00:00It's that time of year where we still love eating,
00:02but we're sick and tired of cooking.
00:03I've got you covered.
00:04I've got five easy dinners with only five ingredients.
00:08First recipe I'm doing is Marry Me Sausage Tortellini.
00:11Marry Me Anything is all over the place
00:13and this is the perfect weeknight dinner.
00:15The five ingredients you need for this
00:17are just some refrigerated tortellini,
00:19some Italian sausage, some heavy cream,
00:22sun-dried tomatoes, and spinach.
00:24This might even be considered a pantry staple.
00:27So you could sub that out for one of the other ingredients
00:29we're gonna use in this.
00:30Speaking of, you've gotta have pantry staples
00:33to make five ingredient dinners really happen.
00:36The recipe calls for shallots,
00:37but if you don't have shallots, you can just use onion here.
00:40All right, I've got one pot of water going for my tortellini
00:43and then we're gonna build everything else in this skillet.
00:46Just to kind of give my sausage a head start browning,
00:48just gonna take it out of the casing and kind of break it up.
00:51Sausage is a great ingredient
00:53when it comes to like minimal ingredient dinners
00:56because it has so much built-in flavor in it.
00:58It's already got herbs and spices, sometimes garlic.
01:01It also has a longer shelf life.
01:03So it's a good one to keep in your freezer.
01:05So I'm just gonna cook this while crumbling it with a spoon,
01:09just till it's all browned.
01:10And we're creating that first layer of flavor right here.
01:13All right, our sausage is browned.
01:15It's mostly cooked through at this point,
01:16but it's gonna keep cooking.
01:17We've already created a good little flavor base on the bottom.
01:20You know, that's what I like.
01:21And then in goes our shallot.
01:23Also going in with my garlic.
01:25So I'm going in with some Italian seasoning.
01:28I always like to like crumble it, you know,
01:31between your fingers to just kind of release some of the flavor.
01:33Quarter teaspoon of crushed red pepper.
01:35I used a spicy Italian sausage.
01:38So I probably could have skipped this altogether,
01:40but we're gonna add cream later
01:41and that's gonna mellow out the heat.
01:43Already smells so good.
01:44Now I'm going in with some tomato paste,
01:46couple tablespoons.
01:47This is key in like all the marry me recipes.
01:52And unless you've been living in a cave,
01:53you've heard of marry me something.
01:56For the liquid here, you could use a chicken stock
01:57if you've got that open and on hand.
02:00Also love to buy that like bouillon paste,
02:03but because there's so much flavor in this skillet right now,
02:06I'm just going in with water
02:07because you don't need much.
02:08Scrape up any little loose bits.
02:11And then another thing that makes it marry me
02:13is heavy cream or something creamy.
02:16Oh, I forgot the main ingredient.
02:18Sun-dried tomatoes, also key in any marry me anything.
02:21That should have gone in with the shallot.
02:23Nobody's gonna punish us
02:24for doing things out of order here, okay?
02:26We're gonna bring this to a simmer
02:28and then that cream is gonna kind of thicken a little bit
02:30and then we'll be ready to add in the pasta
02:32and it's gonna absorb all of this little delicious oil.
02:36Also, all of these five ingredient dinners,
02:39they're gonna include a veggie
02:40because my dad always said
02:41you have to have a green veggie with your meal.
02:43Finish it off with a little Parmesan cheese.
02:45Check your seasonings and dinner's done.
02:47This one is a crowd pleaser.
02:49Not only perfect for a weeknight dinner,
02:51but you could serve this to company and take pride.
02:54Just gonna top it off with a little more Parm.
02:56It doesn't look like a five ingredient dinner.
02:58How did we do on dinner number one?
03:05I'll tell you how we did.
03:06A plus, 10 out of 10.
03:08It's got it all going on.
03:09That sausage offers so much flavor.
03:12It has flavored that whole creamy sauce.
03:15Sun-dried tomatoes add just like that little burst
03:17of sweetness, spinach.
03:18I mean, you could have even doubled it
03:20and made it twice as healthy.
