00:35Salaam
00:36i welcome to Baku,
00:38a city alive
00:39with culture
00:40and history
00:41while seamlessly
00:42blending that
00:43with modern life.
00:44My journey begins
00:46in the Old City,
00:47a protected historic area.
00:50We have the reserve
00:51which is called
00:52Icharis-Shahar
00:54in translation means
00:55the inner city.
00:56It is the most important
00:58historical site of Baku.
00:59And when does this
01:01date back to?
01:02It dates back
01:03to the medieval centuries
01:04but actually
01:05it was settled
01:06since the Bronze Age.
01:07Near the entrance
01:08is an old bathhouse
01:10where travelers
01:11and traders
01:12washed
01:13after long journeys.
01:14You see two domes,
01:16they were rebuilt
01:18but everything else
01:20from the ground zero
01:21until the dome
01:22is original,
01:23500 years old.
01:24The bathhouse
01:25laid buried
01:26for more than
01:26two centuries
01:27before archaeologists
01:29uncovered it.
01:31Many buildings
01:33in the Old City
01:34blend European
01:35and Asian styles
01:36and traditional
01:38wooden balconies
01:39are common
01:39on many homes.
01:41we reach the city's
01:43medieval market square
01:44which archaeologists
01:46discovered in 1964.
01:49Here you can find
01:51tombstones
01:52from medieval centuries.
01:53These are statues.
01:56We have here
01:56two crosses.
01:57Now an open-air museum.
02:00Its arches date
02:01from the 12th
02:02and 13th centuries
02:03and give a sense
02:05of what it once
02:06looked like.
02:11Overlooking it all
02:12is the Maiden Tower
02:14thought to be
02:15a defensive structure.
02:17It is estimated
02:18that the volume
02:19of the stones
02:20used here
02:20is equal to
02:2220,000 tons
02:24of stones.
02:25It is one
02:25of the most important
02:26historical monuments
02:27of Azerbaijan.
02:28The tower
02:29became a museum
02:30in the 1960s
02:32with exhibitions
02:33exploring its history
02:35over eight floors.
02:37The climb
02:38to the top
02:38is steep
02:39but well worth it
02:40for the view.
02:44Back at street level
02:46we visit
02:46the Numismatics Museum
02:48housed
02:49in a former mosque.
02:50Its collection
02:51showcases
02:52Azerbaijan's history
02:53through coins
02:54and currency.
02:56I even get to
02:57to stamp
02:58a coin
02:58of my own.
02:59I would be so rich
03:01if I had this
03:02I would just make
03:02my own coins.
03:04It is a fascinating
03:05place that shows
03:06how people traded
03:08over the centuries.
03:11The Old City
03:12has been a UNESCO
03:13World Heritage Site
03:15since the year 2000.
03:17Among the historic
03:18buildings
03:19is the Caravan Sarai.
03:21You see the rooms
03:22sell
03:23so merchants
03:24use it to stay
03:25there
03:25while travelling
03:26on Silk Road.
03:28Today
03:29it's a restaurant
03:30serving traditional
03:31Azerbaijani cuisine
03:32and I'm looking forward
03:34to trying
03:35the local dishes.
03:36In Azerbaijan
03:37we use much
03:38of greenery
03:40vegetables
03:41because we have
03:43diverse climatic zones
03:45of Azerbaijan
03:45therefore the cuisine
03:47is rich.
03:48Centuries later
03:49this is still a place
03:51where travellers
03:52can rest
03:52and share a meal.
03:56Our final stop
03:57is a palace
03:58that was once
03:59the centre of royal power.
04:01Right now
04:02you are in the palace
04:03of Shirvan Shahs
04:04it was the dynasty.
04:06They use it to govern
04:08over Azerbaijan
04:09seven centuries.
04:10Inside the complex
04:12is a courthouse
04:13with detailed carvings
04:15around its entrance.
