00:02:57A couple of guys came past on skateboards and he just went crazy.

00:09:44Now, lucky for us, Brad has cleared out all this soil, which is perfect for a deck, because
00:09:58we need to have clearance of at least 150 underneath our timber.

00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts, and then set our joist at 450 centres.
00:10:11This is pretty easy to dig it, isn't it, Poe?

00:10:15This area up here, the top of the garden, is going to be our main entertaining paved
00:10:30space, and we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up, and when you bring it up, you need to retain the sub-base.
00:10:39For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:46You normally see me use it in a garden bed where you just put a stake in the ground, and
00:10:49you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:52So I'm just using some angle brackets, which I'll attach to this concrete hob wall to give
00:10:57me a nice secure edge.
00:10:58We're going 150 step up, so it's a nice step up from Adam's deck, but it does come in a
00:11:03huge range of sizes, so it's really versatile, and will suit most gardens.
00:11:09With all the holes dug, they're about 600 mil deep, and now we're ready to put the posts
00:11:34in for that.
00:11:34We're just using some H4 treated pine.
00:11:37You want to make sure the main part is you get some concrete underneath the post, and
00:11:41obviously all the way around it.
00:11:43That way, it supports the light.
00:11:44As we wrap around the back of Adam's deck, I'm going to have a planter box.
00:12:04I'm using the same steel, but in a higher profile.
00:12:07That means we're going to get more soil in here and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner, but you can bend it yourself on site if you
00:12:15want.
00:12:15If you don't have a right angle, they can do custom work for you as well.

00:14:05station down the road, you also have a huge amount of sort of high-density developments
00:14:09that are springing up absolutely everywhere.
00:14:11It's got that vibe of a mini-city, which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what, I feel like I need to head off and do a bit of real estate
00:14:18research for myself, and I reckon I can guess the direction you're all in.

00:14:35If you love history, walking the back streets of Crow's Nest, you can certainly get your
00:14:40historic fix.
00:14:41Now, the suburb first took shape in 1821, thanks to a land grant to a bloke by the name
00:14:47of Edward Wilsencraft, who built his home and called it Crow's Nest, thanks to its commanding
00:14:53view.
00:14:53Since then, the suburb has grown up with a full cross-range of architectural styles, from
00:14:59Federation, Queen Anne, with the beautiful timber detailing, the fretwork and ironwork.
00:15:05It's a full cross-range of architectural styles.
00:15:08Combine all that with the luxuries and conveniences of a modern city.
00:15:12Wow, Ewan, this is just a wee bit gorgeous.
00:15:30Now, obviously, we're at the luxurious end of things that we're talking about.

00:15:58And as they build newer and newer buildings, you get a much different standard.

00:16:08Well, I mean, we could sell you a little studio, like a studio apartment in the middle of Crow's

00:16:14So, you know, they're very good value, you know, anywhere around that $600 mark.

00:19:12The reason we love this site so much, it's right in the middle of Crowsnest Village, and
00:19:16it's that old architecture combining with this new, modern high-rise, and I think we've
00:19:22got the balance right.
00:19:23Our podium is wrapped in old bricks that looks beautiful and timeless, and now people get
00:19:28to live above the metro, the only site in Sydney, and in minutes just to anywhere.
00:19:32To think that we're getting to build a once-in-a-generation project on top of a billion-dollar piece
00:19:38of infrastructure, it's a dream come true.
00:19:40Four Third Eye, and I think the residents are going to love it.
00:19:50Well, Pete, as we've touched on, I think the real appeal of Crowsnest is that mix of the
00:19:54old and the new.
00:19:55I mean, it really does encapsulate what a lot of suburbs are experiencing in the 21st century.

00:20:09Although, I don't think we have focused on one of the most important things.

