00:28you somewhere I'm going to take you to canteen and yeah she's been talking it up. So this is my second
00:36book about Japanese home cooking my seventh in total cookbook but this one here I after writing
00:46Gohan which came out in 2023 Japanese home cooking is is really uncomplicated it's it's you know the
00:54really sort of it's the food that I make when I'm like tired hungry the kids are tired and hungry
00:59if we need something really quick open up my fridge what have I got you know and it's kind of pulling
01:03out whatever's there but in the pantry I have like soy sauce I have sesame oil I have rice vinegar I
01:09have all these like ingredients that are going to just boost whatever it is that I'm like pulling
01:14out of the fridge in desperation trying to find something quick to make and um and so I wanted
01:19to show people that that these like handful of ingredients okay handful and a half if you really
01:25if you want to stretch it um uh like really great um kind of source of of flavor and and nutrition to
01:34have in your pantry they can just be sitting there and you can kind of pull them out in case of emergency
01:39I've organized the book into like chapters so that you've got um each ingredient has a chapter
01:46um and to me these are like the essential ones and I'm going to just say straight away they're not
01:51even that the essential could be really even smaller than the seven chapters I've put in here
01:56I added two extras because I really like them they're essential in my house but not maybe not it for
02:02everyone but um there's soy sauce miso um seaweed it's really important uh rice vinegar sake and in the
02:13the sake chapter is really about um so cook using how to use cooking sake you don't have to go out
02:18and spend a lot of money on like really expensive bottle of sake but also mirin which is a sweet
02:23cooking sake and um and then there's so that's all in the one chapter then there's sesame which is
02:31one of the flavors that I would say isn't essential but I love it I love everything sesame flavored
02:36um we've got sesame oil sesame paste which is a lot like tahini you can use tahini um or um
02:44sesame seeds and then you have black and uh white sesame as well so there's a lot going on in the
02:50sesame chapter um and then tea and I put tea as an ingredient as well because I think um there's a lot
02:58actually you can do with tea leaves with matcha powder um and you can make desserts you can make savory
03:04things with it but um also tea I would say is is something to always have in the pantry as
03:11the drink that you would eat with a japanese meal traditionally you'd have tea with every meal
03:16it's very it's very different um where I live now is a really really small town maybe 2 000 people
03:25and they we're in a historical center so um lives in apartments that are that are on top of each other
03:32so it's a really small space but there's there's like the piazza is kind of the heart of the town
03:39all the little shops the schools everything is in walking distance it's almost like you've got just
03:45you're living in just your suburb you know like when I think of Canberra's now quite sprawled out every
03:50time I come back there's a new suburb somewhere but it's it is really quite sort of sprawled out but
03:55when you think when you kind of take your suburb and like maybe the shops that you have close by or the
04:00rest are super close by it's a little it's a little bit like that but a bit more walking distance
04:05yeah um friendly yeah yeah very variable so much to discover I think most people who come to Italy
04:12want to eat the food and um so yeah it's a travel book but it will also kind of be a food book too
