00:00so we're here in shrewsbury and we're here with anna hello anna i'm good thank you so your business
00:06we're featuring is called go on give us the name she's anna chock and bass so we know where the
00:11anna bit comes from but chez that was a bit of a nickname for you wasn't it yeah so when i was
00:16little my sister used to call me cherub because i obviously am or was and then as i got older
00:22and she'd shorted it down to chez so that's where it came from so tell us about your world um of
00:30sweets then i mean the clues in there you know there's some big juicy cookies even in front of us
00:35what is it you do then so i'm i make cookies uh mostly and i also specialize in ready to eat cookie
00:43dough but my day consists of baking cookies for many online companies um via my website or to
00:52cafes local um and i also make brownies blondies and all those naughty treats um but i'm also a
01:01trained chocolatier so i make chocolate bars using all natural ingredients and also belgian chocolate
01:07and at special occasions like valentine's and christmas i make truffles and hot chocolate so
01:14how do you become a chocolatier then how do you go down that road i trained with a company called
01:19um the chocolate company's calabert chocolate and i trained at the academy um down in banbury
01:25um 10 years ago but i also trained with um a mark tilling who won the professional bake-off
01:33okay and i went to train with him and um so then i did a few courses with the calabert training academy
01:43over a period of a few months um and then i also did another training course up in manchester
01:48um for a few days and with practice um i got more and more into the chocolate making
01:56and my specialty is um passion fruit and chili chocolate and i always use not i don't use
02:05synthetic flavorings i always don't use um like the real ingredients yeah um so yeah and then i just
02:14i have to obviously with chocolate maker it's very can be difficult because you have to heat the chocolate
02:20up when you've melted it heat up to a certain temperature then cool it down so then you get
02:24the professional snap okay shyness so it's quite uh scientific in a way yeah yeah yeah well you also
02:32do um cakes don't you wedding birthday cakes well so again i went on another course years ago with
02:38under mark tilling again um and he um well he did the training course on cape making but then
02:46i've also got cake making in my blood um i've got family who've had um cafes restaurants and then
02:54like hotels and things like that so and they've always done the baking so that has been passed down
02:59to me but i've um i do a lot of work i do my own sugar craft so i make all the flowers for the wedding
03:05cakes myself yeah um i like 3d cake so i quite like making cakes that are quite lifelike um yeah but
03:13yeah again using all like proper batter and all proper ingredients um just to make them taste
03:21so much better than than anywhere else really and we've got some cookies that are ready to be baked
03:27there some chocolate ones with cookie making i obviously make the batter but then i have to
03:34either freeze it or chill it sometimes between half an hour to 24 hours so when people put an order in
03:41they're practically freshly baked so then once they're all rolled up um i put them in obviously
03:47a pre-heated oven and then these are all kind of baked and then these are chocolate cookies um and
03:53then these are the chocolate chip cookies which i made they don't sound like the pizza these are the ones
03:58i'm eating yeah these are the ones yeah they look fantastic and they're a good size aren't they
04:02you're not messing about they're chunky cookies yeah they're bakery style so when you kind of crack
04:08them open they will be kind of soft inside yeah and i use like proper uh melty belgian chocolate as
04:15well yeah it's let's say it's all that natural kind of like chocolate so what's your favorite tipple
04:22then your favorite sweet treat in terms of out the world of cookies and brownies and when you
04:27said tipple then i thought we'd go on to alcohol yeah do you do any alcoholic chocolates
04:33i do at christmas yeah i like a bit of bailey's yeah bailey's chocolate have you ever done a bailey's
04:40cookie i've done a bailey's cookie oh well there you go right yeah i want 10 percent
04:44yeah um yeah um what's my what's your favorite little tipple then yourself in terms of like you
04:52know is it is it a cookie is it a brownie with something in it or i must admit i mean i love
04:58i mean it's naughty really to say i like all brownies and blondies and cookies but my i also do cookie
05:04dough so yeah the best of both worlds is when i've got a cookie coming actually um a new cookie flavor
05:11of actual cookie chocolate chip cookie yeah and then on top it's gonna be like um a smothering
05:18of um ready to eat cookie dough oh okay the best of both worlds though oh wow yeah yeah it's just
05:23it it's just something really naughty but yeah but if you put it in the microwave yeah and just heat
05:29it up a bit it goes really gooey yeah it makes a nice dessert and some ice cream yeah that sounds good