03:21I promise you will not go wrong with this dinner right here.
03:25Dinner number four, I'm throwing it back
03:27and we're making Swedish meatballs with gravy,
03:29mashed potatoes, and green beans.
03:32Five ingredients.
03:33I really pulled out a couple pantry stables
03:35and included them in the five ingredients.
03:37This, again, could be a three ingredient dinner.
03:39Swedish meatballs typically include
03:41ground beef and ground pork.
03:42I just wanted to eliminate ingredients here,
03:44so we're just doing ground beef.
03:46You can add an ingredient if you want.
03:48Beef broth and heavy cream to make the delicious gravy.
03:51And then for our sides to round out the meal,
03:54of course, mashed potatoes.
03:55And I'm gonna do the viral green beans,
03:57starting with frozen green beans.
03:58Start by finely chopping an onion.
04:01Per usual, I told you I put it in everything.
04:03When I'm making meatballs,
04:04I like to really finely chop or mince the onion
04:07because you don't want to get little chunks of it in there.
04:09This is just one of those dishes
04:10that you might have forgotten about.
04:12I know I do.
04:13Whenever I'm making meatballs or meatloaf,
04:15I always like to get all my ingredients in everything
04:16except the meat, and then I add the meat last.
04:18That way you can give that a head start mixing
04:20and you don't over mix the meat.
04:22I go in with some milk.
04:24Couple tablespoons of our heavy cream.
04:27In with a little bit of garlic.
04:28One egg.
04:30Give this a mix.
04:31Go ahead and add in some of the seasonings.
04:34The recipe calls for a quarter teaspoon of salt.
04:36That is not enough.
04:38Already know it and haven't tasted it.
04:39What makes the flavor of Swedish meatballs unique?
04:42It's a little bit of allspice and white pepper,
04:44so I'm gonna add those in.
04:45These are probably in your spice cabinet,
04:46but if they're not, don't go out and buy it.
04:48Okay, it'll be fine.
04:49And now you add in the breadcrumbs,
04:50and you want the breadcrumbs to absorb this liquid.
04:52And then these moistened breadcrumbs
04:54will distribute evenly among the meat,
04:56and that's what you want.
04:57And then if you have it, some fresh parsley.
05:02If you don't, leave it out,
05:03or you can use dried here if you want.
05:05There, you can see those breadcrumbs have absorbed
05:07some of that milk mixture.
05:08It's thickened up a little bit, so in goes our meat.
05:12Just gotta get in here with your hands.
05:14Just don't do this with a spoon.
05:15It's not gonna be the same.
05:16You just wanna mix until it's just combined,
05:19but kinda like one uniform mixture.
05:20Otherwise, you're gonna get clumps of bread in there.
05:24All right, all mixed up and ready to roll.
05:26Just moisten your hands,
05:27and then you're gonna roll this mixture up
05:29until like just larger than golf ball size.
05:32Meatballs are ready, but before I cook them,
05:34I'm gonna get my green beans going,
05:36because they take about 30 minutes.
05:38They could not be easier.
05:41You've seen me do these before,
05:42but I learned it from TikTok,
05:44and they're just called Famous Green Beans.
05:46And you start with frozen green beans.
05:48Then all you do is olive oil, salt, pepper, and garlic powder.
05:53Give them a toss, and then pop them in a 400-degree oven
05:55for about 30 minutes.
05:57It's not like I've never made green beans
05:58with these seasonings before,
05:59but just starting them from frozen
06:01and they come out perfect is kinda mind-blowing.
06:04All right, get a large, deep skillet again.
06:07I'm gonna go in with a little olive oil and butter
06:09to brown these off.
06:11Let this get hot.
06:12And then we're just gonna brown our meatballs on all sides.
06:15They don't have to be fully cooked through,
06:16because they're gonna be added back into the sauce later.
06:19Once they're browned all over,
06:20I'm gonna set them aside on a plate
06:21and make the sauce in the drippings.
06:23All right, into the skillet,
06:24we've already built our first base layer,
06:26and I'm going to add mo' butter.
