Dinner Tonight: Open-Faced Blackened Catfish Sandwiches

This Cajun-inspired catfish sandwich is served open faced and topped with a creamy slaw packed with fresh cilantro.

Give catfish a flavor punch

by using a blackening season blend.

This Cajun-inspired sandwich is served open-faced

and topped with slaw,

and takes less than 20 minutes to make.

I'll start by making my blackening season.

I have paprika,

dried oregano,

red pepper, that gives us the heat,

and some salt and pepper.

And then combine the ingredients.

I'll get my oil hot in the cast iron skillet,

and then season my fish.

You want to sprinkle both sides of the fish.

And depending on the size of the pan,

you may need to cook in batches.

Just rub the blend in.

So I'll cook each piece of fish

for about three to four minutes on each side.

I have a great slaw recipe to top the fish sandwich with.

because Greek yogurt has more protein and more nutrients,

and it's a great sub for mayonnaise or sour cream.

So I have some plain Greek yogurt,

and I'll add honey,

Then just whisk this together.

Now once this mixture is smooth and creamy,

And just to save time, I'm using the pre-shredded slaw.
