Which sides are nonnegotiable when ordering at your favorite barbecue spot? In this video, we asked these pitmasters at Southern Living’s Hill Country Tailgate what side dishes they have to have when they’re chowing down on barbecue.

00:00The one side I always have to have with my barbecue, you know, being Mexican, being Latino,
00:03we got to have some Mexican street corn in there. But I do love me a good potato salad as
00:07well.
00:07So it's a little bit of both worlds.
00:09I love a classic potato salad, but it's got to be mustard based. That's the rule.
00:12I like serving a version of a Caesar salad with it. Kind of gives it a little bit more of
00:17an acid to it,
00:18but also something healthier while you're getting down on all that meat.
00:22Meat and Texas barbecue, it's rich, it's fatty. You need something that is acidic to complement this.
00:27I love a nice, cold, crisp, fresh salad.
00:30Some people say it's a main dish, but it is actually a side.
00:33Frito pie, no beans and chili every single time.
00:36Well, tonight we have a Poblano slaw, which I absolutely love.
00:39But honestly, our shells and cheese are our number one seller as sides.
00:44I really like our potato casserole. It's real creamy, real cheesy.
00:48But my runner-up would have to be our jalapeno cream corn.
00:51It's just the perfect blend of sweet and spice.