06:29We're gonna make our cream sauce.
06:30Once the butter is melted, go in with some flour,
06:33because we're gonna make that roux.
06:35And then you wanna cook this until it's light browned,
06:37so that we have a brownish gravy.
06:40All right, when it's just kind of a light brown,
06:42now we can go in with our broth.
06:44Recipe calls for beef broth and vegetable broth.
06:47That seems unnecessary.
06:49We're just gonna do one, some beef broth.
06:51Get that in there, whisk it,
06:54so that you don't get clumps of flour,
06:56and some heavy cream.
06:57All right, so I'm just gonna bring this up to a simmer,
06:59and then it will start to thicken,
07:01and then we'll go back in with our meatballs.
07:02Look at this creamy deliciousness right here.
07:05Now we're gonna season it up with a little Dijon,
07:08and a little soy sauce that's gonna add flavor
07:11and a little bit of color.
07:12A little salt and pepper to taste.
07:14Right now, the meatballs go back in,
07:16and they're gonna finish cooking,
07:17along with any juices that have accumulated in here.
07:21Get them all nice and coated.
07:22Let them have their little bath in this little jacuzzi
07:25of creaminess right here.
07:27And our green beans are almost ready.
07:29It's all about to come together, guys.
07:31All right, green beans.
07:33See how they're cooked perfectly?
07:35To finish them off, you add some grated parm.
07:39Look at that.
07:40They just work so beautifully.
07:43Taste for seasoning.
07:46Mm, one more salt.
07:48Mashed potatoes in the microwave,
07:50and we're about to dish it all up.
07:52Meatballs, so much delicious gravy.
07:56On go our mashed potatoes.
07:58I feel like that's what you have to serve
07:59with Swedish meatballs.
08:01Green beans and all the sauce.
08:04Mm-hmm.
08:06Y'all remember, considering this included
08:08a lot of pantry staples,
08:10it's like a three-ingredient dinner.
08:11It's pretty impressive.
08:13That's a complete meal, full-on comfort food right here.
08:17Hot, steamy, delicious, crowd-pleaser.
08:20You can make as many or as little as you want
08:22with the same few ingredients.
08:24Perfect bite city.
08:25Why do we forget about Swedish meatballs?
08:31They're tender, they're mild in flavor.
08:35You get that little hint of the allspice in there.
08:37But that gravy, that gravy's everything.
08:40This one right here is a no-brainer.
08:42Go ahead and add it to your list.
08:44Breaking out the slow cooker for this next five-ingredient dinner.
08:49Slow cooker honey garlic chicken noodles.
08:52Yes, please.
08:53Five ingredients here.
08:55Inexpensive chicken thighs.
08:56Whenever I'm doing chicken in the slow cooker,
08:58I really prefer chicken thighs.
08:59You've heard me say that.
09:00Fresh ginger.
09:01I just added this to one of the five ingredients,
09:04because I just assume you may not have it.
09:06Oyster sauce, you can find this on the international aisle.
09:08Super inexpensive, around $3.
09:10And it just gives that kind of umami flavor
09:15that you can't get anywhere else.
09:16Lo mein noodles is what I'm using here.
09:18You could also just use spaghetti
09:19or whatever noodle you have on hand.
09:21And then for the green vegetable,
09:23I'm adding in some broccoli.
09:24I'm not gonna put this in the slow cooker.
09:25I'm just gonna cook this on the side.
09:27All right, so I'm just gonna start by putting my garlic
09:29and ginger right into the slow cooker.
09:32Six cloves or whatever you're feeling.
09:34It is called honey garlic chicken.
09:36Just peel your ginger with a spoon.
09:38And then you can just use a microplane, grate it right in.
09:40I really like those pre-minsed little cubes
09:44of ginger and garlic that you can buy in the freezer section.
09:47Those are real time savers.
09:49And then I'm breaking out pantry staples.
09:52I believe you have honey on hand.
09:54That's why I love this recipe,
09:55because it's like sweet and salty.
09:57You've got all the flavors going on.
09:59And then the oyster sauce.
