17it over to serve all right bailey we just need to act quick otherwise we're gonna be here forever
00:16:22i would have done the caramel in a saucepan in a frying pan and i would pour it it it's about
00:16:28using a spoon it i just don't understand the amount of work they're doing it is that enough no
00:16:36making the duck egg cream caramel a little bit risky you won't know until you flip it over yeah and
00:16:42it's on the plate if there's enough caramel to go over the top yeah and then is there enough sweetness to
00:16:49go with it my ideal plan was for this to be in like 10 minutes ago one hour to go halfway trilla
00:16:58come on move it yeah yeah lil i'm starting to finish off that berry panna cotta good job get that done
00:17:05that needs to be set a panna cotta should be so smooth you should be able to glide through that with
00:17:11a spoon panna cotta needs to be wobbly lil it has to shake everywhere all right i'm going to put the
00:17:17gelatin in this mixture if it doesn't you've added too much gelatin or something's gone wrong with your
00:17:23mixture baking is absolutely my happy place i think it's because of it's the one thing i did with my
00:17:29grandma from like this big just pouring the panna cotta mix in now for dessert really happy with the
00:17:35consistency of this lil it's smooth perfection i miss her so much but she'd be so proud of how far
00:17:41we've come and i want to get to that grand final for her as well so it has taken up a little bit of
00:17:46main course but it had to be done otherwise we ain't gonna have a dessert so both dishes are as
00:17:51important as each other today maria and bailey are really strong opponents so to make it through
00:17:56to the grand final we have to have absolutely no mistakes tonight lil can you please really quickly
00:18:01open the store both dishes have to be 10 out of 10 go go go or we probably don't stand a chance that's
00:18:07done all right you're ready to get these poured yeah the mixture is nice and luscious with this dessert
00:18:19it's all about setting it i am so frustrated these creme caramels should have been baking already okay we
00:18:27want a really nice tight aluminum foil situation it's just taking time of our actual main course and
00:18:35that can mean that we won't have enough time to make the pasta i hope it doesn't cost us the grand final
00:18:42i hope so too
00:18:46we need to get these lobsters into the cv machine asap these will take about 40 minutes i think this
00:18:54is definitely what the judges expect from a semi-final it's elevated it's everything we've learned
00:19:01in the competition there's a few ways of cooking lobster and and i think the ladies are using three
00:19:06of them today doing good lol i think they're trying to prove to us with the sous vide that they can cook
00:19:12but is that the way they normally do it i'm gonna double seal it i think they're getting a little bit
00:19:18of technique in the way of what they really want to do and they want a sous vide for 40 minutes and we've
00:19:24only got 47 minutes left on the clock so they're leaving a pretty tight on this one well we're at
00:19:30the crunch time now i need to get these in even if we have been for half an hour a little and just
00:19:35pan fry them yep far yeah more than they'll still haven't got the lobsters in the soup yet what's going
00:19:41on we need to get these in now i reckon there's flaws in the game plan if lol and lil don't plate up
00:19:47anything it is a complete disaster that is a total fail pack your bag girls yeah pack your bags usually
00:19:54sous vide it's a low and slow process you need the time behind you and i don't know if they'll have
00:20:00enough time tonight putting one batch in good job you got a timer on for it i'll get it on
00:20:07well they've been in elimination before and they've pulled the rubber out of the hut so hopefully today's
00:20:12they'll pull the tail out of the bag well i've just put the other two batches in for 30 minutes
00:20:20leaves us enough time to pan fry them all in quite yep bailey can you have to start the porcini
00:20:26mushrooms for our sauce for the main we want a really nice creamy truffle sauce with the porcini in there
00:20:36all right maria they're soaking now hello hello hello so main course we've got a truffle tagliatelle yep
00:20:46we're gonna serve it with a nice truffle sauce with mushrooms is that it no gel no forms no gel
00:20:54that sounds delicious you've decided to go from complicated into a very simple dish today
00:21:00which i really appreciate but which mean the first time needs to be perfect the sauce needs to be
00:21:06perfect and i want it well seasoned done absolutely done all right thank you minute this is the first
00:21:13time we're doing something so simple we've always done complex and if it goes wrong we can hide behind
00:21:18that here we're so vulnerable if we make any mistakes that's the end of the road all right i'm ready
00:21:24to start the sauce the next 30 minutes are crucial there's so much to do right now we've got to make
00:21:33lobster infused hollandaise the heads are in the pot that's where the flavor is going to come from
00:21:38you got the sous-vide machines going oh my god it's getting real trying to think about everything you
00:21:44need to do we need to get the saucer started we are running out of time lol but that's okay here here's some
00:21:51time thanks thanks colin thanks we are definitely out of our comfort zone with this menu it is very
00:21:58ambitious get in goodbye we have so much to do in the time frame so we're getting all the beautiful
00:22:05tails and some of the heads into a pot with some shallots it's something we don't do all the time
00:22:10and this is like do or die so much on the line we gotta get moving time's taking over so if we don't
00:22:18smash it it could be a huge failure we're just hoping that pushing ourselves out of our comfort
00:22:23zone pays off very behind time it's okay this is the last chance we get to prove that we deserve to
00:22:31be in the grand finals so we just have to make sure we do that they're going to have to hurry up

