12:26feuilles.

15:06ce qu'on appelle beaucoup beaucoup
15:07«huka ».

16:46Joey.
16:47N'est-ce que tu n'as?
16:48Ma nom est Uhr.
16:49Ours.
16:50Nice to meet you.
16:51Mehmet.
16:51Mehmet, nice to meet you.
16:52Barış.
16:53Barış.
16:53Yeah, thank you.
16:54So I'm smoking cappuccino hookah and I'm drinking coffee.
16:57Yeah.
16:59I do a lot of traveling, focused on coffee.
17:02And I've always noticed that with coffee there's always great conversation.
17:06And this is a whole new element.
17:07I love things that, you know, make you stop and kind of turn off the noise of the outside world
17:11and just have a conversation together.
17:15I may not exactly exude the same cool factor as my new friends, but it's definitely a great way to
17:21meet people.
17:22In Narguile, it lasts about an hour, so there's plenty of time to chat.
17:27How am I doing now?
17:27A little better?
17:28Yeah, yeah.
17:28I'm getting better at it.
17:29Yeah.
17:29A little bit, maybe.
17:30Yeah, yeah.
17:30Maybe a little bit.
17:31Yeah, yeah.
17:43But for a greenhorn like me, let's just say you can find yourself getting a bit dizzy.
17:48So a word to the wise, be careful not to overdo it.
17:53I don't know how you do those circles, but it's pretty cool.
17:56You like it?
17:57Yeah.
17:57I like this.
17:58I can get used to this.
18:04We finished with a drink of what would best be described as like a hot apple juice.
18:09and it's actually pretty tasty, but I'd say it's time to move on and leave the smoking to the professionals.
18:22The sun's shining on my last day in Istanbul.
18:25It's one of those cool, crisp mornings, making it the ideal time and place for a cup of Turkish coffee.
18:33I meet up with Asli again in the high-end Bebek neighborhood.
18:36There are lots of specialty coffee shops here.
18:39I'm hoping to find a delicious Turkish brew to end my trip.
18:44Hi, Susan.
18:45I'm Joey.
18:46Nice to meet you.
18:47Nice to meet you.
18:48Oh, nice to meet you.
18:49This is Cup of Joy, and as the name suggests, they are devoted to coffee here.
18:54They deal with beans from all over the world and roast, blend, and extract unique flavors to suit their customers'
19:00palates.
19:02With Asli's help, we're preparing a blend of an Arabica geisha coffee grown in Panama with another variety of an
19:08Arabica Bourbon coffee from Rwanda, but done in the Turkish style of brewing.
19:13It's going to be fun.
19:14It's going to be fun.
19:14I mean, the geisha…
19:15Seven grams?
19:15Yes.
19:16Seven grams.
19:18There you go.
19:21That will be a little bit spicy as well, I guess.
19:26Oh.
19:26And that's good, right?
19:27That's what we want.
19:28Spicy?
19:28Yeah.
19:29We're using a traditional Turkish copper şezve to brew the coffee, but unlike traditional Turkish coffee, it's important that it
19:36doesn't boil, because that would create a bitter taste, taking all the fun out of this cup.
19:42Okay, so it's ready.
19:43Oh.
19:44As eager as I am to indulge in this very fine-smelling brew, it takes time for optimal flavor to
19:50develop, so patience is key.
19:51So in one minute, I get to actually taste this, and, you know, you kind of get butterflies.
19:56It sounds nerdy to have butterflies, but the thing is, this whole trip is all about these blends.
20:02Ah, just 20 seconds more.
20:04Are you ready?
20:06Yes, I'm ready.
20:10Oh, wow.
20:10Nice.
20:11Oh, yeah.
20:13I think we totally have a winner here.
20:15Yes.
20:16But I'm…
20:17I really, honestly, this has, like, exceeded my expectations, really a bit.
20:21This coffee tastes amazing.
20:23Big-bodied notes of citrus raisin and cinnamon with a candy-sweet, buttery finish.
20:29It's like having Istanbul in a cup.
20:32We totally have succeeded. I'm so thankful, and I'm so appreciative of your great hosting.
20:37Yes, very good. Yes. How do you say, uh, victory in Turkish?
20:41Um, şerefer.
20:43Şerefer!
20:50It's my last night in Istanbul, and there's one more group of people I need to see, with a very
20:57strong connection to coffee.
20:59They've been around since the 13th century.
21:09These are the whirling dervishes.
21:12They're members of the Mevlevi Order, founded by followers of the Persian poet and Sufi master Rumi, just after his
21:20death in 1273.
21:22They're said to be among the first to brew and drink coffee as the caffeine helped them stay up all
21:27night and whirl away.
21:33Thanks to my love for coffee, I've brushed up against over 500 years of history in this city.
21:39I'm really grateful for the opportunities I've had here to smell the past and taste the future.
21:45It's so rewarding to see people like Asli, who are shaping the evolution of coffee in Istanbul, while still honoring
21:51the age-old traditions of Turkish coffee.
