00:00What are your favorite go-to roasted veggies?
00:02For me, the ones I'm chopping today have lots of color and nutrients,
00:06but you can totally use whatever veggies you like or have on hand.
00:10All you need is evenly sized pieces and season with salt,
00:13pepper, olive oil, maybe some herbs.
00:15That's it.
00:16Let the veggies shine, then roast them on high heat
00:19so we get those crispy brown edges and tender centers.
00:23And the best part, one pan means minimal cleanup,
00:26so less time scrubbing and more time eating.

    Olive oil is fatty, but it is not going to increase the level of cholesterol in your body. It is meant to be one of the healthier oils out there because of its high omega-3 content per serving, which helps LOWER cholesterol.
