The tapas restaurant has just moved to a new location on Abbey Dale Road, and owner Georgia Rose took the time to share how thrilled she is with how everything's going.
00:00So it's been really exciting. It's sort of why I envision myself moving like into a restaurant in the first place.
00:08The first one we had was a really good starting point, but it was never going to be permanent and it was never going to be enough.
00:14And then this sort of opportunity fell to us, which made it like too good to be true.
00:21So as soon as we came to look at this new place straight away, I was like, that was what I envisioned in the first place.
00:26This would be like my actual dream.
00:30Um, which is a really nice feeling. I feel like a lot of people don't get to even say that or like experience that.
00:35Um, I'm really proud of the menu that I've created.
00:39It's a combination of lots of different cuisines that all merge really well together.
00:44And the old owner was kind enough to teach me some of his recipes before he left.
00:48Um, and I've wanted to put pasta on my menu forever and he told me how he makes all of his.
00:54So we've been able to add small plate versions of all the pasta dishes to the menu I'm doing in the minute, which is like an extra layer that I think a lot of people are really enjoying.
01:06Um, it's a lot more work, but it's all for the best and it's all for me.
01:11Uh, my team are incredible. They work just as hard as I do, which is nice.
01:16Um, in, and we've managed to get to a place where most of our stuff is either homemade and including all the veg that goes in the food.
01:24Uh, a lot of it is actually grown by my dad, who has taken, taken it upon himself to produce a large amount of the veg that I'm eating.
01:33So that's been really nice.