10:00If you've bought the bottle
10:01and you're not gonna use it all for this recipe,
10:03it's a great thing to add just to marinades down the road.
10:06Then a little hot sauce from your condiment section.
10:09Sweet, salty, spicy, everything.
10:12The recipe does call for dry sherry or Shaoxing wine.
10:17We don't have that.
10:19And I don't wanna have to buy a sixth ingredient for that.
10:21It's only a tablespoon, so we're just gonna leave it out.
10:24And sesame oil.
10:25To me, this is a pantry staple now.
10:26If you don't have it, you could also leave it out
10:28or throw in some sesame seeds here.
10:29A little bit goes a long way.
10:31It's just a great flavor.
10:32This is the base of the sauce,
10:33but as the chicken cooks in here,
10:35it's gonna release its own kind of juices.
10:37And it's gonna increase the amount of sauce here
10:39to cook those noodles.
10:41Smells so good.
10:43So I'm gonna add the chicken down.
10:45I'm gonna give it a little toss in the sauce.
10:47The good thing about chicken thighs though
10:48is it's hard to overcook them.
10:49So if you need a little more time, you've got it.
10:51You can go on low for like five to six hours.
10:54We're just gonna cover and cook this on high
10:57for two and a half to three hours.
10:59And then just before it's done,
11:00I'll cook off my noodles and my broccoli.
11:03Broccoli's cooking.
11:04Look at this chicken.
11:07Look at the color of that.
11:10Oh my gosh, that chicken literally falling apart.
11:12I was gonna take it out to shred it,
11:14but I mean, it's even gotten caramelized
11:16thanks to that honey in there.
11:18I mean, this already has so much flavor.
11:20Just shred that up.
11:21And then we're just gonna stir our noodles right in.
11:24All right, you just boiled the lo mein noodles
11:25for like four minutes and they're done.
11:27Straight into the chicken.
11:31Guess what?
11:32Nicole forgot to do something.
11:33When I saw that the sauce wasn't coming over the noodles,
11:35I'm like, wait, I think I was supposed to thicken it up.
11:37We're gonna take some cold water, some cornstarch,
11:40dissolve the cornstarch in the cold water
11:44and then pour it in.
11:45Still plenty hot in there.
11:46So as soon as this hits the heat,
11:48it will start to thicken.
11:50Now watch the magic.
11:51What's good about a cornstarch slurry
11:53is it's powerful to thicken,
11:55but it doesn't change the flavor of the dish.
11:57So we're not watering it down or anything.
11:59Now you can see that the noodles
12:01have started to take on the color of that sauce.
12:04Rounding out the meal with the broccoli.
12:08I mean, this is gonna rival any takeout situation
12:12you've got going on.
12:13It doesn't look like super saucy,
12:14but that's because the noodles have already absorbed it.
12:16You know, they were stark white going in
12:19and you can just tell by the color
12:20that they've absorbed that flavor.
12:21Finish it off with some green onions.
12:23The honey is definitely pronounced in there
12:25and that oyster sauce is pretty sweet too.
12:27So, you know me.
12:29Gonna dig in just a little more to balance this out.
12:34This is a good one.
12:38Mm.
12:39It's everything I said.
12:40It's sweet and salty and just as spicy as you wanna make it
12:44if you top it with some more sriracha.
12:45But the way that chicken has caramelized on top,
12:49thanks to all that honey, it's cooked perfectly.
12:52A little crusty on the outside, super tender.
12:53It melts in your mouth on the inside.
12:56Our five-ingredient taco Tuesday dinner is up next.
12:59We are making a one-pan happy plate.
13:02I just learned what this was this year.
13:04All it is is cheese, chicken, and rice.
13:07I think this was a dish created for picky eaters originally,
13:10but I can show you how we can take it up a notch
13:12for those that just love everything.
13:13But the five ingredients are rice, chicken,
13:17bundles, skinless chicken breast or thighs,
13:19queso cheese dip, taco seasoning,
13:22which you don't even have to use the packet.
13:24I just wanted y'all not to call me a liar.
