00:15Beautiful sunny day in Montreal, perfect weather for today's spot that recently began offering
00:19its already recognizable boxes full of sushi. Sushi Department is the sister ghost kitchen
00:24to Montreal's higher-end sushi restaurant, Rayu, aiming to hit the same levels of quality
00:29at a way more affordable price, and delivering it in the brightest shade of fuchsia your
00:34eyes have ever seen.
00:35The sushi department is obviously not traditional sushi. We have a lot of experience with traditional
00:40sushi, Rayu sushi being the brand that we've had for years. We wanted to do something a
00:46little bit different that was a lot more accessible for people. We mix interesting flavors, we
00:51mix new flavors, so yuzu with salmon, spicy tuna, we have our spicy tuna crispy rice,
00:57which is obviously not traditional at all. Today, we're going to give you a little bit
01:01of everything. Spicy tuna crispy rice, salmon yuzu crispy rice, and our famous avocado truffle
01:07crispy rice. The big crab hand roll, we have our spicy salmon, spicy tuna, kamikaze roll.
01:13You're going to get to try a little bit of everything.
01:16Alright, so sushi department let me go with two boxes instead of just one, so I decided
01:24to bring my girlfriend Liz and get a taste test with her here too.
01:33Crispy rice. It's so weird. You can see how soft it is on the inside, but it's crispy
01:37and crunchy on the outside. This is very strange. Let's give this a little dunk. Truffle avocado.
01:44I think that no matter what you're making, you can get the outside nice and crispy and
01:52crunchy, but keep the inside nice and just soft and fluffy, you win. Sushi department
01:58wins.
01:59My favorite thing about tuna sushi is the color. Look how bright and beautiful red that
02:06is.
02:07This is hands down the piece I am most excited to taste because it apparently took them a
02:13month to come up with the concept for this, and when that blowtorch came out, I knew I
02:18had to taste this.
02:19Let's get a little bit of soy sauce.
02:27Mmm, mmm, mmm. You have that scorch from the blowtorch, but it's not overwhelming. It's
02:31not too smoky. It's just smoky enough. Not bad.