00:20:14Coming up, meet the little balls of potato, giving pasta a run for its money.
00:20:23I think that is a gnocchi that even a nona would be proud of.
00:20:29Adam and Tarly will do whatever it takes to bring this entertaining space to life, no matter
00:20:34the consequences.
00:20:36I'll tell you what, this wind is not doing wonders for your hair, is it?
00:20:38I need some manscaping, that's for sure.
00:20:40And their colour may be curious, but these brownies are off the charts great.
00:20:46That whole batter is going to turn bright green.
00:20:57Alright, believe it or not, this accent is not Italian.
00:21:02But I can cook gnocchi, and today I'm going to make you a special gnocchi, which is a green
00:21:07gnocchi, with burnt butter sauce, and baby beets.
00:21:14Alright, so basically gnocchi is potatoes, it's flour, and it's eggs, and you can flavour
00:21:20it with herbs.
00:21:21You want your potato as dry as possible.
00:21:24So what you're going to do is, you've got your potatoes, I line the bottom of the tray
00:21:28with some rock salt, just some chief rock salt, and lay the potatoes on the salt.
00:21:33So it's about 10, 11 potatoes, which is 1.2 kilos, in the oven for about 40 minutes to
00:21:39an hour, until they're beautiful and soft.
00:21:41I like to flavour the flour with the herbs, so you get all that green running through the
00:21:46gnocchi and you get all the flavour.
00:21:47And the best way to do it, is to blend it.
00:21:51I got about 110 grams of flour.
00:21:53So that goes into my mixer, as messy as I can.
00:21:59Bunch of sage.
00:22:02That goes in.
00:22:05Rosemary.
00:22:07Just take it off the stalk.
00:22:12Italian parsley.
00:22:13It's the only Italian bit in the dish.
00:22:15And now, just give it a blend.
00:22:22Alright, so have a look at that.
00:22:25Oh, you can smell it.
00:22:31Alright, so, the potato, soft, salt's done all its job.
00:22:35What we want to do now is, there's no way around this, you've got to do it when it's
00:22:38hot.
00:22:39If the potato gets cold, the starch locks in, and you're not going to get a good gnocchi.
00:22:43So you're just going to cut them in half.

00:23:02If you don't have a potato ricer, you could just mash them up really fine.
00:23:06You're going to scoop out your hot potato.

00:23:23You've got to cheese it up.
00:23:25Parmesan.
00:23:27About 200 grams.
00:23:31Alright.
00:23:32We've got our flour we did earlier.

00:23:38There's our flour.
00:23:39So I like to gently fold it through before we put the eggs in, just to incorporate all
00:23:45that flour.
00:23:46Now we're going to add three egg yolks, just to lock it together.
00:23:51This one binds it.
00:23:55One.
00:24:00Two.
00:24:01And then the tool I use to bring it together, very kitchen-y, use a paint scraper.
00:24:13Because it helps get in.
00:24:15You don't really want to work it too much with your hands, you want to work it with the steel.
00:24:18So just chop it in.
00:24:25A little bit of our flour, just on the bench.
00:24:29So it's all by touch.
00:24:31So just take it out.
00:24:32Obviously you don't want it wet and gloopy.
00:24:35And all you want to do, is you want to bring it together.
00:24:38It's not like bread, you don't want to knead it.
00:24:40You just want to bring it together.
00:24:41All right.
00:25:06Just give your gnocchis a little squeeze, just for presentation.
00:25:10Lay them on your tray.
00:25:22All right.
00:25:22Now what you do is, straight into the boiling water.
00:25:29So, easy way to tell if your gnocchi's cooked.
00:25:31What happens is, you drop it into the boiling water, it sinks to the bottom.
00:25:35As it cooks and the egg cooks inside, it rises to the top.
00:25:38That's when you know it's ready.
00:25:40Scoop it out.
00:25:41There we go.
00:25:44Look at that.
00:25:46A little bit more firm.
00:25:47Not too firm.
00:25:55All right.
00:25:56Gnocchis, put them in the warm oven.
00:25:57It's turned off.
00:25:58Just leave them there to warm.
00:25:59Good gnocchi needs a good sauce.
00:26:02A good sauce can be a very simple sauce.
00:26:04So about 250, 300 grams of butter into a warm pan.
00:26:09It's going to separate and it's going to caramelize.
00:26:11We're going to get a nice brown color.
00:26:15Get our sage in.
00:26:17So you're going to get a nice crack smell.
00:26:18You ready?
00:26:19Cook your sage until it's crisp.
00:26:27Add your capers and your juice.
00:26:29About 100 grams.
00:26:33A bit of stir.
00:26:34Oh, yeah.
00:26:38Now I'm going to use the zest for the lemon and the juice.
00:26:41Give that a start.
00:26:55Beautiful.
00:26:58Just going to toss them through the sauce.
00:26:59So that's like that.

