00:03I'm here at the Foodies Festival and I'm giving talks for a project called Discover the Origin.
00:11Parmigiano Reggiano is just one of the great hard cheeses of the world.
00:16It can only come from the area of Italy around Parma and it has to be very carefully made.
00:23Every cheese is inspected for quality before it's passed.
00:26White Burgoyne wines are some of the greatest white wines in the world and I say that without any hesitation.
00:32Fabulous, crisp, steely white wines with richness as well as real freshness.
00:39The Douro Valley is in Portugal. They make red wines, wonderful rich red wines.
00:45Of course it's most famous for port wine which is a fortified wine.
00:50Parma Ham is one of the great savory products of the world.
00:53It comes just from the countryside around Parma, only Italian pigs.
00:58And it's wonderful both by itself and to use in cooking.
01:02It's time to think about those wonderful summer meals.
01:05Take Parma Ham. Parma Ham is my first course.
01:07Now what am I going to drink with that Parma Ham?
01:09I'm probably going to go for either a richer white or a light red.
01:13One of the lighter red wines of the Douro, something like that.
01:16Or just a lovely red Burgoyne Pinot Noir.
01:20Going on to the main course, I quite fancy some guinea fowl.
01:23With a Pabst Parma Ham or just grilled by itself.
01:26Maybe served with a salad with a sprinkling of Parmigiano-Reggiano cheese.
01:31What am I going to drink with that?
01:32I'm probably going to go with a white burgundy I think.
01:35And then for Pud, I fancy something chocolatey.

01:51The one I have in mind is a chocolate and hazelnut creation.
01:56Look it up.
01:57But a wonderful partner for this would be a 10-year-old tourney port.