13:27So I put it on here.
13:28And then a bag salad.
13:30I'm doing a Mexican street corn salad to go with the meal.
13:33The only thing prep-wise I have to do is chop this onion.
13:35I'm just gonna kinda finely chop it
13:37so that it does blend in with the rice.
13:39Just gonna dice the chicken.
13:41You just wanna cut it in like one-inch pieces.
13:43Chicken, we've talked about before,
13:46freezes very well without changing the texture or anything.
13:49So it's another thing to always keep in your freezer.
13:51We eat a lot of chicken dinners in my house.
13:54So you gotta find a way to change it up.
13:56And this is a great example of how to do that.
13:59I'm gonna go ahead and toss the chicken
14:01with the taco seasoning.
14:02If I was at home,
14:03I would just use spices from my spice cabinet,
14:06but we're just gonna keep it easy today.
14:07We are ready to cook
14:08and this whole dinner will come together
14:10in 30 minutes or less.
14:12So get a nice deep skillet for this.
14:15I want this to get good and hot
14:16so that we can create that crust,
14:18therefore that flavor into our dish.
14:21Down with our seasoned chicken.
14:23Get it down in one layer and then don't touch it.
14:25That way it can develop some color at least on one side.
14:29I'm gonna let it go for about two to three minutes.
14:31That's what I'm talking about.
14:33That's what you want.
14:34All right, now I'm going down with the onion.
14:36And for the onions cooked for about a minute,
14:37you go in with the rice.
14:39All right, then you want to toast the rice a little bit.
14:41This is going to help it stay separated
14:44and more like a pilaf when we cook it.
14:46So you want to coat each grain of rice
14:48in some of that flavored fat that we've got going on.
14:51I've got one and a half cups of rice.
14:53I'm going in with three cups of water.
14:54I'm gonna scrape the sides of the pan
14:56to lift up all that flavor.
14:57We're gonna bring this to a simmer
14:59and then you're just gonna finish it
15:00just like you do your rice.
15:02And then you don't want to keep stirring it
15:03because we don't want the rice to get sticky or gummy.
15:05Once it comes to a boil,
15:07we'll give it one more little stir,
15:08cover it and let it go.
15:10I did forget to tell you to add a little salt
15:13before you cover, but I did.
15:16Look at that.
15:17It's absorbed.
15:18And if you find that your rice isn't cooked
15:21before the liquid has absorbed,
15:22it's probably because your heat was maybe a little bit high.
15:25So you can go back in and add like a quarter cup of water.
15:28So it's starting to stick.
15:29So we are done.
15:31Rice is tender.
15:32And now we got to make it happy
15:33and everything's happier with a little bit of cheese on it.
15:35So I'm microwaving my queso
15:37and then you just pour it right over the top.
15:39And now we've made it a happy plate.
15:41Now, while I would just like to go straight into here
15:43with a fork, we're not quite done.
15:45I'm gonna show you how I really serve this up
15:48to make it slightly more fancy.
15:51Mix up a little salad.
15:52I'm just gonna do half of the dressing.
15:54Okay, so what I like to do is take the happy plate
15:56and turn it into a bowl.
15:58I like to build with all kinds of toppings,
16:00but look at this.
16:01Creamy, cheesy chicken rice.
16:04I'll put my little salad kinda right next to it.
16:07The ultimate comforting indulgence
16:09and what I really wanna do is just eat it just like that,
16:11but I like to top it just to add some extra nutrition
16:14and make it a complete dinner
16:15after I top it with just a little more queso.
16:17I'm gonna add in some cilantro, avocado,
16:21maybe some fresh jalapeno, cause why not?
16:23And a little drizzle of your favorite hot sauce.
16:26You could just serve it with chips.
16:27You could serve it with tortillas.
16:29You could use this as a base for burritos.
16:31I mean, the possibilities really are endless
16:32with the happy plate.
16:33Already happy.
16:38Mm.
16:40How is it not gonna be good?
16:41It is so comforting, so rich, so flavorful.
16:44The rice and the chicken are cooked perfectly.
