Calzone is an italian filled oven bread. A typical calzone is baked in oven and stuff with salami, or ham, mozzarella, ricotta and parmesan cheese.
Ingredients for the dough:
- 1 and ½ tbsp dry yeast - 1tbsp sugar - ½ cup lukewarm water - 3 cups plain flour - salt to taste - 2tbsp olive oil
Ingredients for stuffing:
- 2-3 garlic cloves chopped - 2 onions chopped - 1 green bell peppers - 2 tomatoes chopped - 1tbsp olive oil - salt to taste - 1tbsp chili flakes - 2tbsp tomato ketchup - 1tbsp basil - 1 cup mozzarella cheese - 1 egg beaten
Method:
- to make a dough, mix the yeast, sugar, and lukewarm water together and keep it to rest until the yeast active. - in a bowl, mix flour and yeast mixture. Knead to a soft dough. - add olive oil and knead until have a nice soft dough. - cover it and keep it in a warm place until double in size - for stuffing, heat olive oil and add the garlic and onion sauté - add bell peppers and sauté it too until slightly soft - add tomatoes, salt to taste, chili flakes, and basil an mix well - add tomato ketchup mix well - turn of heat and let it cool - divide the dough into medium size balls and roll out into circles about 6-7 inch. - spoon in some of the mixture on one half of he circle - sprinkle some cheese on top - help of fork, seal the edges - brush with beaten egg (optional) - bake in a preheated oven at 200c for 10 to 15 minutes until golden brown
