This cheesy side dish is light, fresh, and comes very closely to capturing the comforting taste of a slice of pizza. In this video, Matthew Francis makes baked parmesan tomatoes with fresh oregano and a drizzle of olive oil. To make this vegetarian recipe, individual tomato slices are covered in a generous amount of parmesan cheese before being baked in the oven and served over bread.
