39:59you recruit? So at the moment, Mark, we run an apprentice-based sort of thing. I get the
40:05engineers in young, we train them, we teach them, we show them the ropes. I pride myself
40:10for my work and I feel like I am the best at what I do and if I can teach them how to
40:16install air conditioning to my standards, they will go a long way. Dean, what I want is just

47:57What I've done the last few years is hone my operations.
48:00So my average review number on Uber Eats is 4.7.
48:04On Just Eat, it's 4.8.
48:06On Deliveroo...
48:07It's really high.

48:09So I've been consistently good.

50:48So, Anissa, whilst you say that your recipe is unique to you, could be quite easy to copy, I think, no?
50:57What makes it special is we're honed in to just Indian-style pizzas.

51:01For example, if I went to Pizza Hut or Domino's, I wouldn't necessarily trust them in making authentic toppings.
51:06With the money, I would be able to develop my current kitchen to become a central hub,
51:11and then develop other dark kitchens around it.
51:13It's a very cost-effective way of scaling and getting my pizzas out there to more people.
51:18So, what is in the dark kitchen, then?
51:20Um, so with dark kitchen, you only need one person there.
51:23Because the ingredients are all cooked beforehand by professional chefs, you only need someone to assemble it.
51:28It's a lot cheaper than making a brick-and-mortar store, because if you think of the space you need,
51:32it's smaller than this desk.
51:34So, my investment could fund a cup of new dark kitchens, is that right?
51:39Yes, correct.
51:39What do you do next? How do you fund the fourth one, or the fifth one, or the sixth one?
51:44Because the profit margins are so high, my goal was to have 10 within five years,
51:48and I think that's very reachable. There are bigger brands for doing it even quicker than that.
51:53So, what's your profit potential in five years' time with 10 all singing and all dancing?
51:59So, we had around half a million pounds profit with the 10.
52:02Sounds good, but it's got to be done. It's got to be achieved.
52:07Now, Dean, according to your figures, your next set of accounts is going to show half a million.
52:12Yeah, before we come into this process, I had it done, and it showed 11 months was 461.
52:16Right. And your guesstimate of profit on that?
