BREAKFAST: Smoothie - 2-3 frozen bananas - handful frozen cherries - 3 blocks frozen spinach - handful roasted hazelnuts - handful raw cashews - 2 heaped tsp cacao powder - handful of rolled oats - water to desired consistency
LUNCH: Spaghetti + Meatballs Meatballs: - 1/2 cup black beans - 1 cup brown lentils - 2 tbsp olive oil - 1 cup almond meal - 1 flax egg (3 tbsp water + 1 tbsp flax meal) - herbs, paprika, garlic, salt and pepper as desired Sauce: - 1/2 tin crushed tomatoes - 4 fresh basil leaves - herbs, paprika, garlic as desired Parmesan: - handful of cashews - sprinkle of nutritional yeast - pinch of salt - pinch of garlic (served on gf pasta)
DINNER: Sweet Potato + Broccoli Salad - 1 sweet potato - 1 bunch of spring onion - 2 x garlic cloves - 1/2 head of broccoli Dressing: - 2 tbsp vegan aioli - 1 tbsp dijon mustard - splash of almond mylk - juice of 1/2 lemon All served with a bed of spinach, 1/2 an avocado, cashew ricotta (recipe coming soon), cashew parmesan, sesame seeds and sunflower seeds.
