00:00I'm Ellison McNamara and I'm here in Koreatown, Los Angeles.
00:05Skincare is at the core of the entire Korean lifestyle, even down to the foods they eat.
00:11I'm sitting down with my friend Diana to learn how I can eat my way to good skin.
00:18So we're at a naengmyeon soup right now, which is like a cold noodle in a cold beef broth.
00:24And what they've done is warmed up the beef broth for us to drink.
00:27Really? Yup. And it's so good for you. It has marrow and collagen in it.
00:31So it's like liquid collagen. It totally is.
00:34Drink up. Yeah. I'm sold on that.
00:40So I've been to a bunch of Korean restaurants. They always bring out these little different side dishes.
00:44What are they? So this is called banchan and it's exactly what you said.
00:48They're side dishes. They're meant to be an accompaniment to what you're eating.
00:52And Korean food innately has a lot of vegetables and could be on the blender side.
00:56So this adds some brininess and some saltiness.
00:59So this is gaktugi, which is made out of radish.
01:02Also a radish side dish.
01:04Sauteed mushrooms.
01:05Sauteed mung beans.
01:06And then some peanuts and soy sauce.
01:08Obviously the one in the middle is kimchi.
01:11That's obviously like the star of the show.
01:12That's the star of the show.
01:14And it's really good for you. It has healthy probiotics.
01:17Because of the fermentation, right?
01:18Because of the fermentation, exactly.
01:23It's almost like a community thing. Everyone sits together in the kitchen and makes a bunch of it.
01:29And they store it and wait for it to ferment for a couple of weeks.
01:33And then once it's done.
01:34Weeks?
01:34Yeah, weeks. Sometimes months.
01:36Is your mom's your favorite?
01:38Yes.
01:39Because if I don't say yes, then I'd be in big trouble.
01:43Good answer.
01:44Oh wow.
01:45Yeah.
01:52Alright, I'm going to Korean mom you.
01:55Am I doing it wrong?
01:56You got to do this with a spoon.
01:58Okay, so you really want to get that rice in with everything?
02:00Uh huh.
02:00You got to mix.
02:01That's why peeping means mix.
02:04In Korean.
02:05There you go.
02:06So it's mixed rice.
02:06So is it ready now, mom?
02:07It's ready.
02:08Okay.