00:27:09So you've got your warm gnocchi.
00:27:10You've got your beautiful butter sauce.
00:27:23Pair your gnocchi with a vegetable that's in season.
00:27:26So obviously, raw baby beets.
00:27:28So just cut it nice and fine.
00:27:29Toss that in the bowl.
00:27:34A little bit of our dressing.
00:27:38Stir it.
00:27:40Bit of the green.
00:27:41Look at that.
00:27:45And then, always, always, more cheese.
00:27:50I think that is a gnocchi that even a nonna will be impressed with.
00:28:00Do you remember that great Aussie film classic, babe?
00:28:22Well, it was set in the green heart of the southern highlands of New South Wales, right here, in fact, in the rolling hills of Robertson, a rich volcanic soil and an abundance of rain.
00:28:34That has also helped to create some of the finest picture book gardens in the country.
00:28:39The Moorings is a 40-hectare heritage farm.
00:28:51It was established in the 1870s by a naval lieutenant.
00:28:57Now, back then, he bought 100 acres for 100 quid, a great deal.
00:29:03Today, the current owners have restored the original homestead and have extended it.
00:29:09But for me, what is really magical, they've also created a two-hectare ornamental landscape with foliage and year-round interest at its heart.
00:29:18Once you come down the driveway into the turning circle here, where the coach and fall would have dropped off its passengers to the homestead,
00:29:35it's a very different wintry look with these bare tracerier branches going up into a grey sky.
00:29:41They create the skeleton, the bones, the structure of this garden, especially they're visible in winter.
00:29:47But, you know, there's a more permanent look in this garden that's here every single day.
00:29:53It's these clipped hedges of azaleas, of camellias.
00:29:57But the flowers are secondary to the forms and the shapes that they come in.
00:30:02And this is only the beginning.
00:30:13The Conifer Garden has to be the signature piece of this property.
00:30:16In fact, it's probably one of the best in the entire district.

00:31:06It's got that winter colour, doesn't it?
00:31:08Absolutely beautiful.
00:31:09Now, Don, obviously, he has, what, has he got a horticultural degree?

00:31:19But he really had a passion for plants, obviously.

00:31:22So, Liz, how long does it take you to keep this conif garn looking so neat and tidy?
00:31:36Probably about a day and a half with the whole, all the fine little bits and pieces and having to get in.
00:31:43How often, though?
00:31:44Probably every three months.
00:31:46Oh, all right.
00:31:46Once it starts to get a little bit of legginess on it.
00:31:49Yeah, a bit of furry.
00:31:50A bit of furry.
00:31:51I just love this golden hanoki cypress.
00:31:55The interesting thing, it's like it's been sprayed with gold paint because it's all gold on the top but green underneath.
00:32:00Yeah, there's always something to look at in the conifer garden all year round.
00:32:05Just gives that little bit extra.
00:32:06It's a real lift, isn't it?
00:32:07It's at the front of the house where the magic really reaches its peak because you've got this wonderful view and the homestead itself.
00:32:24The tree, the poplar, was most likely planted by the naval lieutenant.
00:32:28It's a really old, old tree, well over 100 years of age, like this beautiful brush box.
00:32:34This my excavation tool.
00:32:39In later years, the garden provided a great opportunity for Don and his wife Barbara to entertain the grandchildren and they just loved the garden.
00:32:50It's really Don's plant selection that has helped Les create these beautiful clipped hedges and domes and shapes like this Eliagnus here.
00:33:00There is a bit of variegation in it, but it's nice and tight and compact.
00:33:04The secret when you're wanting to select these plants is small twiggy leaves and twiggy growth.
00:33:10Bigger leaves, you've got too many gaps in the dome.
00:33:13And look at this Laura Petalum.
00:33:15You just look across the top there, you can see those pink new growths up against the blue sky.
00:33:19It really is quite stunning.
00:33:21But the scene is set by this beautiful conifer archway.
00:33:25As you go through, don't forget to look up to see the bones, the structure.
00:33:30That creates this wonderful archway.
00:33:46The fascinating thing is that every room, including the conservatory, looks out over this spectacular view.
00:33:55Do you know, it doesn't matter what century you're building in, that real estate saying of position, position, position, still holds firm.
00:34:05It's all about this glorious view.

