Carbonara is an Italian pasta dish from Lazio, and more specifically Rome. Food Blogger Tarika Singh adds a small twist to this delectable recipe based on eggs, cheese, bacon and pepper.

Ingredients:

2 ltrs. water
200 gms. fettuccine
20 gms. salt
1/2 tbsp. olive oil
bacon
3 whole eggs
parmesan cheese
pepper to taste
pinch of red chilli flakes

Method:

- In a vessel, bring the water to boil.
- Add the salt and fettuccine in the boiling water and let it boil till it's cooked al dente.
- Take a pan and add the olive oil.
- Add the bacon (cut into small pieces) to the olive oil and cook them till they turn slightly brown in colour.

To make the sauce:
- In a bowl, crack open 2 whole eggs.
- Add only the yolk from the third egg and whisk all the 3 egg yolks together.
- Add the parmesan cheese to the egg yolk mixture and whisk it.
- Add very little black pepper and a tiny pinch of red chilli flakes to the above ingredients.

- Once the pasta is ready, get all of the pasta out on a strainer and strain the hot water.
- Add the pasta to the sauce and carefully mix them together.
- Add the bacon to the pasta.
- Serve the carbonara with some pepper on the top and some grated parmesan cheese.
