A south west baker is on a mission to change the way people think and cook when it comes to food waste. Local farmers and the food industry have joined forces, transforming second-grade produce into baked items for sale, showing even imperfect ingredients have a place in the kitchen.

00:00Bridgetown baker Will Courtum is preparing for the week ahead.
00:07Dried shallots.
00:11The German chef stocks his shop with products made from imperfect produce.
00:16It's always about minimising food waste.
00:19So whatever you see on the shelf, if it's the sweet and savoury condiments,
00:23the breads, the pastries, whatever you see on the shelf,
00:26it always has to feature a food that would have gone to waste otherwise.
00:29Not only is Will passionate about baking,
00:32he's also dedicated to educating consumers on the value of using every ingredient,
00:38no matter what it looks like.
00:40But we don't throw out the stalks as it is all about minimising food waste.
00:44We're using that in another way.
00:46I know that a lot of farmers obviously want to sell on their products to supermarket change
00:51and we as a consumer want everything to be perfect, perfect size, perfect shape.
00:55And that's when a lot of farmers are left with the imperfect fruit and vegetables.
01:00Will's idea to rescue products that would have otherwise gone to waste is a collaborative mission.
01:06He's working with Southwest farmers to make sure their second grade food is given a second chance.
01:13Passion fruit farmer Mitchell East has previously supplied Will with fruit deemed unsuitable for sale.
01:20See a few blemishes. If we start to get too much of that, that's what we class as unsaleable.
01:25While Mitchell processes most of his farm waste himself,
01:29the Bridgetown Baker provides a valuable alternative in reducing leftovers.
01:34It's sort of a multi-pronged approach on what needs to be done.