00:35:27From a backyard that was a concrete jungle to a beautiful entertainment zone.
00:35:32Well, that's the plan that Charlie and I have anyway.
00:35:38And for our decking boards, we've gone with a nice hardwood.
00:35:41Now, for this one, I have chosen Merbu or Merbau.
00:35:44Now, these are sustainably sourced.
00:35:46They come in beautiful long lengths.
00:35:48They'll span our whole deck and they're 140 wide.
00:35:51So, they're going to tie in with our fence and this whole entertainment area perfectly.
00:35:57It is well worthwhile putting some time and thought into your paving layout because you
00:36:22do need to consider drainage.
00:36:24Now, think of this as a big umbrella that's going to catch water.
00:36:27You need to direct that somewhere else.
00:36:29You don't want to send it to the neighbours and I want a nice flat line here so when
00:36:32it meets Adam's deck, it looks like it's well thought out.
00:36:35So, we're draining upwards this way.
00:36:38That also sets my layout for my pavers.
00:36:39I'm using 600 by 400 because I want that contemporary look but I'm doing a stack bond
00:36:43back just to accentuate the lines of the decking.
00:36:46Now, this is a colour called Cypress and I know what you're saying.
00:36:48Why are you using a light colour like Cypress when it comes to an entertaining space?
00:36:52Well, these have been pre-sealed so you can spill as much wine on them as you like.
00:36:57Standing in the light, breathing in the time, it's just like paradise.

00:37:11Charlie and the guys have done a fantastic job on this paving.
00:37:24It's looking awesome but now it is time to address this eyesore.
00:37:28For that, we've built a simple frame just using some 90 by 45 treated pine and what we're
00:37:34going to do is slide it into place and use this existing fence on each side to fix it
00:37:39off and then I'm going to get some shiplap cladding out of the cement sheet and we'll
00:37:43clad it.
00:37:43It's going to look fantastic.
00:37:44Before we can move on with the rest of the garden, we have to address the asbestos on the shed.
00:38:11So, we've brought in the professionals to sort that out.
00:38:29Our backyard is coming together but what about our old laundry shed?
00:38:34Well, the asbestos guys have been and gone and we've got our safety certificate.
00:38:38The team is hard at work and they've started with fixing up this framework for our new
00:38:43servery.
00:38:44Now, because so many Aussie backyards have old sheds just like this one, there's a heap
00:38:49of information we want to share with you about the safe testing and removal of asbestos.

