00:07I think sometimes we get stuck in ruts and you tend to think that there is a particular wine you
00:13have to drink with a particular food.
00:14I mean, take, for instance, wonderful Parmigiano-Reggiano, Parmesan cheese, with a really lovely aged hunk of Parmesan cheese.
00:22It's the kind of cheese that would go really well with one of the wonderful, rich, unfortified reds from the
00:28Douro Valley,
00:29made from Turriga Nacional, Turriga Franca, Tinturoriche, all these wonderful Douro grape varieties.
00:35That would make a cracking match with a great Italian cheese.
00:40I think summer wines, you've got to find wines that are going to be refreshing. You don't want anything too
00:46heavy in the summer.
00:47The rule is, if it ain't too tannic, you can cool it down.
00:51The other delight in the summer, for me, is chilled Tawny Port.
00:56Get a ten-year-old Tawny and cool that right down, and that's a beautiful sipping wine on a hot
01:02summer's day.
01:03I think when you're trying to choose a wine, it's good to go for a region where this wine has
01:10been made for hundreds of years.
01:12They know the right soils. They know roughly what the weather's going to be like.
01:17They know the right grapes, whether it's Chardonnay and Pinot Noir planted in Burgundy as they have been for centuries.
01:24You've got to look for places where they've been doing it for generations and generations.
01:29They know what they're doing. They know this is the right place for those vines.
01:35They know the world's going to fall for years.
01:38They know the demeanor of the history of our homicides.
