GOAN FISH CUTLET | HOW TO MAKE GOAN FISH CUTLET | MACKEREL FISH CUTLET | GOAN FOOD
Goan Fish Cutlet (20 to 22 cutlets)
Ingredients:
(To Cook Fish) Water: 1/2 cup Turmeric: 1/4 Tspn Salt: 1/2 Tspn Mackerel (Fish): 05 nos
(Green masala ingredients) Corriander leaves: Handfull Green Chillies: 08 nos Garlic: 20 to 23 cloves (*Garlic cloves & not pods rectified from recipe) Ginger: 01 inch Corriander seeds: 01 Tspn Cloves: 07 to 08 nos Cinnamon: 01 inch Cummin: 1/4 Tspn Tamarind: Marbel size Turmeric: 1/2 Tspn Water: 1/2 Cup
(To saute Green masala) Onions: 04 nos Tomatoes: 02 nos Goan vinegar: 02 Tbspn Salt: 1/4 Tspn Oil to Saute
(To Coat the Cutlets) 01 Egg & Semolina
Method:
* Add half glass of water, Turmeric & salt.
* Add Mackerels in the pan containing Water, turmeric & salt.
* Cook fish on the high flame untill its done. Once Cooked keep it aside to cool.
* Once the fish is cooled de bone & clean the fish. ( make sure clean the fish properly leaving no bones)
* Mash the fish and keep it aside.
For Green Masala paste: (Add all the ingredients to a mixer grinder & grind it till the paste form)
* To saute green masala paste Chop onion & Tomatoes
* Saute onion till light brown in color.
* Then add Tomatoes, Cook Tomatoes till oil oozes out & then add green masala paste.
* Mix the green masala with sauteed Onion & Tomatoes.
* Add vinegar & Add 1/4 tspn Salt to the sauteed mixture.
* Cook masala for two minutes.
* Add mashed Mackerel fish to the masala mixture.
* Turn off the gas & let it cool, Transfer the mixture into a bowl.
TO MAKE THE CUTLET PATTIE * Add Egg to the Mackerel masala mixture & add pinch of Salt.
* Mix it well together.
* Make dumpling of mackerel fish mixture.
* Coat it with semolina.
* Keep oil in a pan to shallow fry & fry all the cutlet pattie.
* Fry it till golden brown color & serve.