04:17Carving like this
04:18in architecture science
04:19is call it stalactite
04:21because it looks like
04:22the stalactites
04:23inside of the caves.
04:24The main palace
04:26originally had 52 rooms
04:28spread over two floors.
04:30Today
04:30it's a museum
04:31dedicated to the rulers
04:33who once lived here.
04:39from the old city
04:40I head out on my own
04:42to explore another side
04:43of Baku.
04:45Opened in 2012
04:46the Heidar Eliev Centre
04:49houses art exhibitions
04:50to explore
04:52Azerbaijan's history.
04:54Modern Baku
04:55is full
04:56of incredible architecture
04:57and also
04:59some pretty incredible
05:00artwork.
05:01For my final stop
05:03I head up
05:04to take in the view.
05:06Walking up to a viewpoint
05:08is always worth it
05:10and looking out
05:10to the Caspian Sea
05:11is extra special.
05:16Baku's history
05:17is only one part
05:18of the city's story.
05:20To taste its modern side
05:22I'm staying
05:23at the Ritz-Carlton.
05:25The hotel has 33 floors
05:28and I'm staying
05:29in one of their
05:30signature suites.
05:31It's a generous space
05:33with a separate living area
05:34and plenty of room
05:36to relax.
05:37From here
05:38the views
05:38across the city
05:39are stunning.
05:42After exploring
05:44I join one of the hotel
05:45chefs in the gardens
05:46to collect ingredients.
05:48There's everything
05:49from aubergines
05:50and chillies
05:52to fresh mint.
05:53So you have so many
05:54different things
05:55even not just
05:56growing in the
05:57patches.
05:58Yeah.
05:58You have trees.
06:00We have pomegranate
06:01trees,
06:02apple trees,
06:03pear trees,
06:04a lot of trees.
06:05With our ingredients
06:06picked
06:06we head into the kitchen
06:08to make a traditional
06:09dish.
06:10Dolmer is made
06:11by wrapping
06:12vine leaves
06:12around stuffing.
06:14For our filling
06:15we're using
06:16minced lamb
06:16and mixed herbs.
06:18So now the filling
06:20is ready.
06:22We will start
06:24to put
06:24into the vine leaves.
06:26Mm-hmm.
06:27Then wrap it
06:28nicely
06:29and put in the pot.
06:31This dish
06:32has been passed down
06:33through generations
06:34and I'm enjoying
06:36learning how it's made.
06:41That is so good.
06:42It's definitely a dish
06:45you have to try
06:46if you visit.
06:48My final stop
06:49is the hotel spa
06:50with its treatment rooms,
06:52hammams
06:53and indoor pool.
06:55I've booked myself
06:56in for a facial
06:57treatment
06:57and I'm looking forward
06:59to a little pampering.
07:01After a morning
07:02of trying new things
07:04it feels good
07:05to relax
07:05and enjoy the moment.
07:10Along Azerbaijan's coast
07:12there are plenty
07:13of beaches
07:14with easy access
07:15to Baku.
07:16I'm at Seabreeze Resort
07:18to discover some
07:19of the water activities
07:20on offer.
07:21Welcome to
07:22first private yacht club
07:24Seabreeze Marina.
07:26Now we have
07:27a new sport
07:28where we can learn
07:30water sports
07:31like kitesurfing,
07:32wingfoiling,
07:34then subboarding
07:35and diving.
07:37This is incredible.
07:38It's so nice
07:38to see this.
07:39People don't expect
07:40this from Baku.
07:41in Baku
07:42we all day
07:42every day
07:44have a wind
07:44why we can
07:46make things like this.
07:48Seabreeze stretches
07:49along more than
07:50seven kilometers
07:50of Caspian coast.
07:52To explore further out
07:54I'm boarding
07:55a privately chartered boat.
07:58Salaam captain.
07:59As we leave
08:01the resort behind
08:02we head out
08:03onto the Caspian Sea,
08:05the world's largest
08:06inland body of water.