00:23:07semi-final ria bailey against lola no the lobsters won't take how long do they have though because
00:23:13you need to get them on the pan like 12 more minutes lola is serving sous vide lobster with
00:23:19lobster hollandaise and pickled fennel salad good job lou you got the fennel and cabbage how's that pickle
00:23:26mixture going good it's almost ready this salad really goes well with the lobster that lobster needs to be
00:23:32cooked perfect and the garnish needs to pack a punch all right bailey i'm gonna add some wine in there
00:23:38just a dash so maria and bailey are making truffle and porcini tagliatelle with wild mushroom sauce
00:23:46the perfect sauce will have a beautiful luscious feeling we want to have enough so it can coat our
00:23:53pasta it's a very different maria and bailey in the kitchen they used to do about six seven elements so
00:23:58let's hope they concentrated on three and doing well bailey i feel like we're definitely showing
00:24:04technique not only we're making fresh pasta we're elevating it with truffle the tagliatelle needs to
00:24:12be perfect i'm just gonna go with some truffle so they're gonna roll it truffle roll it roll it and
00:24:19it becomes part of the sheet yes it becomes like marble between the pasta and the truffle which is
00:24:24delicious can you turn it up a little bit that's so creative man that's what semi-finals are about
00:24:31yeah that is so impressive wow they are big threats now like we didn't have that sort of perspective at
00:24:39the start but these guys are heavy contenders right now wow that looks amazing to think that potentially
00:24:46we can be up against justin will in the grand final it's gonna be a good feeling we're so close we
00:24:53can't lose now that's right all right this is the last pasta sheet that i'm doing after that we start
00:25:00cooking come on let's go let's go are you happy with every element let's go girls i'm getting these
00:25:09lobsters out of the bag perfect because we've only had them in sous vide for 30 minutes we need to finish
00:25:15them off in the pan i'm just looking for a color on the outside they look pretty much almost done
00:25:22we want to be a cut above the other team we want to show that we can do this much in this time frame
00:25:26and it still is amazing 10 minutes come on let's get it we literally have no time i don't know if
00:25:35they're going to make it in time yeah i actually don't know if lowland will have lobster on the plate
00:25:39today the clock's ticking man you haven't got much time take one tester off
00:25:48a bit longer i think it is very easy to undercook and overcook a lobster tail you don't have much
00:25:53grace between it being perfect and then going over so you've got to keep an eye on it this is
00:25:57insane turn that heat up or those are not getting them cooked all right let's start cooking the pasta
00:26:05it's very doable because it only takes two minutes i'm getting everything prepared for maria i'm
00:26:10getting parmesan i'm getting truffle ready to make sure that we can have a quick transition from pot to
00:26:16plate let's go i've nearly got these ready maria and bailey's dynamic is actually surprising they're
00:26:24actually working well as a team and stop it now like i sort of don't want that now a little bit
00:26:30concerning yeah like if they make it through geez we might be getting a run for our money here
00:26:34the pasta will continue cooking so i don't want to go all the way i love this dish so much but
00:26:41being so simple it can leave us vulnerable if law and lil cook the perfect lobster we might be in
00:26:48trouble here we got six minutes let's go right lil i'm getting these out i need to do the hollandaise
00:26:57yep we don't have time to wait literally have six minutes the butter needs to be hot so we just
00:27:03sip it and then straight from the pan we're going to put it into the egg
00:27:09lol's making the hollandaise sauce now if that splits i've got to redo it again i'm going to start
00:27:14from scratch that's not enough time to nurture and put some lum in the sauce i mean they are going to
00:27:19be going through that sauce so fast yeah don't know anything's going to taste that great just move move move
00:27:26it's going to be tight again we never leave ourselves much time anytime the lobster should come
00:27:33out i don't want to overcook them i'm just hoping that the lobster's cooked perfectly everything's
00:27:39going to be great lil it's fine we're going to cut it really close but that's our style that's what we
00:27:44always have done plating plan is pickles then we've got hollandaise the lobster i'm plating it looks
00:27:52like you're doing a nice swirl in a ladle come on james three minutes left let's go
00:27:59really happy with the holidays we can add a bit more lime juice oh my god this is so stressful
00:28:05we have so many elements we need to get on there we had a goal to do a beautiful pickled salad with
00:28:11radishes that stood up and a mermaid beans some tarragon flowers when you have the time it is a
00:28:18work of art we do not have the time one minute one minute go peace did you want on top maria 100
00:28:28bailey's going to put some white mushrooms around for the bite and then we're going to shave some more
00:28:34truffle this is really stressful i'm just trying to do my best to remain calm
00:28:41so that one of us is calm and one of us is freaking out and hopefully this combination together
00:28:47will get everything on the plate with enough time all the way this is the end get our semi-final and
00:28:53you've got 30 seconds left on your main course come on get the flowers on lil quick quick quick yeah get