16:47Using queso as your sauce, it's just smart.
16:50You definitely 100% need to make this
16:52on your next Taco Tuesday.
16:54My final trick is chicken Caesar smashed tacos
16:58with sweet potato fries.
16:59These smashed tacos have been a viral sensation,
17:02and the chicken Caesar, it's up there,
17:05like it's up there.
17:06It could be the favorite.
17:07I've had so many people try this,
17:09and it has become a weekly staple in their household,
17:11and it will become yours too if you've never seen it.
17:13For the five ingredients, ground chicken, tortillas,
17:18a bag of Caesar salad mix,
17:20because this contains multiple ingredients in one bag,
17:23just a little Greek seasoning,
17:24and then sweet potato fries,
17:25because I needed a side dish.
17:27I love doing them on these street taco-sized tortillas,
17:30so like four inch, four to six inch.
17:32Sounds weird, but you gotta trust the process.
17:34You're gonna take your ground chicken,
17:36and you're gonna just spread the meat into a thin layer
17:39all the way to the edges of the tortilla.
17:42It's not the most glamorous of things right now, I get it.
17:44Then you're just gonna take your tortilla,
17:45I like Greek seasoning on this,
17:47and just kinda season it up.
17:49You're also gonna wanna go ahead
17:50and have your salad mixed and ready,
17:52and it's already mixed, comes with your dressing.
17:55Also love that it comes with these little
17:56crushed up croutons in here,
17:58that way it adds a little crunch
17:59and texture to your tacos.
18:01Some Parmesan cheese.
18:03If you wanted, you can mix the Parmesan
18:05in with your ground chicken.
18:07All right, so I'm gonna get all my prep,
18:08get my sweet potato fries cooked,
18:09and then we'll pop these on the griddle.
18:11Before we put these on the griddle,
18:13I'm gonna sprinkle them with just a tiny bit
18:15of salt and pepper.
18:16Then you're going to heat up your griddle
18:18or your Blackstone.
18:20This really is the perfect thing to do on a Blackstone.
18:22If you have a Blackstone, I would also like to know,
18:24what are your favorite things to make on that?
18:26Or what haven't you made that you would like to make?
18:28Because I'm about to do some major cooking
18:30on the Blackstone.
18:31Add a little bit of olive oil,
18:32but you can totally just do these
18:34in a large nonstick skillet
18:35and cook two or three at a time.
18:37But also, maybe you just have a pancake griddle like this
18:39and you just need another excuse to use it.
18:41That meat's gonna shrink up a little bit as it cooks.
18:43That's why you wanna spread it all the way
18:45to the edges on these tortillas.
18:47And let it go.
18:48It will cook the chicken all the way through.
18:50Do not worry.
18:52I know you're worried.
18:53So we go about two to three minutes.
18:55You really wanna get some color on this first side.
18:58Then we'll flip and we'll just go
18:59like another 30 seconds to a minute.
19:02Good those look.
19:03We can see just how thin that meat is.
19:06I promise you, it is all the way cooked through.
19:08I just like to toast the outside so that we have,
19:11you know, some little crispiness on the outside of our taco.
19:13And it's done.
19:15The fastest dinner of the day.
19:17I think the smashed tacos are one of the greatest things
19:19that ever came out of TikTok.
19:21Done so many versions.
19:22The smashed dumpling is also very good.
19:24Even Drew Barrymore loved it when I made it for her.
19:27That is an endorsement right there.
19:30It's like a hamburger and a taco had a baby,
19:34but a dumpling is raising them.
19:36Yeah. Love it.
19:38Actually, I just had it better myself.
19:40All right.
19:40Time to build.
19:41I'm gonna go ahead and take all of these off
19:43so they don't overcook.
19:45Also, like with one pound of meat,
19:47you can get eight to 10 tacos.
19:49So I mean, totally an affordable meal also.
19:52All right, so you can see how the outside got toasty.
19:55Gonna top it with your Caesar salad.
19:57Fold.
19:59And I give you the chicken Caesar smashed taco.
