00:12Well, today's recipe is not a classic, it's a new age delicacy.
00:16This is Kathal Champaran style.
00:19Let's begin.
00:20Kathal for the uninitiated is raw Jackfruit.
00:31Raw Jackfruit of course is in season, it's a summer fruit.
00:34If you cannot lay your hands on that, you can try different fruits.
00:37But trust me, Jackfruit is going to be cutting edge.
00:40I've already cut it, processed it, kept it ready.
00:42Now I'm going to treat this recipe like a Champaran style curry.
00:46It's as simple as mixing everything together, almost a one pot recipe.
00:50Transferring all of this into a pressure cooker.
00:52Couple of whistles and there you go.
00:54Let's begin with slicing Red Onions.
01:08Let's transfer this in a deep bowl, in which of course we're going to crush this with our fingers.
01:14Once this is crushed and ready, let's add in the rest of the ingredients.
01:18Beginning with Red Chilli Powder.
01:20It's a chilli that gives you colour and spice.
01:23Moving up, Turmeric Powder.
01:27Home ground Garam Masala Powder.
01:31Along with this, Cumin Seeds.
01:34Couple of Star Anise.
01:37Sticks of Cinnamon, 2 in this case.
01:40Paste of Ginger-Garlic and Green Chillies.
01:43Couple of Dried Red Chillies.
01:46With the stalks on, not a problem at all.
01:50Let's add in Salt.
01:52And mix this in.
01:59Now when it comes to Champaran, a couple of things are extremely important.
02:02One is of course this Onion mixture.
02:04Now the question here is, how many onions are we going to use?
02:08Now the question here is, how many onions to the protein?
02:11Or to the core ingredient?
02:14Now if the core ingredient suppose is a Kg.
02:16Then the onions literally are 750 grams.
02:19That kind of a ratio and proportion.
02:21Now another important ingredient in this recipe is the Mustard Oil.
02:25Use Mustard Oil of good quality.
02:28It should be Kachchi Ghani to begin with or cold pressed.
02:30And that adds a lot of value to this recipe.
02:32The third ingredient that again is very important is the quality of Garlic.
02:37That you use in this recipe.
02:39Because this recipe uses whole pods of Garlic.
02:42Let's now begin with sautéing the Jackfruit to begin with.
02:46Now traditionally the core ingredient is not sautéed.
02:49But because this is Jackfruit, I'm just kind of treating it a little differently.
02:53But otherwise what you can do is mix everything here together.
02:56Put it in a pot.
02:58Cover it, put some Atta and keep it on dump for 45 minutes.
03:01And then of course we look into it.
03:03But in this case I'm going to pressure cook the recipe.
03:05With Mustard Oil.
03:11Once the Mustard Oil heats up.
03:14I'm going to very carefully drop in the pieces of raw Jackfruit.
03:20Let's fry the Jackfruit on high flame till it's golden brown in colour.
03:25And after that we'll add in the Onion mixture.
03:32Once the Jackfruit turns golden brown in colour.
03:34I'm going to add in the Onion mixture.
03:42In this bowl I'm going to add in a cup full of water.
03:45To ensure that we draw in all the spices.
03:48Let's transfer this into the pressure cooker.
03:55And along with this the pods of Garlic.
04:01Let's stir this well ensure all of this is mixed very well.
04:04Because the next that we're going to do is cover this and pressure cook this.
04:083 whistles medium flame and then we just lower the flame.
04:11And allow this to further cook for 20 minutes.
04:14Let's do that.
04:263 whistles and we allow this to set completely undisturbed for 20 minutes.
04:30Once that happens we'll stir this and do a quick check.
04:35And with this ladies and gentlemen,
04:37Raw Jackfruit Champaran style is done and ready.
04:40Wait for nothing and no one on the planet.
04:42Take this serve it in a bowl immediately with some Parathas or with steaming hot rice.
04:48And see how your family smiles back at you.
