00:24over just to see how i made this beautiful cafe latte fudge this is silky smooth and very very
00:32creamy this is the best fudge that i've ever made so i please you know encourage you to give this
00:38one
00:38a go if you do like your fudge and this one has got a lovely creamy cafe latte sort of
00:44flavor but
00:44if you don't like coffee just leave the coffee out and you'll have a lovely white chocolate fudge
00:49instead so this is everything that i'm using here but all of these ingredients will be underneath the
00:55video in the show more box so i've got some condensed milk this is the coffee that i'm using i
01:00highly
01:01recommend you use espresso it's going to give you a much stronger richer flavor i am using white
01:07chocolate if you don't like white chocolate use milk chocolate or you could use dark chocolate as
01:12well it's entirely up to you and then we'll need a couple of tablespoons of butter as well i am
01:18using
01:18unsalted but you could use salted if you prefer and this is my tin here you'll want to use an
01:24eight
01:24or nine inch tin make sure it's lined so that you can get your fudge out easily at the end
01:30so just go
01:31over to your cooker you want a fairly large pan just so that everything melts down quite quickly
01:36you want this in a low to medium heat and i like to add all of my ingredients and then
01:42turn the heat on
01:43just so that everything melts at the same time so i've got my white chocolate i've got my sweetened
01:49condensed milk going in as well and then my butter like i said i am using unsalted but you can
01:55use salted
01:56if you prefer and then the last thing i'm going to add is my coffee i'm going to add two
02:01teaspoons of
02:02this espresso but if you want it more coffee you can add another teaspoon it just depends how strong of
02:09a
02:09coffee flavor you want and like i said on a sort of low to medium heat you just want to
02:15melt these gently
02:16so that they all come together you don't want your heat too high because you don't want anything
02:21to burn just keep stirring away and eventually your butter will melt and usually by the time your butter
02:27has melted everything else will be melted as well so you just want to heat this you know until it
02:34looks
02:34like this and everything is melted you don't need to bubble or boil this that's it ready so go over
02:40to your tin you just want to pour this into your tin and it'll be nice and liquidy because we've
02:46used
02:46butter it's going to help it stay a wee bit looser and it's not going to set too quickly it's
02:52going to
02:52let you get your mixture into your tin and flow nicely into the corners so all you have to do
02:59now is
02:59let this set pop it into your fridge you want this to set properly it will take you a minimum
03:05probably
03:05of three to four hours just make sure it is properly set though before you cut this so this was
03:12me after
03:13four hours and i'm just going to get this out of the tin and then out of the paper and
03:18then we're just
03:18going to cut this into whatever size squares you like i'm going to flip this upside down just because
03:24it's a wee bit neater on the underside grab yourself a very sharp knife and it's lovely and fudgy as
03:32you can see
03:32just the perfect texture and consistency so i'm going to cut mine into batons just like this and then i'm
03:40going
03:40to cut it into wee squares as well and you'll want more than one square of this it's so silky
03:47smooth and
03:49ridiculously moorish i absolutely loved this i really did and i had to you know tie my hands behind
03:56my back because every time i went into the kitchen i was away with more of this so this won't
04:01hang
04:01around for too long if you've got any fudge lovers in your house but this will keep in an airtight
04:07container i would keep it in the fridge though because if you keep it at room temperature it has a
04:11tendency to be quite soft so i would store this in the fridge once you've cut it into your wee
04:16chunks
04:17so i'm just going to stack it up here just to get a nice youtube photo and you can see
04:22there just how
04:23lovely and fudgy this is and i'm going to try and pull apart a wee bit here just to let
04:27you see the
04:28texture you know it's just perfect fudgy texture there like i said this will store in an airtight
04:34container for about a week if it lasts that long so this is mine here in my wee box with
04:40some
04:40grease proof paper i'm going to pop the lid on and then just keep this in the fridge like i
04:45said you can
04:46keep this at room temperature but it does have a tendency to be a wee bit softer so highly
