This is a keto dessert recipe to make this Summer for my keto diet community. Keto Raspberry Crumble is an easy, delicious ketogenic treat you can serve to your keto and non-keto friends.
Prep Time: 10 minutes Cook Time 20-25 minutes Servings: 9
INGREDIENTS 2 cups raspberries 2 t arrowroot powder 1/3 c Swerve Sweetener 1 1/2 c almond flour 1/4 c Swerve Sweetener 1/4 c Lakanto golden monkfruit 1/4 c walnuts 1/4 c pecans 2 T hemp hearts Pinch of salt 3/4 c of butter (not sticks), cold
1. Preheat oven to 350 degrees. 2. In a medium bowl, combine the raspberries, arrowroot, 1/3 c Swerve and vanilla. Set aside. 3. Using a food processor, add almond flour, 1/4 c Swerve, golden monkfruit, hemp hearts, walnuts, pecans, salt, and butter. Pulse until the mixture looks like coarse crumbles. 4. Spread berry mixture inside a square baking dish. Add crumble mixture on top and spread evenly. Bake at 350 for 20-25 minutes or until top is golden brown. Let cool. Top with whipped cream or keto ice cream.