00:29:41screaming at us for i definitely think we've done enough to beat low and low how do you think we went

00:29:59here to be in the grand final we need to make it there we have taken every comment on board from the
00:30:04dodgers and we've elevated our main so i just have full faith it's going to pay off tonight it would
00:30:10definitely hurt if law and little took our spot to the grand final because we're just so close and i
00:30:17feel like we do have everything we need to win this competition
00:30:24coming up the knives are out like undercooked and quite raw in the middle
00:30:30more i don't know about that as both teams fight the pasta was slightly overcooked

00:31:07up against i'm in the grand final i'll be taking notes but ultimately it's up to the judges to decide

00:32:34classic dish i mean this is something that i would jump on at a restaurant i would like a
00:32:41little bit more seasoning on the mushrooms yeah just a touch of salt but overall semi-final dish
00:32:48it was the best feeling hearing that justin and will loved our pasta dish i feel like they're
00:32:55quite tough to impress and that means we could be threatening to them and i'm so excited
00:33:02i think a little bit more salt would have been really nice maybe the mushrooms a little bit
00:33:05finer chopped through it i liked how creamy it was i liked that the truffle wasn't too
00:33:10overpowering the only thing is i think the pasta was slightly overcooked low and lil are being a
00:33:18little bit childish with their critiques i feel like this is borderline disrespectful you could
00:33:24tell it wasn't even genuine they were just trying to find things to throw out there that it could be
00:33:29bad so let's try lol and lil's sous vide lobster with lobster hollandaise and pickled fennel salad
00:33:45we are showing that lil and i are here and here to stay our main dish is definitely elevated so our
00:33:52willingness to take on the judges critiques and feedbacks and adapt that into our new food is why we
00:33:58are going to win today this is not both flavors law and lil are really trying to impress the judges by
00:34:23picking an expensive protein rather than the flavor and that could really send them home
00:34:30it's undercooked mine

00:34:34awesome effort like using the sous vide the two-hour cook was quite impressive thank you
00:34:56my lobster was just really inconsistent the hollandaise sauce it's got plenty of salt in there
00:35:03can taste the salt which does give seasoning to the lobster and then with the pickled salad there was
00:35:09nice good flavors in there all three together there's a banger dish if the if the lobster was done well
00:35:14i had one of the bigger pieces of lobster and i think that is like undercooked and quite raw in the middle
00:35:24more i don't know about that it is absolutely not that's crazy the lobster i had was cooked great
00:35:31so yeah you're just throwing comments in there to try and make it seem like that but no i highly disagree
00:35:36with that comment uh maria how do you feel about your position i feel that we've done enough and
00:35:43we definitely have very good flavors and nothing really went wrong for us so i think we do have a
00:35:49stronger dish well no one get ahead of themselves because we're only halfway through teams take a break
00:35:57while manu and i have a little chat about the dishes
00:36:00we are trying to show manu and colin that we can step up our game when needed we're not here to
00:36:06cook basic home food anymore so i'm just praying that the judges are going to love it and that's what
00:36:12really counts okay let's start with lol and lil's lobster it doesn't look great but i think there's a
00:36:25lot of flavor there yeah yeah the lobster tail is a little inconsistent but with the hollanda's goes
00:36:32well together very tasty platter food mhm marian bailey's pasta we did ask for simple but they also
00:36:40showed amazing technique the addition of the truffle inside out of the pasta was great yep the sauce was
00:36:47brilliant i thought it was executed very well the showcase truffle and the pasta is full of flavor
00:36:53that i've got one definitely in front of the other um but after seeing both desserts that can all
00:37:01change indeed still to come oh my arm it's now or never no what are you doing we are fighting to the
00:37:12dip for the death come on just clean with a spot in the grand final up for grabs go go go go who can
00:37:20hold their nerve this is hectic just get them on and serve up a winning dessert
00:37:26i know this dessert can be a 10 out of 10. maria and bailey are going down

