00:04aside a little bit that I can spend on a big beauty haul that I do every couple of months.
00:09The last time I did one of these was in December so I definitely needed to stock up again.
00:13I find that writing everything down and doing this big beauty haul every couple of months
00:18instead of doing bits every week actually helps me save money. First up I went to Superdrug and
00:23I spent £22.99 there. I got these two hair dyes. These were on offer, it was two for £12 and the
00:31other thing I got from Superdrug was this Lasting Finish Powder Foundation. At Home Bargains I got
00:37everything for £13.25. I'd run out of my micellar water, this is the Simple Micellar Water. I like
00:42this one because it's fairly cheap and it's sensitive on my skin. I like to treat myself
00:46to a face mask when I do these beauty hauls. I think these were £99p. I don't know if they're
00:50good, we will see. This is some shampoo and some shower gel. Finally I got this body cream. I have
00:56never tried this before but I thought it smelled quite nice so we'll try that. This is what we had
01:00for our dinner this week as a vegan couple on a budget. First up we have Orzo with roasted
01:05chickpeas and tomatoes and some salad leaves and I made a lemon and garlic dressing to go with.
01:10Next up we had a butter bean stew because it was a bit miserable this day. It had courgette, spinach
01:14and mushrooms in it. Get ready for a jump scare. No other colour looks radioactive but it's so good.
01:19Spinach and tofu in the sauce. I added some peas and topped with roasted courgette. Wowee, look at that
01:24gochujang tofu. I'm not going to say much about this one but I've got a recipe coming on Wednesday
01:29so make sure you follow for that one. Classic in our house is this chickpea and spinach curry because
01:33it's super easy to make and it's really cheap too. We had ours with rice this time. On Friday we got
01:39these chips from our local chippy. Cooked up these Aldi no battered sausages and had with curry sauce
01:45and mushy peas. Today I'm going to show you how to make this gochujang tofu. It's one of my faves
01:49because it's cheap, easy and it tastes so good. So I'm making the slaw first. This is carrots and red
01:54cabbage. I feel like carrots and cabbage last really well in the fridge which means I can always whip up
01:59this slaw easy. Slap a bit of lime on top, some rice wine vinegar and then mix it together. Tofu time.
02:05Pull the tofu into chunks, add some nooch and some corn flour. Mix it together and stick it in the
02:10air fryer. The sauce is pretty easy. I'll stick the recipe in the description. Once the tofu's nice and
02:15crispy I'm adding it to a pan and putting the sauce on top. The sauce thickens nicely because
02:19of the corn flour on the tofu and it's a perfect combo of salty, sweet and spicy. Oh look at that.
02:26I had mine with rice and I also topped with some sesame seeds and some spring onions. I think
02:32overall this took me 15 minutes to make. I find that this meal's perfect for meal prep and the
02:37tofu tastes even better the next day. So if you're looking for a new recipe this is the one.
02:42Our weekly shop was £23.96. I'm going to show you what we got as a vegan couple in their 20s who
02:48are on a budget. Here's the proof. In here we've got six dinners, six lunches, a bit of breakfast
02:53and some other bits. First up we're having lentil bolognese. I've got some lentils, some tinned
02:58tomatoes, some celery. I've got carrots in the fridge and I've already got pasta. For one date
03:03we're having a Mediterranean inspired bowl so I'm going to roll some chickpeas, some hummus, some
03:08olives, some tomatoes and cucumber and then some pittas. Next up I'm having a kale and chickpea
03:16salad. For that I've got chickpeas and some kale. In the cupboard I've already got big couscous,
03:22sauce and some nuts that I'm going to put in the salad. I'm also going to use the kale for a
03:26different meal. I'm going to have kale pesto pasta so I'm going to incorporate a bit of basil with
03:32the kale. Have this with some peas. Next up I'm going to have some jackfruit curry. I've got the
03:38jackfruit already in my cupboard so I bought some tinned tomatoes and some coconut milk with that.
03:42I'm going to have that with rice. On Fridays we either have a takeaway if we want to spend a bit
03:46of money but if we don't we just have something quick and easy. So I've got a pizza in the freezer
03:51and I thought I'd do some homemade wedges with it with salad. I also got some wheat biscuits,
03:56some pitted dates, oat milk. My boyfriend drinks fizzy drinks so we got him this Dr Pepper from
04:02Aldi. Three bananas because next Sunday I want to make a banana bread. For my packed lunches I've
04:08got some easy peelers and some wonky grapes. Some frozen blueberries for my breakfast and finally I
04:14got some bread for some brekkies. Our weekly shop came to £22.80 this week. I'm going to show you

04:46chickpeas and a bit of salad. Next up we're having summer rolls this week so I've got red cabbage,
04:52cucumber, spring onions, two packs of tofu, some rice noodles, half a pack of carrots because my
04:58mum was there and she was like I'll have half of that so she took half. Next we're having a tomato
05:03bean bake and I'm using some courgette in that because there was two in the packet and some
05:08spinach and we're having with some bread. Next up we're gonna have gotcha jam tofu one day and we've
05:14already got rice. I'm gonna make a slaw with the carrots and cabbage that I've already got from the
05:19summer rolls. The final meal for the week is a chickpea and spinach curry. I've already got my spinach
05:26so I'm just gonna do that with rice which I've already got. Some other bits I got that weren't in
05:30the meals were some red seedless grapes, some easy peelers just for my packed lunch, some hummus for
05:37my breakfast some days. We needed some oat milk, frozen blueberries for breakfast, got some bread
05:43for my partner's breakfast, my breakfast for our butter bean stew. For tea tonight we're having a
05:48vegan Chinese and I thought I'd show you what we ordered. Curry sauce, some chips, these are sweet
05:54and sour chicken balls. In here we've got black bean tofu, my personal fave chicken satay. Also got
06:02two fried rice. We're starters kind of people so we always have our starters first. So I'm gonna dip
06:09one of these in. This is what it looks like inside. These are the chips, they're perfectly crispy.
06:17This is how I want my chip to look, like I want it golden. I'm getting some fried rice.

06:35So this is the black bean tofu. The tofu is puffed tofu so it's super soft.