08:08It's a relaxing way
08:10to end an afternoon
08:11on the coast.
08:16On the other side
08:18of Baku
08:19lies Gobistan
08:20a UNESCO
08:21World Heritage Site
08:22where people
08:23lived thousands
08:24of years ago.
08:26Today I'm visiting
08:27the museum
08:28to learn more
08:29about the people
08:30who left their mark
08:31here.
08:32Gobistan is a unique
08:33monument of
08:34history of rock art.
08:35More than 7,000
08:37rock images
08:38were found from
08:39Gobistan
08:39from five mountains.
08:41And the age
08:42of the Gobistan
08:43petroglyphs
08:43is approximately
08:4520,000 years old.
08:4720,000 years old.
08:50This is incredible
08:51to get to see
08:52something like this.
08:53The museum
08:55helps you
08:55imagine the lives
08:56of people
08:57and animals
08:58that once lived
08:59here.
09:00Outside,
09:02the site
09:02covers more
09:03than five square
09:04kilometers
09:04of rocky landscape.
09:06As we explore,
09:08we come across
09:09some of the carvings.
09:11From here
09:12we can see
09:13a boat image
09:14and the age
09:15of the boat image
09:16belongs to
09:17Nualti Kera.
09:18The ascension
09:19time people
09:20use boat
09:20for fishing
09:21and also
09:22for burial ceremonies.
09:23We continue
09:24towards the caves
09:26where people
09:26once lived
09:27among these rocks.
09:29There are
09:2920 caves
09:30that were found
09:31during the excavations
09:33and this is
09:34the biggest cave
09:35that it is called
09:36Anasagan,
09:37Mother Cave.
09:38Many of the carvings
09:39show animals
09:40and hunters.
09:42This one
09:42is a wild horse
09:44or Kulan.
09:46Nearby,
09:47we find holes
09:48carved in the rock
09:49floor.
09:49some of them
09:51people use
09:51for collecting
09:52rainwater,
09:53some of them
09:53people use it
09:54for collecting
09:55some plants,
09:56fruit
09:56and some of them
09:57they use for cooking.
09:59And that's why
10:00we say that
10:01this is the ancient
10:02kitchen of Gobistan.
10:04Gobistan combines
10:05an epic landscape
10:06with a remarkable history.
10:11A short distance away
10:13is another landscape
10:14that feels like
10:15the surface of the moon.
10:18Azerbaijan is home
10:20to hundreds
10:20of mud volcanoes.
10:23I've come to
10:23the Mud Volcanoes
10:24Tourism Complex
10:25to take a look.
10:28Inside,
10:29there are animal skeletons
10:30from Azerbaijan
10:31and around the world.
10:33Many of the species
10:34on display
10:35still live
10:36in the wild today.
10:38The museum
10:39also has a collection
10:40of rocks
10:41and minerals.
10:42We have two circles
10:45of stone.
10:46First circle,
10:47that's the stones
10:48which formed
10:49after activity
10:51of Mud Volcano.
10:52But second circle,
10:54that's the stones
10:55which were found
10:57on the territory
10:58of the Azerbaijan
10:59Republic.
10:59The collection
11:01includes amethyst,
11:03quartz and turquoise
11:04along with many
11:05other minerals.
11:07Inside of one
11:09of the stones
11:10we have something
11:12about 20 micro elements.
11:15The site covers
11:17120,000 metres
11:19and the views
11:20are striking.
11:22These natural formations
11:24build up over time
11:26as gas and water
11:27rise from underground.
11:29as the gas
11:31escapes
11:31it creates bubbles
11:33in the mud
11:33which settle
11:35on the surface.
11:36It's fascinating
11:38to see the ground
11:39slowly changing
11:40in front of us.
11:43Azerbaijan
11:44truly has
11:45so much to offer
11:47from the incredible
11:48culture in Baku
11:50to these amazing
11:51mud volcanoes.
11:53But now,
11:54time for my next adventure.
11:59to be continued...
