Gavin Wight and his partner Michelle Smith have opened up their own cafe in Marmion Road, Southsea. Gavin was head chef at The Tenth Hole for 13 years.

00:00Hi, this is Gavin and Michelle from Allianz Cafe in South Sea. We're opening up today.
00:04It's just going to be your local cafe serving real food for real people.
00:10As much as possible, we're trying to do what we can from scratch, in-house, using local products.
00:17We're going to be changing up the menu quite regularly, hopefully every two weeks from September,
00:22seeing what the customer's like, taking feedback from the customers and incorporating that into the menu.
00:28I hope to become my little community cafe with regular visitors.
00:34Fabulous. So I understand you were at the 10th hole for a long time?
00:38Yes, I was a previous visitor here. I was at the 10th hole for the last 13 years.
00:42Great experience, a lot working with Lucy and Bill down there.
00:46But I just felt that I'd been there for so long, there's only so much that I can do.
00:50And I just felt the time was right to open my own place, which has been a lifelong ambition of mine.
00:56I was going to say, it's always been a dream.
00:58And it's just nice to make my own decisions.
01:00And yeah, I'm really excited and looking forward to what lies ahead.
01:06And my son, who's just 14 at the moment, as soon as I get the work permit sorted out for him,
01:11I really want to get him in the kitchen and be a real family business.
01:15And I understand the cafe's named after your...
01:18The cafe's named after my daughter, Eliane.
01:20Lovely. So tell me some more, you know, what future plans are.
01:25Future plans are, at the moment, we are solely concentrating on Eliane.
01:30We don't want to have a chain, we just want to have one business that has our sole focus.
01:35And just, yeah, just wait and see what the feedback's going to be from the customers.
01:40And incorporating their wishes into what they want to see on the menu.
01:46Fabulous. And lastly, just tell me what your opening hours are, so people can come down.
01:49Opening hours are mainly going to be 9 till 3 at the moment,
01:52until we find what the football's going to be and when the customers want to come here and eat.
01:57Fridays and Saturdays, we will be open until 4.
02:01But again, things are going to be changing as time goes on.
02:05If the customers are here, want us to stay open a bit later,
02:07then we'll be staying open a bit later or opening up earlier.
02:12Okay, so guys, what we're going to be using as well is like Broadway coffee beans.
02:17Spokes into here and these seem to be very nice and we're hopefully going to get them in.
02:21All different ones, we're using Corks and River Tea.
02:24We've got all different private teas in.
02:27One of our companies that we use is Spaniola.
02:30They're absolutely brilliant.
02:32Hopefully we will be going a bit more into Portsmouth so we can use local stuff
02:38and to get things coming to us.
02:41If you do have any ideas for certain things that we can use,
