03:32Wow. This is really good. Could you tell us how did you make this soup?
03:35It has four or five different kinds of mushrooms and you just kind of just boil it and reduce it down and kind of fortify it.
03:43And it takes hours just to basically extract all of the umami out of the mushrooms.
03:48The work goes into making a good soup.
03:50Let's take a look at that monkey brain.
03:52We really want to know what that is and how are we making that.
03:55So just for context, at the end of the show, for the final competition, the challenge is to make a Eastern cuisine monkey brains.
04:02And apparently this is how we're going to achieve it.
04:04Could you tell us, are we actually using monkey brain?

06:30Now this is Leon Kennedy's famous dish, but it is the white wolf heart French aspic.

06:45And then we add the dry ice.

07:38Yeah, so this right here, we have Mount Fuji.
07:40I use these beautiful knives over here to carve out of a block of ice in a very dramatic little scene where it starts with a block of ice and I chop it massively,
07:50which turns it into sort of a pyramid shape.
07:53And then I just have at it.
07:54And then after about what?
07:56Let's go with a minute.

07:59We get this beautiful mountain shape here, which I will then use as my extremely dramatic and over the top plate for my dish, which is octopus.

08:39I think I'd be a pizza.

08:52See, unlike Adam, I wouldn't be something as basic as a pizza.
08:56I would be a pancetta and courgette linguine with a chili and white wine sauce.

09:05Explain it to us.
09:06It's a pancetta, so a ham-like substance.
09:08So if you don't have pancetta, you can use bacon, courgette, or zucchini, if you will.
09:11And then you mix that in with onions, a bit of chili.
09:14Let that just reduce, and then you add in some white wine, and then you add in your linguine.
09:17Just a very full-flavored and spicy dish because, hey, I'm a spicy...

09:23How do you know that dish?
09:24I have done that dish.
09:25It's one of my favorite dishes to make, and it sounds fancy, so I sound like I'm impressive,
09:29when really it's just pasta with some bacon-y, whiny vegetables.

09:41You know, I thought I could start over.
09:45I have a quiet life.
09:48That king of cooking shadow just keeps following me.

10:02I am Leon Kennedy.
10:05Now, this is sort of incognito Leon Kennedy.
10:11He is a world-famous chef, kind of famously known for a mask that he wears, a gold mask.
10:16No one really knows who he is.
10:18It doesn't really give anything away.
10:20He loses the love of his life right away, at the very beginning.
10:24And that kind of puts him into a deep, kind of dark depression.
10:30And the only thing he has left is his dog.
10:33He gives up everything else, which includes cooking.
10:36That leads him to a year later, to this restaurant, where he decides,
10:41well, maybe it's time I can get back into it, but let me just stay in the background.
10:45So he becomes a line cook.
10:47And then just the forces that I be bring him out.
10:51And he is forced to break some ice with his bare fist, show what he's known for.
10:57And everyone kind of realizes, wait a minute, are you actually the king of cooking?
11:03You are the missing king of cooking.
11:07Leon's the king of cooking?
11:10No, it's impossible.
11:12The Leon Kennedy?
11:14So the king of cooking has been working in our kitchen all this time?
11:18I never suspected it at all.
11:19But who else could make that dish?

11:24So traditional outfit, I believe for a line cook, really any one of the chefs.
11:29What it depends on is the hat, the cap, the smaller the hat.
11:34I think the kind of the lower you are in the ranking.

11:42Those are, those are the head chefs, but everyone else is kind of pretty much wearing the same thing.
