00:23The overall experience lasts about three hours, but the school is open practically all day,
00:29so you can choose your preferred time, it's not a group activity.
00:34We went early in the morning, around 9am, and met our very kind guide, Lucy.
00:40She first guided us through the museum, introducing us to the aromatic profiles of Sichuan cuisine
00:47and showing us the various chili and soy fermentations.
00:51Then, the actual cooking began with her.
00:53We cooked three dishes, which we then ate along with many other dishes and snacks, prepared

02:03As a foreigner, I had a fairly one-dimensional view of Sichuan cuisine.
02:08My entire view of Sichuan cuisine was fundamentally changed as a result of this tour.
02:15Being able to learn, experience, you can use the traditional preparation technique and see
02:20fermentation processes, cook, and then savor, over 30 dishes, all in one tour is being able
02:27to completely immerse yourself into the rich food history of Sichuan.