00:43:26then this is the recipe for you.
00:43:28My white chocolate matcha and macadamia brownie.
00:43:32So we're going to start off with melting the white chocolate.
00:43:35Here I've got 175 grams of white chocolate.
00:43:39I'm going to chop them into smaller bits.
00:43:45I'm going to melt the white chocolate on a double boiler.
00:43:52All you need is a saucepan and a bowl
00:43:55with water underneath it boiling.
00:43:59Now to that, I'm going to add 195 grams of unsalted butter.
00:44:04This will take no time to melt.
00:44:15Just keep an eye on that.
00:44:24That is done.
00:44:26It's nice and smooth.
00:44:28I'm going to take it off the saucepan
00:44:29because what I want to do is I want to cool it down
00:44:33before I mix it in with the other ingredients.
00:44:37In a separate bowl,
00:44:39I'm going to mix 220 grams of white granulated sugar.
00:44:48Three eggs.
00:44:49So it looks like the sugar has melted.
00:45:06I'm going to add about one tablespoon of vanilla essence.
00:45:10I'm going to eat persuad död.
00:45:15I'm going to eat
00:45:16one more saucepan to try it.
00:45:17I'm going to actually have a prawda
00:45:19줘 and a sticky dough
00:45:19with no heartсти.
00:45:30Add this to my egg and sugar mixture.
00:45:34Next to the dried administer steer
00:45:35next the dry ingredients sifting 145 grams of all-purpose flour
00:45:46I've got two tablespoons of ceremonial grade matcha
00:45:54I suggest to get the ceremonial grade matcha for this recipe
00:45:58sift that in with the flour
00:46:04got sea salt here
00:46:08got one teaspoon
00:46:12if it's a coarse sea salt try and break the little granules a little bit before you put it in
00:46:19give it a quick stir
00:46:29and now I'm going to add it to the wet ingredients
00:46:32add a couple of tablespoons at a time and just fold it through
00:46:37it's a white chocolate brownie so I've got more white chocolate
00:46:54here I've got 150 grams of white chalk chips you can add as little or as much as you want
00:47:02but try to stay away from too much because you don't want it to be too sweet either
00:47:08so just slowly fold that in
00:47:11and then I've got the macadamia nuts
00:47:16I'm going to give it a quick rough chop of the macadamia nuts
00:47:22I've lined 20 by 20 centimeter pan with some baking paper
00:47:40it is going to taste delicious
00:47:45into the oven at 160 degrees
00:47:51for about 25 minutes
00:47:56this looks just about done
00:48:06and you can still see a little bit of the batter on it and that's perfect
00:48:17two hours to cool down before we serve it
00:48:24it's going to be easy now to just lift that up
00:48:36and take all of that out
00:48:43and for the topping you can leave it as it is
00:48:48doesn't make a difference but if you want to make it look a little bit prettier
00:48:52just a slight dust of matcha powder
00:49:06I'm going to take the biggest one here
00:49:11out of this slice

00:51:07the trees i'm using for my hedge are called iliocarpus reticulatus
00:51:22otherwise known as the blueberry ash
00:51:24now this is a native that i absolutely love
00:51:26it gets covered in sort of a nodding flower
00:51:28which has a fringe on the end
00:51:29which turns into a blueberry
00:51:31which is a perfect food for native birds
00:51:33now this does turn into a tree
00:51:35but it is quite columnar which means it grows upright
00:51:38and you can prune it
00:51:39what i'm imagining here is
00:51:40well i'm gonna grow it upright against this fence
00:51:46because it looks fantastic
00:51:47but as it gets bigger keep it quite narrow and pruned
00:51:50you can remove the lower branches
00:51:51which will give you more space below
00:51:53to introduce some more planting
00:51:55look at you
00:52:04place and plants
00:52:05i've got no idea what i'm doing charles
00:52:07that's all right
00:52:07just make it up
00:52:08maybe i've made a career out of it
00:52:09because we're planting this garden up in the middle of winter
00:52:17i'm using a lot of textural plants
00:52:19just to add some interest
00:52:20now we've got some really broad leaves
00:52:21like the ligularia
00:52:22some flying clipped leaves
00:52:24like this with stringer
00:52:25but i'm also using some strappy leaves
00:52:27we've got fine strappy leaves
00:52:28in the common rush

00:52:30we've got slightly thicker
00:52:31in the liry oak
00:52:32and then sword shape
00:52:33in the sansevieria moonlight
00:52:35it's going to give us a really nice planting scheme