00:37:48but right now we have marian belly ahead the judges announced that we are ahead and i feel great am i
00:37:58surprised me not surprised yeah but it's all to play for steel i know this dessert can be a 10 out of 10
00:38:05i have full confidence in it so we are going to pull it together get back on our horse and ride it to
00:38:10the grand final teams you have 60 minutes for your dessert and your time starts now let's go okay we
00:38:20are a step closer to the grand final that's right we can do it we can do it we're gonna check our creme
00:38:28caramel yeah i think it's good it's great it's bringing look for our semi-final dessert cook we are
00:38:38making a duck egg creme caramel with a vanilla twill remove them from the water so they can start
00:38:43cooling down we won't know if it works for us until we can flip one over to taste i know that
00:38:49it's simple but we can achieve perfection and that's all that we have to do we are going to do some
00:38:55stencils for the vanilla twill we want to add a vanilla twill to our creme caramel for the texture
00:39:02it's almost like a thin biscuit let's measure our plate something like this
00:39:07will be actually that's perfect no it looks like they're doing some arts and crafts at the moment
00:39:12they've got the scissors out yeah they've got some cardboard man they've been cutting out some shapes
00:39:16they've pulled out the flour this could be a paper mache
00:39:20and this is the beauty about baking right you can be as creative as you like this is our last chance to
00:39:27prove to the judges that we have everything that it takes to go through to the grand final once we're
00:39:34half an hour through we can take out our caramel and give it a try mm-hmm so i'm starting the vanilla
00:39:42creme lol's going to do half i'm just separating the egg yolks for dessert tonight we are making our
00:39:47berry panna cotta and vanilla creme tart we need to get out the perfect dessert if we want a chance at
00:39:52staying in this competition and we did not come this far to go home now no two desserts in one is
00:39:59definitely a semi-final tactic we want to show that we can do double the workload in the same
00:40:03amount of time and produce a beautiful dessert this dessert is so delicious it's nice and light but
00:40:09you get berry vanilla and the beautiful short crust pastry we have done a lot of prep for dessert in
00:40:14main course but there is still quite a bit to do i'm going to get this on i'm going to move the panna
00:40:21cottas to the freezer just to make sure they set perfectly my biggest concern for dessert is the panna
00:40:27cottas and getting them set in time otherwise it's not making it to the table these are looking
00:40:32really good though i'm just putting them in the freezer just to make sure they definitely harden
00:40:36up we could have done just a panna cotta or just a tart but we thought you know what no we've seen that
00:40:42already in the competition and this is the semi-final this competition is so important to lil and i oh my
00:40:48yum keep going after this our friendship is 10 times stronger good that looks perfect long remind
00:40:55me to stab it with four yes we want this heart vase to be pretty thin but not too thin that it cracked
00:41:02i definitely don't want this to be our last dishes of the competition we don't come from much yeah but
00:41:08we really want to be able to get to that grand final to show our families and the judges how much we
00:41:13can do all right lil i'm just putting baking beads in our vases i've got these first ones in real quick
00:41:18i'll start rolling the rest yeah a lot of them need to do well to save their position or to move forward
00:41:26that's right is it good taste it perfect so smooth so silky and then on the other side you've got marie and
00:41:37value they've worked very well up to now like they've got the main components done now they just
00:41:43need to judge it up a couple of twills over the top and that's it so is that going to be enough to win
00:41:49this 30 minutes to go give us a winning dessert okay let's do the twill oh that's nice and thick this

00:42:07to be careful because we're going to spread that so thin that it could potentially burn in the oven so

00:46:48Maury and Bailey never really never hit the heights because they're over complicated the desserts

00:48:50give up and we just push our hardest and we are gonna get this done I thought it was two separate
00:48:55desserts but it's one dessert I think it might go together yeah I agree get the strawberries on lil get
00:49:03them on I think we put like the twill here on the plate we have the creme caramel we have the vanilla
00:49:09twill and we have the chantilly cream simple simple simple we can't hide we're just gonna bring the
00:49:16flavor that could send us to the grand final

00:53:54really good flavors obviously you put a lot of love into this one that's very clear because it tastes

00:54:07I think Maria and I are very confident that we're going to be making it through to the grand final

00:59:01that was sort of not really looked after but i thought the hollandaise okay well with that lobster
00:59:08the hollandaise it was a little bit salty but you know what it worked and then you had the pickle
00:59:14salad it sort of had the makings of a really nice lobster roll without the roll yeah i thought it was
00:59:21good but it wasn't great yeah i definitely feel like we have a chance it was just the cook of the
00:59:28lobster that was inconsistent and if theirs doesn't scratch up then we have a very good chance of going
00:59:33to the grand final marie and bailey your mind was truffle and porcini tagliatelle with wild mushroom sauce
00:59:45the quality of the pasta was amazing the flavor of the pasta alone was amazing
00:59:52that sauce beautiful the the flavor of the dried mushrooms seeped in there there was definitely
00:59:58truffle in there and i think some of your main courses have had 50 000 things going on and this
