Did you know you can freeze water in the blink of an eye? This amazing phenomenon is known as supercooling, and it is a simple experiment you can perform right in your own kitchen.
To make this happen, you need a highly purified bottle of water. Normal tap water contains tiny impurities like dust and minerals, which give ice crystals a place to start growing. Purified water lacks these nucleation sites, allowing it to stay liquid even below its freezing point.
By placing a sealed bottle of purified water in your freezer for about two and a half hours, you lower its temperature to around minus eight degrees Celsius. At this point, the liquid is supercooled. It is extremely unstable and waiting for a trigger.
When you firmly tap the cold bottle against a hard table, you create a sudden shockwave. This physical disturbance forces the water molecules to align, instantly forming the first ice crystal. A chain reaction then rushes through the bottle, turning the entire liquid into solid ice in mere seconds.