00:59:27in the colder months of the year there are some landscapes that really stand out and create a beautiful serenity
00:59:52here at the moorings garden in the southern islands of new south wales is one such garden
00:59:57it is just so beautiful at this time of the year
01:00:00the weeping willow reflected in the pond
01:00:03and of course the silver birch
01:00:05even the trunks covered with a little bit of lichen
01:00:08the japanese maples
01:00:10bear
01:00:11and stark
01:00:12and then of course with seasons sort of rotating getting mixed up
01:00:17we're so lucky to see these beautiful red-hot pokers the nyphophia
01:00:22this variety is tall and elegant with its great spires these flames of orange and red
01:00:27it's a real standout here looking across the landscape
01:00:31and the pond looks even more mysterious
01:00:34the brilliance of the owner to create these intimate enclosed spaces garden rooms if you like
01:00:52we've seen so much of
01:00:54but here he's thrown the garden design book out and created something completely different
01:01:00this is the sculpture garden
01:01:10but he's allowed the trees to tell their story
01:01:13whether it's conical, weeping, vase shape, whatever the trees are
01:01:17they're looking natural
01:01:19but instead of enclosing he's pulled the curtains back
01:01:22you know maybe japanese borrowed landscape style
01:01:25and what a landscape it is
01:01:27this is the Yarrawa brush
01:01:29the last remnant cool climate rainforest in the area
01:01:33highly protected
01:01:34and what a vista
01:01:36anywhere the wind blows
01:01:38it doesn't really matter
01:01:40cause it don't just ends the same
01:01:44but as it ends the same
01:01:45the fascinating thing about this garden
01:01:47the more you explore the more you discover
01:01:49and this area here could be no more of a contrast
01:01:52than the one that we've just been in
01:01:54here it reminds me that so many people ask me
01:02:04oh what happens when I grow these beautiful trees
01:02:06and it creates a totally different environment
01:02:09shade moist soil
01:02:11and all your roses and azaleas and things tend to disappear
01:02:14well why not go for Australian
01:02:16beautiful ferns
01:02:18we've got a fantastic collection of ferns
01:02:20that grow in these sorts of locations
01:02:23the tree ferns
01:02:24these beautiful bird's nest ferns
01:02:26I just love them
01:02:27they're so dramatic
01:02:28and sculptural
01:02:29architectural in the garden
01:02:30rasp fern
01:02:31talk about architecture as a ground cover
01:02:33and then of course
01:02:34yep
01:02:35good old bracken fern
01:02:36we're always poisoning it to get rid of it
01:02:38no let it go wild
01:02:39and here you've got a beautiful scene
01:02:42an evergreen
01:02:43every day of the year
01:02:45looking beautiful
01:02:46you know it never cease to amaze me how these grand extensive gardens in the country
01:03:03are filled with great ideas that we can borrow
01:03:06maybe it's a case of just setting up a theme
01:03:09or possibly selecting some plants that will really you can clip and train
01:03:14people looking at some of the conifers that were always good and still are
01:03:18and lots of permanent annual colour in our gardens
01:03:22and we have the owners to thank for creating something so special and sharing with us
01:03:27but you know that's what the gardeners do
01:03:29the problem with curtains like this is that when you use them for privacy during the day you're also blocking out all of that natural sunlight
01:03:43but I have a great trick for your curtains that's not only practical it also looks amazing
01:03:48I'm using a double rod and that will allow me to put a block out blind closest to the window
01:04:10and then a lovely soft sheer on the inside
01:04:13and I've also put in this timber pelmet from the ceiling
01:04:17and that's going to give it a much more elevated high end look because it will hide all of that hardware
01:04:22custom made curtains can be really expensive but this is a brilliant way to get the same look using ready-made curtains
01:04:41traditionally with a double rod the curtains would be hung in the opposite way so the sheer would be closest to the window
01:04:47but this way is much more contemporary and makes a whole lot more sense to me
01:04:51because having the block out closest to the light source means that you're blocking out more light
01:04:56and then this lovely soft layer on the inside of the room adds another detail to the design
01:05:04now that we've added in some more texture and detail to this bedroom
01:05:07you can see how these gorgeous soft curtains really elevate the space
01:05:12one of the key features of hanging your curtains like this is that you can control the level of privacy
01:05:19and also the amount of light coming into the room
01:05:22and another trick is to hang your curtains wall to wall and from the ceiling
01:05:27that way you get that really luxurious look
01:05:30the pelmet helps with that as well
01:05:32I think you'll agree for off-the-shelf curtains these ones look pretty high-end
01:05:36so you've heard Pete and I talk about all the various dining options in Crow's Nest
01:05:57so we thought you'd better try it out for ourselves
